WASABI GINGER DRESSING
A great Asian inspired salad dressing. A friend of mine gave me this recipe after I relentlessly begged him for it. I think its fabulous with a combination of romaine, sprouts, peppers, sweet peas and carrots. Delicious.

- Place all ingredients but oil in blender.
- Blend for 2 minutes.
- With blender still running slowly drizzle in the oil until well blended.
- Refrigerate .
- Will keep for 2-3 weeks.

WASABI-SOY VINAIGRETTE
This all-purpose salad vinaigrette is reminiscent of the wasabi-tinged soy sauce you might have with a California roll. Soy sauce, rice vinegar and sesame oil waltz in time, while the wasabi paste adds nose-clearing excitement. As with any recipe, feel free to adjust the ingredient amounts to your taste preferences, especially the wasabi, which can be scaled down or up. Be sure to shake if it's been sitting in the fridge, as it wants to separate.

- In a small liquid measuring cup or a glass jar with a tight-fitting lid, combine 1/4 cup water, the garlic, sugar, soy sauce, rice vinegar, sesame oil and wasabi paste. Whisk to combine, or, if using a jar, seal tightly and shake vigorously until emulsified. Taste and add more wasabi if you like; the wasabi flavor will intensify as the vinaigrette sits.
- Use immediately or refrigerate in an airtight container for up to 1 week. This tastes great with any green salad, of course, but also with raw, crunchy vegetables, like cucumbers, sugar snap peas and thinly sliced asparagus.

- Puree all ingredients together well, adding sake or other dry white wine to the desired consistency, then chill for at least 1 hour.
- Serve as dressing.
- Also good with crab cakes!
- Note: make sure to use a fully ripe avocado for this recipe! It needs to be ripe and rich - Californian (Haas or Gwen) avocados have a buttery and richer flavor than avocados from Florida or other areas. Otherwise your dressing will come out tasting a little flat.

- Mix the wasabi with 1/2 teaspoon warm water in the bottom of a mixing bowl and let it stand for 5 minutes.
- Peel the cucumbers, cut each one in half lengthwise, and use a melon baller or spoon to scoop out the seeds.
- Cut the cucumbers widthwise into 1/4-inch crescents.
- Add the vinegar and sugar to the wasabi and whisk until smooth.
- Whisk in the sesame oil, salt, and pepper.
- Just before serving, add the cucumbers, green onion, and sesame seeds to the dressing and mix well.

- If your carrot is very thick, halve or quarter vertically to make thin sticks. Make sasagaki cut carrot (shaved carrot) from each stick. See the post for how to do sasagaki cut.
- Boil water in a small saucepan and blanch the carrot pieces for 30–60 seconds (note 4). Drain and cool.
- If you are using frozen shaved burdock, thaw them and drain excess water if necessary. Skip steps 4 and 5.
- If you are using a fresh burdock root, scrape off the skin using the back of the knife, then make sasagaki cut burdock. As you shave the burdock, place the burdock pieces in a bowl filled with water (note 5). Leave them for 5 minutes.
