3 tablespoons good olive oil
1 1/2 cups chopped yellow onion (1 large)
1 pound lean ground beef
1 pound lean ground lamb
1/2 cup dry red wine
1 tablespoon minced garlic (3 large cloves)
1 tablespoon ground cinnamon
1 teaspoon dried oregano
1 teaspoon fresh thyme leaves
Pinch of cayenne pepper
1 can (28 ounces) crushed tomatoes in puree
Kosher salt and freshly ground black pepper
1 1/2 cups whole milk
1 cup heavy cream
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
1/4 teaspoon freshly grated nutmeg
Salt and freshly ground black pepper
1 1/2 cups freshly grated Parmesan or Kasseri cheese
2 extra-large eggs, beaten
2/3 cup Greek-style yogurt, such as Fage Total
3/4 pound small shells

Steps:

  • For the sauce, heat the olive oil over medium-high heat in a large pot. Add the onion and saute for 5 minutes. Add the beef and lamb, and saute over medium heat for 8 to 10 minutes, until it's no longer pink, crumbling it with the back of wooden spoon. Drain off any excess liquid, add the wine, and cook for 2 more minutes. Add the garlic, cinnamon, oregano, thyme, and cayenne, and continue cooking over medium heat for 5 minutes. Add the tomatoes, 2 teaspoons salt, and 1 teaspoon pepper and simmer, stirring occasionally, for 40 to 45 minutes. Set aside.
  • Preheat the oven to 350 degrees F.
  • For the bechamel, heat the milk and cream together in a small saucepan over medium-low heat until simmering. In a medium saucepan, melt the butter. Add the flour and cook over medium heat, whisking constantly for 2 minutes. Pour the warm milk and cream mixture into the butter and flour mixture, whisking constantly. Continue cooking, stirring occasionally, over medium heat for 5 to 7 minutes, until smooth and thick. Add the nutmeg, 1 teaspoon salt, and 1 teaspoon of pepper. Stir in 3/4 cup of Parmesan cheese, 1/2 cup of the tomato and meat sauce, and allow to cool for 10 minutes. Stir in the eggs and yogurt and set aside.
  • Meanwhile, cook the pasta in a large pot of boiling water until al dente. Don't over-cook because the pasta will later be baked. Drain and set aside.
  • Add the pasta to the meat and tomato sauce, and pour the mixture into a baking dish. Spread the bechamel evenly to cover the pasta and sprinkle with the remaining 3/4 cup Parmesan cheese. Bake for 1 hour, until golden brown and bubbly. Set aside for 10 minutes and serve hot.

450g/ 15oz. bucatini pasta, penne or ziti
110g/ 4oz. feta cheese
2 egg whites
900g/ 30oz. lean ground beef
2 medium sized red onions (finely chopped)
2 cloves of garlic (chopped)
400g/ 14oz. canned chopped tomatoes
1 tbsp tomato paste
1 tsp sugar
150ml/ 5 fl.oz. red wine
1 bay leaf
1 cinnamon stick
1 whole clove
1/4 of a cup olive oil
2 teaspoons sea salt and freshly ground black pepper (to taste)
120g/ 4.3 oz. plain flour
120g/ 4.3 oz. butter
1000ml/ 34 oz. milk
2 egg yolks
50g/ 1.7oz. Kefalotyri or Parmigiano-Reggiano
a pinch of nutmeg
salt to taste
50g/ 1.7oz. Kefalotyri or Parmigiano-Reggiano to sprinkle

Steps:

  • To prepare this traditional pastitsio recipe (pastichio), start with the meat sauce. Place a large pan over medium-high heat and add the olive oil, the chopped onions and sauté for 2-3 minutes. Add the garlic, tomato paste and the beef. Break up the meat with a wooden spoon and brown for 4-5 minutes. Pour in the red wine and wait to evaporate. Add the canned tomatoes, the sugar, cinnamon, clove, the bay leaf and season. Bring to the boil, turn the heat down and simmer with the lid on for about 30 minutes, until most of the juices have evaporated. (After the meat is cooked, discard the bay leaf, the clove and the cinnamon)
  • Prepare the bechamel sauce for the pastitsio. Melt the butter in a large pan over low-medium heat. Add the flour whisking continuously to make a paste. Add warmed milk in small batches, whisking continuously in order to prevent your sauce from getting lumpy. If the sauce still needs to thicken, boil over low heat whilst continuing to stir. Remove the pan from the stove and add the egg yolks, salt, pepper, a pinch of nutmeg and the grated cheese (50g/ 1.7oz.). Whisk quickly, in order to prevent the eggs from turning an omelette! Season with salt to taste.
  • Cook the pasta for the pastitsio 2-3 minutes less than the package instructions, so that they don't get mushy after turning out of the oven later. Drain the pasta and stir in the egg whites and the feta cheese (smashed with a fork) and mix gently with a spatula.
  • For this pastitsio recipe you will need a large baking dish, approx. 25*35 cm / 10*14 inch. Butter the bottom and sides of a pan and assemble the pastitsio. Layer the pasta, top with the meat sauce and even out. Top the pastitsio with the bechamel sauce and smooth out with a spatula.
  • Sprinkle the pastichio with grated cheese and bake in preheated oven at 180C (350F) Fan for about 40 minutes, until crust turns a light golden brown. Let the pastitsio cool down for a while before serving.

1 1/2 cups cooked lentils (I'd use brown)
3 tablespoons olive oil
3 tablespoons butter
2 onions, finely chopped
1 large eggplant, chopped into small pieces (unpeeled)
1 -2 garlic clove, minced
1/2-1 teaspoon cinnamon
1/2-1 teaspoon oregano
salt and pepper, to taste
8 medium tomatoes, peeled and chopped or 1 (32 ounce) can chopped tomatoes, drained
8 ounces tomato paste
1/2-1 cup parmesan cheese, grated
16 ounces cooked macaroni
3 tablespoons butter
3 cups milk, heated
3 eggs, beaten
3 tablespoons flour

Steps:

  • Preheat oven to 400°F.
  • Heat olive oil and butter over medium heat in a large skillet.
  • Add onions, eggplant, garlic and seasonings. Cover and let saute, stirring occasionally for about 10 minutes.
  • Add tomatoes and lentils with a little liquid. Cook until very thick.
  • Stir in tomato paste and heat through. Adjust seasonings to taste.
  • Butter a large casserole of oblong baking dish and layer half of the noodles across the bottom. Sprinkle one third of the parmesan over the noodles. Layer half of the sauce over noodles and parmesan.
  • Layer the remaining half of the noodles over the sauce, sprinkle with one third of the parmesan and cover with the remaining sauce. *You could refrigerate it at this point if you want to make it ahead of time.
  • Custard Sauce:.
  • Heat butter in a saucepan over low heat, stir in flour, and let roux cook a few minutes.
  • Pour in heated milk, stirring with a whisk.
  • Slowly whisk sauce into beaten eggs.
  • Pour sauce over entire casserole. It should drain through to the bottom and bind the whole thing together. If it sits on top, slide a butter knife in and out of the layers in a few places.
  • Sprinkle with remaining parmesan and cover.
  • Bake for 1 hour.
  • Serve very hot.

Posted for Zaar World Tour 2005. Have never eaten Pastitsio (a traditional Greek dish) before and was grateful to have found one I could eat. This looks like a great one-dish meal, and takes less time to make than you might expect. It's described as a great party dish, and leftovers can be reheated and eaten a day or two later. From Vegetarian Times Cooks Mediterranean. Have not tried this recipe yet. Update: Tried this the other night. It makes a lot of food, but leftovers are quite good! Mine didn't turn out too dry with 1 cup of tomato sauce, but do add more tomato sauce or fresh tomatoes if you wish.

1 tablespoon olive oil
1 large onion, minced
2 (14 ounce) packages vegetarian ground beef
1 1/2 cups tomato sauce, canned
1/2 cup dry red wine
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg or 1/8 teaspoon allspice
salt & freshly ground black pepper, to taste
1 lb ziti pasta or 1 lb elbow macaroni
5 cups milk
5 tablespoons cornstarch
1/4 cup water
1 cup freshly grated kefalotiri (separated) or 1 cup parmesan cheese (separated)
3 large eggs

Steps:

  • Preheat oven to 350 Fahrenheit.
  • In large skillet, heat olive oil over medium-high heat. Add onion and cook, stirring, until golden brown, about 7 minutes.
  • Add beef substitute, chopping into small bits. Cook until browned, about 5 minutes.
  • Add tomato sauce, red wine and spice, stirring to mix.
  • Simmer, uncovered, until the excess moisture has evaporated, about 7 minutes. Season with salt and pepper and set aside.
  • Meanwhile, cook the pasta according to package directions, drain and set aside.
  • In large saucepan, bring milk to a boil over high heat, then reduce heat to medium.
  • Dissolve the cornstarch in water, then add to milk in a thin stream, whisking constantly to avoid lumps.
  • Cook, whisking, until mixture has returned to a boil and is thickened, 2-3 minutes. Remove pan from heat and stir in 3/4 cup of the cheese.
  • In separate bowl, beat eggs until light and very frothy. Add to cheese sauce in a thin stream, whisking constantly. Add salt and pepper to taste and combine with cooked pasta in a large bowl.
  • Lightly oil an 11x15x2 inch casserole dish. Spoon in half the pasta/cheese mixture. Top with meat substitute mixture, then with remaining pasta/cheese mixture. Sprinkle with remaining 1/4 cup cheese.
  • Bake until casserole is golden brown and bubbling, about 40 minutes. Let cool for a few minutes before slicing and serving.

1/2 stick (1/4 cup) unsalted butter
1/4 cup all-purpose flour
3 cups milk, heated just to boiling
2 large eggs
2 tablespoons chopped fresh dill
1/8 teaspoon freshly grated nutmeg
3/4 pound penne (quill-shaped pasta)
chopped meat from 2 lamb shanks (about 2 cups), reserved from braised lamb
1 cup braising liquid reserved from braised lamb
1/2 cup grated Kefalotyri* or Parmesan cheese (about 2 ounces)
*available at Middle Eastern markets and some specialty foods shops

Steps:

  • Make béchamel sauce:
  • In a heavy saucepan melt butter over moderately low heat. Whisk in flour and cook roux, whisking, 3 minutes. Whisk in milk and simmer sauce, stirring, 8 minutes. In a bowl whisk eggs and add 1 cup sauce in a stream, whisking. Whisk egg mixture into remaining sauce and whisk in dill, nutmeg, and salt and pepper to taste. Keep béchamel warm, its surface covered with plastic wrap.
  • Preheat oven to 375°F.
  • In a kettle of boiling salted water cook pasta until just al dente. Rinse pasta in a colander and drain well. In a bowl stir together lamb and braising liquid.
  • In a buttered 2-quart shallow baking dish spread half of pasta evenly and spread lamb mixture evenly over it. Top evenly with remaining pasta and pour béchamel over pasta. Sprinkle pastitsio with cheese and bake in middle of oven until béchamel is set, about 40 minutes.

Steps:

  • Start cooking the pasta.
  • While pasta is cooking, separate meat in a skillet or shallow pan. When a little brown, add 1 to 2 cans of tomato paste. Add salt, pepper, nutmeg and cinnamon; and a little water to help cook if necessary.
  • While the meat is cooking start on the crema (bechamel style sauce). Mix the eggs with the milk in large pot. Add in 1 cup of flour and whisk constantly until it thickens and all lumps are gone. Add the remaining flour at 1/4 cup at a time if needed (the mixture will be very thick). Turn heat to low and continue stirring constantly. Once lumps are gone and the consistency is correct, add the butter and 1 cup of the parmesan, and stir in.
  • Drain the pasta and mix in about one and a half cups of the crema and 3/4 cup of the remaining parmesan. Put half of the pasta mixture into a greased 9x13 dish (if you have a deeper or larger one I would use that). Layer meat on top of noodles. Add remaining pasta on top of the meat and then spread all of the crema on top. Sprinkle with remaining parmesan.
  • Bake at 170C/fan for 45-50 minutes or until top is slightly brown and let it cool 15 minutes before cutting.
  • Serve with a small Greek or Italian salad and enjoy!

  • Heat oil in a pan and add the onions and the garlic. Saute till the onions till they're soft and then add the cauliflower florets and the peas. Pan fry till the vegetables are cooked and the cauliflower starts caramelizing/ turning light brown. If you're using the wine, add it now and let it cook for a few minutes till most of it has evaporated.
  • Now add the bay leaf, allspice, oregano the tomatoes, tomato paste, sugar, salt and pepper. Stir well and bring the Vegetable Ragu to a boil. Turn down the heat and let it simmer until it is quite thick in consistency and there's a little liquid in the pan. Take it off the heat and set aside.
  • Now prepare the Mornay Sauce. In another pan, melt the butter and add the flour to it while stirring quickly. Keep stirring and let it cook for a couple of minutes. Take the pan off the heat and add half the milk to it, and whisk the mixture till smooth. Add the remaining milk and whisk again till smooth.
  • Put the pan back on the stove and keep stirring the mixture so no lumps form and it starts to thicken. Quickly add the cheese, pepper, and nutmeg and keep stirring till the cheese melts completely. Gruyere is quite salty so add salt to taste and stir well. Meanwhile, prepare the Bechamel. Melt butter in a medium saucepan. Add the flour and mix well, stirring quickly. Once the Mornay sauce has thickened well, take it off the heat and keep aside.
