Apricot jam chicken with lemon and Dijon mustard is a wonderful blend of sweet, tart and savory flavors. And it's so easy to prepare for a simple weeknight meal or a special holiday dinner.

1 cup apricot-pineapple preserves (or use apricot jam)
1/3 cup dijon mustard
2 teaspoon grated lemon rind
1/3 cup fresh lemon juice
1 lemon sliced (or 2 if they are small)
1/2 teaspoon pepper
1/2 teaspoon kosher salt ((optional - mustard may be enough salt))
1/2 teaspoon dried thyme
8 - 10 boneless skinless chicken breasts halves or an equivalent amt. of thighs (or use bone-in chicken)

Steps:

  • Cut your boneless skinless breasts or thighs into appropriate individual serving size pieces and arrange in the baking dish.
  • Combine preserves, mustard, lemon rind, lemon juice, thyme, salt and pepper in a medium size bowl and whisk together. If you are baking the chicken right away, pour the sauce over the chicken in the baking dish. Then lay a lemon slice on each piece of chicken or evenly cover the whole baking dish with the slices.
  • Cook at 375 degrees for 30 minutes uncovered. Or 325 convection for 40 minutes or 350 convection for 30 minutes.

10 ounces apricot jam
1/4 cup olive oil
2 1/2 tablespoons country Dijon mustard
2 tablespoons honey
1 tablespoon low-sodium soy sauce
2 teaspoons freshly grated orange zest (from about 2 oranges), plus orange wedges, for garnish, optional
3 to 4 garlic cloves, crushed
3 to 4 branches fresh rosemary, leaves stripped and chopped
Salt and freshly ground black pepper
Salt and freshly ground black pepper
4 boneless, skinless chicken breasts

Steps:

  • In a medium saucepan over medium-low heat, heat the jam until melted, about 2 minutes.
  • Transfer the jam to a large baking dish. Add the olive oil, mustard, honey, soy sauce, orange zest, crushed garlic, rosemary, 3/4 teaspoon salt and some pepper and mix until combined. Season the chicken with additional salt and pepper and add to the marinade. Gently flip until mixed and coated. Marinate in the refrigerator for at least 20 minutes or overnight.
  • Preheat the oven to 375 degrees F.
  • Bake until the chicken is cooked through and the juices run clear, about 30 minutes. Garnish with orange wedges if desired.

8 chicken thighs
Coarse salt and freshly ground pepper
1 jar (12 ounces) apricot jam
2 tablespoons honey
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 425 degrees. Rinse chicken thighs; pat dry, and transfer to a baking dish. Season well with salt and pepper; set aside.
  • Bring jam, honey, and mustard to a boil in a small saucepan over medium heat. Reduce heat to medium-low; simmer until thickened and reduced by half, about 15 minutes. Spoon apricot mixture over chicken thighs, spreading with back of spoon to coat evenly.
  • Bake chicken, basting with sauce from bottom of dish every 10 minutes, until juices run clear when chicken is pricked with a fork, about 30 minutes.

This recipe is very flexible, you can add more or less of anything depending on your taste. My family likes spicey and I usually eye things so feel free to change anything.

3/4 cup honey dijon mustard
1/2 cup apricot jam
1 teaspoon garlic powder
2 cups breadcrumbs
ground black pepper
salt (optinal)
8 pieces skinless chicken

Steps:

  • Preheat oven to 350.
  • Mix mustard, jam and garlic powder. Set aside.
  • Mix bread crumbs, pepper and salt in a zip lock bag. Coat both sides of the chicken with the mustard/ jam mixture. Put chicken in zip lock bag and shake till evenly coated with bread crumbs. Shake off extra bread crumbs.
  • Place chicken on a greased baking sheet.
  • Bake for an hour uncovered.

  • Combine the apricot jam, mustard, vinegar and lots of black pepper in the jam jar or a mason jar. Shake until well blended.
  • Use the glaze like you would a BBQ sauce. Brush on or pour over pieces of grilled or pan-seared chicken, pork chop or salmon just before it's done cooking and let cook for an additional 1 to 2 minutes.

8 chicken drumsticks (2 lb.)
1/4 cup apricot jam
1/4 cup KRAFT Balsamic Vinaigrette Dressing
1 Tbsp. GREY POUPON Country Dijon Mustard
1-1/2 tsp. canola oil
1 small red pepper, chopped
1 onion, finely chopped
2 cups fat-free reduced-sodium chicken broth
1 cup quinoa, uncooked
1/4 cup dried apricots, chopped

Steps:

  • Heat oven to 400°F.
  • Place chicken in single layer in shallow pan. Bake 20 min., turning after 10 min. Meanwhile, mix jam, dressing and mustard until well blended. Reserve 1 Tbsp. jam mixture for mixing with the cooked quinoa.
  • Brush chicken with remaining jam mixture; bake 20 min. or until done (165ºF). Meanwhile, heat oil in large skillet on medium-high heat. Add vegetables; cook 3 to 5 min. or until crisp-tender. Add broth and quinoa; stir. Bring to boil; simmer on medium-low heat 12 to 15 min. or until liquid is absorbed, adding apricots for the last 5 min. Remove from heat. Stir in reserved jam mixture.
  • Serve chicken with quinoa mixture.

1 cup apricot jam
3 teaspoons dry mustard
1 tablespoon sherry vinegar
2 tablespoons extra-virgin olive oil
Pinch of cayenne pepper
1 whole chicken, cut into parts (about 6 pounds)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees.
  • In a small bowl, combine the jam, mustard, vinegar, olive oil, and cayenne. Season the chicken with salt and pepper, then brush with the glaze.
  • Roast, basting with the glaze, for 10 minutes. Turn the chicken and roast for 10 minutes more. Baste the chicken with the glaze and roast 5 minutes more, or until the glaze is just crisp.

1/2 cup low sodium chicken broth
8 split chicken breast halves, on the bone (7oz each)

2 tablespoons unsalted butter, cut into pieces and softened
12 dried apricots, cut into thin slivers (4oz)

Steps:

  • Preheat oven to 375. In a small saucepan, whisk together jam, mustard and broth. Bring to a boil over high heat, whisking occasionally. Reduce heat to medium-low and cook, stirring, until jam has dissolved, about 3 minutes.
  • Season chicken with salt and pepper. Divide and arrange in one flat layer in 2 large baking dishes. Pour jam mixture over chicken and turn to coat. Dot chicken butter. Scatter apricots over chicken and bake, uncovered, until chicken is lightly browned and cooked through, about 1 hour, turning and basting chicken often during baking time. Let chicken rest for 10 minutes before serving.
  • Serve hot with sauce from baking dishes spooned over top.
