MUSTARD AND VINEGAR CHICKEN

Mustard and Vinegar Chicken image

Make and share this Mustard and Vinegar Chicken recipe from Food.com.

Provided by English_Rose

Categories     Chicken Breast

Time 40m

Yield 4 serving(s)

Number Of Ingredients 7

2 ounces basil leaves, plus extra to garnish
6 anchovy fillets
4 tablespoons red wine vinegar
4 teaspoons Dijon mustard
3/4 cup olive oil
4 chicken breasts, with skin
salt and pepper

Steps:

  • Put the basil leaves in a food processor with the anchovy fillets, vinegar and mustard and whizz together for about 10sec to make a rough purée. With the motor running, slowly pour in the olive oil.
  • Reserve about 6tbsp of the sauce and pour the remainder into a small serving bowl. Place the chicken skin-side down in a broiler pan and brush lightly with half of the reserved sauce. Season with salt and pepper.
  • Heat the broiler to its highest setting and cook the chicken about 2in away from the heat for 7min. Turn chicken skin-side up and brush again with the remaining sauce.
  • Baste with the cooking juices - which will look a little curdled but don't worry! Cook for a further 7min or until the chicken is golden and cooked through.
  • To crisp the skin, move the chicken closer to the heat. Serve with the pan juices and sauce, garnished with a few basil leaves.

CAROLINA-STYLE BARBECUE CHICKEN

Carolina-Style Barbecue Chicken image

The hallmark of Carolina BBQ is a tangy sauce with a vinegar base and just a little spice, but no tomato product. While Carolina BBQ usually features pork, this recipe shows that the flavors work just as well on chicken. A little melted butter in the sauce helps balance the sharpness of the vinegar and mustard, and adds just enough thickness to cling to the meat.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

1/2 cup yellow mustard
1/4 cup apple cider vinegar
1/4 cup packed light brown sugar
1 1/2 tablespoons mustard powder
2 teaspoons hot sauce
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted
8 skin-on, bone-in chicken thighs (2 to 2 1/4 pounds)
Vegetable oil, for brushing
1 large tomato, sliced
Prepared macaroni salad, for serving (optional)

Steps:

  • Preheat a grill to medium. Whisk the yellow mustard, vinegar, brown sugar, mustard powder, hot sauce, Worcestershire sauce, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in the butter.
  • Season the chicken with salt and pepper, then toss with about one-third of the mustard sauce in a large bowl until coated. Let sit at room temperature, 10 minutes.
  • Brush the grill grates generously with vegetable oil. Put about 1/4 cup of the remaining mustard sauce in a small bowl for basting and reserve the rest for topping. Grill the chicken, covered, basting occasionally with the sauce, until well marked and a thermometer inserted into the thickest part registers 170 degrees F, 10 to 12 minutes per side.
  • Serve the chicken with the reserved mustard sauce, sliced tomato and macaroni salad, if desired.

MUSTARD & VINEGAR BARBECUE SAUCE

Mustard & Vinegar Barbecue Sauce image

Though the first time I made this sauce, I was hesitant -- I mean, just LOOK at how much VINEGAR is in it! After "The Hasenpfeffer Incident" about 15 years ago, I've been extremely cautious of recipes that call for more than a few tablespoonsful of the stuff. But the lack of tomato sauce and the large amount of mustard intrigued me. After a while, that is...I had this gem sitting in my database for at least a year before I mustered (HA!) up the courage to serve it to my unsuspecting family. As it turned out, I had no reason for concern. I used it to baste chicken as I cooked it. They asked for seconds immediately, and for thirds, but alas, there were none. I was ordered to make chicken with this sauce again. And again. Since I do not currently have a grill, I used my grill pan, and cooked it over medium heat, covered with whatever lid I could find lying around that would sort of cover it, mostly. An added bonus of the grill pan is the sauce which collects in the bottom and caramelizes. They fight over who gets the pan scrapings! Plus, I had to explain what "caramelization" means, so the kids got a cooking lesson as well!
