MUSSELS WITH TOMATOES & CHILLI
This spicy seafood recipe makes a fantastic meal for two but can be easily increased for a stylish dinner party starter

Steps:
- Put the tomatoes in a heatproof bowl. Cover with boiling water, leave for 3 mins, then drain and peel. Quarter the tomatoes and scoop out and discard the seeds using a teaspoon. Roughly chop the tomato flesh.
- Heat the oil in a large pan with a tight- fitting lid. Add the garlic, shallot and chilli, then gently fry for 2-3 mins until softened. Pour in the wine and add the tomatoes, paste, sugar and seasoning (mussels are naturally salty so take care with the salt). Stir well and simmer for 2 mins.
- Tip in the mussels and give them a stir. Cover tightly and steam for 3-4 mins, shaking the pan halfway through, until the shells have opened.
- Discard any shells that remain shut, then divide the mussels between two bowls and add the basil leaves. Provide a large bowl for the empty shells.

I LOVE, LOVE, LOVE mussels. Especially as a meal with really good crusty bread for dipping. This is 4 servings as an appetizer or 2 as a meal.

Steps:
- In a large saute pan, melt the butter.
- Add the onions, salt, and pepper, and cook, stirring, for 4 minutes.
- Add the garlic and tomatoes, and cook, stirring, for 1 minute.
- Add the wine, parsley, and bring to a boil.
- Add the mussels, cover, and cook until the shells have opened, about 4 minutes.
- Remove from the heat and discard any shells that do not open.
- Transfer to a large deep bowl and serve immediately. Make sure to have spoons available as this broth is good!
- Use your nice crusty french bread for dipping.
TEQUILA MUSSELS WITH TOMATOES & JALAPENOS!
I have had many people tell me these are the best mussels they've ever had! Great as a light summer meal served with crusty bread to dip in the left over sauce!

- Melt butter in heavy large pot over medium-high heat. Add garlic; sauté until fragrant, about 1 minute. Mix in tomatoes, then next 5 ingredients. Add mussels. Cover and steam until mussels open, about 7 minutes (discard any mussels that do not open). Using slotted spoon, transfer mussels to large bowl. Simmer sauce uncovered until slightly reduced, about 3 minutes. Season with salt and pepper. Pour sauce over mussels and serve.
- Note: I put my veggies in the food processor and chop them up to make quick work of this one!

STEAMED MUSSELS IN TEQUILA CHIPOTLE BROTH

- Serving suggestions: toasted bread and lime wedges
- In a large, hot, saute pan, add 1 tablespoon of oil and heat until it smokes, add the sliced garlic shaking the pan quickly so as not to burn the garlic, cook for approximately 30 seconds. Add the onions and tomatoes and cook for 3 minutes.
- Add the mussels tossing them in the pan to coat. Remove the pan from the heat and add the tequila and stock. Return the pan to the heat, cover the pan and cook for 5 minutes or until the mussels start to open. Add the chipotle and the cilantro and cook for 3 minutes. Discard any mussels that did not open. Taste and add salt and pepper, to taste.
- Serve with toasted bread and lime wedges.
TEQUILA RUN PASTA WITH SHRIMP AND MUSSELS IN SPICY TOMATO SAUCE
A flavor combination of Penne Pasta, fresh mussels, San Marzano Tomatoes, jalapeño peppers, limes, Spanish onion, Tequila, fresh spicy homemade tomato sauce seasoned with cilantro and other herbs.

- Using a large stockpot or deep large metal skillet (heated to medium heat), add 1-2 tablespoons of olive oil, garlic, minced jalapeño, and red onions. Saute until slightly softened, and the oil is fragrant. Add the fish stock or chicken broth and tequila. Let the broth come to a good simmer or slight bubble, Add the tomatoes, and tomatoes paste, 1 teaspoon of sugar, kosher salt, and fresh ground pepper. Stirring to combine, let it come back to a simmer for about 7 minutes. Start pasta water at this time. Add Mussels to the sauce, cook about 5 minutes, add shrimp cook another 3-4 minutes. Remove from heat.
- After Bringing salted water to a rolling boil in the pasta pan, add pasta and cook until Al dente, if you are unsure read package directions for your brand of pasta). Drain and rinse pasta if desired. Toss in a little olive oil to coat noodles. Add 1 to 2 ladles of sauce only, toss to coat. Place in a serving dish, add mussels and shrimp to top and desired amount of sauce (reserve rest for later) Top with jalapeño slices and lime slices, additional fresh oregano leaves, and cilantro leaves may be used to garnish or enhance.

TEQUILA MUSSELS
Steps:
- In a large nonreactive skillet with a lid, over medium-high heat, add the oil. When the oil is hot, add the onions, peppers and jicama. Season with salt and pepper. Saute for 2 minutes. Remove the pan from the heat and add the tequila. Place the pan back over the heat and carefully flame the pan. Shake the pan back and forth several times until the flame dies out. Add the tomatoes, stock and coconut milk. Bring to a simmer. Add the mussels. Season with salt and pepper. Cover with a lid and cook until the mussels have opened, about 4 to 6 minutes. Remove the lid and add the cilantro. Preheat the fryer. Fry the tortillas until crispy and golden brown. Remove and drain on paper towels. Season with Creole seasoning. To serve: Spoon the mussels and vegetables in the serving bowls. Ladle the liquid over the mussels. Pile the fried tortillas in the center of each bowl.

STEAMED MUSSELS WITH LIME & CILANTRO

- Rinse the mussels in a colander under cold water, scrub the shells thoroughly, remove the tough, wiry beards, and discard any mussels with broken or gaping shells. While the mussels drain, heat the oil in a large, wide pot over medium- high heat. Add the carrot and jalapeño and sauté, stirring occasionally until they begin to soften and lightly brown, about 2 min. Add the garlic and 1/2 tsp. of the lime zest, and continue to sauté until fragrant, 30 seconds. Pour in the wine and raise the heat to high. As soon as the wine boils, add the mussels and cover the pot. Steam the mussels, shaking the pot once or twice, until the shells open, 5 to 6 min.
- Remove the pot from the heat. With a slotted spoon, transfer the mussels to a large bowl and keep warm. Return the pot with the cooking liquid to the heat, add the cream, and boil until the sauce reduces just a bit, 2 to 3 min. Add 1-1/2 Tbs. of the lime juice, the cilantro, and the chile sauce, if using. Taste and add more lime juice and salt if needed. Ladle the mussels into wide, shallow bowls, pour some of the sauce over each portion, and serve immediately.

- In a large pot, heat the oil over moderately low heat. Add the onion and garlic and cook, stirring occasionally, until the onion is translucent, about 5 minutes. Stir in the parsley, tomatoes, thyme, and red-pepper flakes. Reduce the heat and simmer, partially covered, for 25 minutes, stirring occasionally.
- Discard any mussels that have broken shells or that don't clamp shut when tapped. Add the mussels to the pot. Cover; bring to a boil. Cook, shaking the pot occasionally, just until the mussels open, about 3 minutes. Remove the open mussels. Continue to boil, uncovering the pot as necessary to remove the mussels as soon as their shells open. Discard any that do not open.
- Stir the black pepper into the broth. Taste the broth and, if needed, add salt. Ladle the broth over the mussels and serve with the garlic toast.

- Scrub live mussels under cold running water. Pinch the beards that are visible between the shells and pull to remove. Combine 4 quarts cold water and 1/3 cup of the salt in a large bowl. Add mussels and soak for 15 minutes; drain in colander and rinse. Repeat twice more, using fresh, salted water each time.
- Melt butter in a large saucepan or 4-qt. Dutch oven over medium heat. Add green onions, jalapeno peppers, and garlic. Cook and stir for 1 minute. Carefully add broth; heat to boiling, reduce heat and simmer, covered, for 10 minutes. Add mussels. Cover and cook for 6 minutes or until mussels open. (Discard any mussels that do not open.)
- Transfer mussels to shallow bowls using a slotted spoon. Stir whipping cream into cooking liquid. Bring to boiling; reduce heat. Boil gently, uncovered, until reduced to 2/3 cup (about 5 to 7 minutes). Add tequila to sauce; heat through. Spoon sauce over mussels. Serve immediately topped with tomato-lime mixture; pass lime wedges. Makes 4 to 6 appetizer servings.
