2 salmon fillets (5 ounces each)
1 tablespoon butter, melted
1 tablespoon minced fresh basil
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper
Lemon wedges, optional

Steps:

  • Prepare campfire or grill for medium heat. Place each fillet, skin side down, on a piece of heavy-duty foil (about 12 in. square). Mix melted butter, basil, lemon juice, salt and pepper; spoon over salmon. Fold foil around fish, sealing tightly., Cook on campfire or in covered grill until fish just begins to flake easily with a fork, 10-15 minutes. Open foil carefully to allow steam to escape. If desired, serve with lemon wedges.,

This fresh and flavorful Lemon Basil Grilled Salmon is complete with a grilled corn and tomato salad on top!

3 tbsp Land O Lakes® Butter with Olive Oil & Sea Salt
2 tbsp fresh basil (chopped and divided)
1 tsp lemon zest
1/4 tsp garlic powder
salt and pepper
4 4oz Salmon filets (skin on)
1 tbsp vegetable oil
2 ears of corn (shucked)
1 cup halved cherry or grape tomatoes

Steps:

  • Heat the grill to medium-high heat and brush grates clean with wire brush and brush grates with oil to prevent sticking.
  • In a small bowl combine the Land O Lakes® Butter with Olive Oil & Sea Salt with 1 tbsp fresh basil, lemon zest, garlic powder and salt and pepper to taste. Stir until combined and set aside.
  • Brush the salmon filets with the vegetable and season to taste with salt and pepper. Place salmon, SKIN SIDE UP, on the hot grill for about 2 minutes, until salmon easily moves away from grill grates. Flip salmon and reduce heat to a medium-low and continue cooking about 3 to 5 minutes, until salmon is cooked and easily flakes.
  • Top each hot piece of salmon filet with the lemon basil topping so it melts into the salmon.
  • Meanwhile grill the corn alongside the salmon until the kernels are slightly charred. Carefully cut off the corn kernels and add to a medium bowl. Add in the tomatoes, remaining 1 tbsp of fresh basil and salt and pepper to taste.
  • Serve the corn salad over the top of the hot salmon and enjoy!

1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt, plus more for seasoning

4 (4-ounce) pieces salmon
1/4 cup chopped fresh basil leaves
3 tablespoons capers
1 lemon, zested
2 tablespoons lemon juice
2 cups fresh baby spinach leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta and transfer to a large bowl. Add the garlic, extra-virgin olive oil, salt, and pepper. Toss to combine.
  • Meanwhile, warm the olive oil in a medium skillet over medium-high heat. Season the salmon with salt and pepper. Add the fish to the pan and cook until medium-rare, about 2 minutes per side, depending on the thickness of the fish. Remove the salmon from the pan.
  • Add the basil, capers, lemon zest, and lemon juice to the spaghetti mixture and toss to combine. Set out 4 serving plates or shallow bowls. Place 1/2 cup spinach in each bowl. Top with 1/4 of the pasta. Top each mound of pasta with a piece of salmon. Serve immediately.

  • Preheat grill. Season salmon with salt, pepper, and garlic.
  • Mix butter with basil and rub over salmon.

1 oz fresh basil leaves
1 oz mint leaves
7 oz olive oil
1 egg yolk
1 teaspoon mustard
2 tablespoons cream
2 teaspoons lemon zest
juice of one lemon

Steps:

  • Instructions:Boil a pot of water and add the mint leaves and basil leaves to infuse for 15 seconds. Remove and drain. Remove excess water on the leaves. Put the mint leaves and basil with 7 oz. olive oil and purée. Marinate for 15 minutes. In a bowl, combine the egg yolk, mustard, salt, and pepper. Whisk until you get a smooth sauce. Stir the mint and basil-flavored olive oil into this mixture gradually until the preparation gets thick and creamy. Whisk well with the lemon zest, lemon juice and cream. Place this sauce in the refrigerator. Brush salmon fillets with oil. Grill on medium heat for 5-7 minutes on each side, depending on thickness. Cover fish with mint & basil sauce to serve. Enjoy!

6 (1/4-inch-thick) lime slices
1/4 cup plus 1 1/2 tablespoons extra-virgin olive oil
6 (1-inch-thick) pieces salmon fillet with skin (6 oz each)
Fine sea salt to taste
1 cup loosely packed fresh basil, thinly sliced
3/4 cup loosely packed fresh mint, thinly sliced

Steps:

  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes.
  • Brush both sides of citrus slices with 1/2 tablespoon oil, then brush fish all over with 1 tablespoon oil and season with sea salt and pepper.
  • Grill citrus slices, covered only if using a gas grill, on lightly oiled grill rack, turning over once, until grill marks appear, 2 to 3 minutes total. Transfer citrus slices to a plate, then, if using a gas grill, reduce heat to moderate. Grill fish, skin sides down, covered only if using a gas grill, until skin is crisp, 3 to 4 minutes. Turn each piece of fish onto 1 side and grill 1 minute. Turn over onto opposite side and grill until fish is just cooked through, 2 to 3 minutes more. Transfer fish to a platter and keep warm, covered loosely with foil.
  • Heat basil and mint in remaining 1/4 cup oil in a heavy skillet over moderate heat, stirring, until herbs are just wilted, about 1 minute.

Juice of half of the lemon

Steps:

  • Preheat Oven: Preheat oven to 375F with rack on lower middle position. Line a large sheet pan with foil and grease the foil with some olive oil. Set aside.
  • Remove Moisture: Use paper towels to pat-dry the salmon fillet, ensuring that all excess moisture is removed (this step is important, as excess water/moisture causes fish to be "steamed" instead.) Place salmon on the prepared sheet pan.
  • Mix Seasonings: In a small bowl, stir together all remaining ingredients until combined. Evenly press the mixture over the top of salmon.
  • Bake: Bake salmon for 10 minutes in preheated oven. Carefully but quickly take salmon out, move rack to top position underneath the broiler, and place salmon tray back on rack.

2 tablespoons unsalted butter
2-3 basil leaves, minced
1 garlic glove, minced
6 ounces broccolini
1-2 teaspoons olive oil
salt and pepper to taste

Steps:

  • For the compound butter, place the butter into a small microwave safe bowl and microwave for 10-15 seconds. Mash in minced basil and half of the garlic until well combined. Place onto a small sheet of tinfoil and roll up, doing your best to reshape into a log. Place in the fridge until ready to serve.
  • Preheat the grill to medium-high heat. Season both sides of the salmon filets with salt and pepper to taste and set aside. Place the broccolini in a medium bowl and toss with olive oil and remaining garlic. Set aside.
  • Lightly brush the grilling surface with olive oil and grill salmon for 5-6 minutes per side for medium. At the same time, add the broccolini. Occasionally turning until slightly charred and golden, about 10-12 minutes.

5 salmon fillets, rinsed
½ cup white vinegar
1 teaspoon ground ginger
1 teaspoon garlic powder
ground black pepper to taste

cooking spray
⅓ cup honey
3 tablespoons lemon juice
2 tablespoons minced fresh basil

Steps:

  • Place salmon fillets in a plastic container and add vinegar, ginger, garlic powder, black pepper, and salt. Lightly massage into salmon for about 1 minute. Spray both sides of fish with cooking spray. Refrigerate fish while you prepare the rest of the ingredients.

1 cup half-and-half
1 cup chicken broth
1/4 cup lemon juice
2 tablespoons cornstarch

  • MELT butter in a large skillet over medium-high heat; add garlic, and saute 1 to 2 minutes.
  • Add half-and-half and chicken broth.

1/4 cup lemon juice
1 tablespoon lemon zest
2 tablespoons olive oil (or avocado oil)

Steps:

  • Gather the ingredients.
  • If the salmon is frozen, allow it to defrost in the refrigerator.
  • Combine the lemon juice , lemon zest, oil, thyme, garlic, and salt in a large resealable bag. Add the salmon and turn the fillets or steaks to coat them evenly.
  • Seal the bag and refrigerate it for 30 minutes to 1 hour. Do not allow it to marinate any longer as the salmon can become mushy.
  • Preheat the grill for medium-high heat. Right before placing salmon on the grill, oil the grill grates well using large tongs, folded paper towels, and oil. Make several passes across the grates. This will help the fish from sticking and breaking apart.
  • Remove the salmon from the bag and place on the hot grill. Brush salmon with marinade from the ziptop bag only once, at the start. Grill the salmon for about 4 to 6 minutes per side.
  • Remove the salmon from the heat once the internal temperature of the fish reaches 145 F. The salmon should be light in color and flake easily through the thickest part.
  • Optionally, squeeze fresh lemon over each fillet right before you take it off the grill.
  • Serve and enjoy!

16 ounces salmon fillets (four 4-ounce pieces)
olive oil (as needed)
kosher salt (as needed)
black pepper
8 cups lettuce (romaine, spinach or kale)
1 cup tomatoes (chopped)
1 cup cucumber (diced, ¼-inch thick)
½ cup red onion (thinly sliced)
½ cup red bell pepper (diced, ¼-inch thick)
4 ounces feta cheese (crumbled)
½ cup walnuts (roughly chopped)
¼ cup lemon juice (plus zest of one lemon)
½ cup olive oil
1 tablespoon dijon mustard
1 teaspoon honey
2 cloves garlic (minced)
8 basil leaves (fresh )
½ teaspoon dried oregano (or 1 teaspoon fresh)
¼ teaspoon kosher salt
⅛ teaspoon black pepper (freshly cracked )

Steps:

  • Lightly season both sides of the salmon fillet with salt and pepper. Drizzle a small amount of olive oil on both sides to coat.
  • Heat grill to medium-high. Add a small amount of vegetable oil on a folded piece of paper towel, and then carefully grease the grill grates.
  • Once the grill is nice and hot, add the salmon fillets. Cook uncovered about 4 to 5 minutes on each side until flaky (about 130-140°F).
  • Remove the salmon from the grill and transfer to a clean plate, cover to keep warm. Remove the skin if still attached.
  • In a large bowl add salad ingredients; lettuce, tomatoes, cucumber, red onion, bell pepper, cheese, and walnuts. Set aside.
  • Add lemon juice, zest, olive oil, mustard, honey, garlic, basil, oregano, salt, and pepper in a blender.
  • Blend until well combined and a slightly thick and opaque dressing is achieved, about 30 seconds. Add more salt and pepper as desired.
  • Toss salad with enough dressing to coat the ingredients, you will have extra dressing. Evenly divide mixture among four bowls and top with 1 salmon fillet. Drizzle each salmon with more dressing if desired.

I've had this recipe in my file for so long I don't know where it came from. I do know that it is wonderful especially with really fresh salmon. My oldest son brings one home from time to time. There just isn't anything better!

4 salmon steaks, 1 inch thick,thawed if frozen (4-6oz.)
1 cup mesquite wood chips
1/2 cup packed fresh basil leaf
3 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons honey
1/2 teaspoon fresh ground pepper
1/8 teaspoon salt
lemon slice
basil sprig

Steps:

  • Combine marinade ingredients in a blender container.
  • Process until smooth.
  • Place salmon steaks in a glass dish.
  • Pour marinade over salmon, turn to coat.
  • Cover and refrigerate 30 minutes.
  • Meanwhile, cover wood chips with water and soak for 30 minutes.
  • Just before cooking salmon sprinkle wood chips over coals.
  • Place salmon steaks on oiled grill rack 4-6 inches over medium hot coals.
  • Grill 10-17 minutes until fish is done, basting occasionally with the marinade.
  • Garnish with a lemon slices and sprigs of basil.

Vegetable oil or extra virgin olive oil *
Optional: Fine sea salt

Steps:

  • Gather the ingredients.
  • Rinse the lemons clean. If you have any plans to use or otherwise eat the peel, you may even want to go so far as to scrub them with soap before rinsing them. Pat them dry. To release extra juice, roll them on a hard surface.
  • Cut the lemons in half crosswise.
  • Optional: Pop out and discard any visible seeds. Use the tip of a paring knife to urge any deeper-set seeds to the surface. This is a kind service to your fellow diners since it minimizes the chance that they'll bite into a bitter seed while enjoying their lovely grilled lemons.
  • Use a pastry brush , silicone grilling brush, or a paper towel to brush the cut sides with a bit of oil. You can sprinkle the cut sides with fine sea salt, too, if you want to add a more intense savory effect to the grilled lemons.
  • Set the lemons cut-side-down on the hot grill or in the frying pan. Cook until the lemons are heated through and charred on the cut side, about 3 minutes. Ideally, you'll cook them without moving them so they char nicely, but adjust them if the heat seems uneven so they char evenly.

2 tablespoons butter or margarine
2 cloves garlic, minced
1 cup half-and-half
1 cup chicken broth
¼ cup lemon juice
2 tablespoons all-purpose flour
1 ½ teaspoons pepper, divided
3 tablespoons chopped fresh basil
4 steaks (3/4-inch-thick) salmon steaks
1 teaspoon salt
Garnish: fresh basil sprigs

Steps:

  • MELT butter in a large skillet over medium-high heat; add garlic, and saute 1 to 2 minutes. Add half-and-half and chicken broth. Bring to a boil, and cook 8 minutes or until reduced by half.
  • WHISK together lemon juice and flour until smooth. Whisk lemon juice and 1/2 teaspoon pepper into butter mixture, and cook, whisking constantly, 2 minutes or until thickened. Remove from heat, and stir in basil. Keep warm.
  • SPRINKLE salmon with remaining 1 teaspoon pepper and salt.
  • GRILL salmon, without grill lid, over high heat (400 degrees to 500 degrees) 5 to 7 minutes on each side or to desired degree of doneness. Serve with sauce. Garnish, if desired.

1/4 cup orange marmalade
1 tablespoon lemon juice
1 tablespoon chopped fresh basil or 1/2 teaspoon dried basil leaves
4 (6-oz.) salmon fillets
Nonstick cooking spray
1/2 teaspoon garlic-pepper blend
1/4 teaspoon salt

Steps:

  • Heat gas or charcoal grill. In small bowl, combine marmalade, lemon juice and basil; mix well. Spray skin side of salmon with nonstick cooking spray. Turn salmon over; sprinkle with garlic-pepper blend and salt.
  • When grill is heated, place salmon, skin side down, on gas grill over medium-low heat or on charcoal grill 4 to 6 inches from medium-low coals. Cook 12 to 17 minutes or until fish flakes easily with fork, brushing with marmalade mixture during last 8 to 10 minutes of cooking time.
