MUSSEL SOUP WITH TOMATOES



Mussel Soup with Tomatoes image

You'll want to take most of your mussels out of their shells to make the soup easier to eat. It's a two-step process: Steam the mussels out of their shells and remove the meats, then strain and use the mussel broth for the soup.

4 pounds mussels, (in their shells)
4 tablespoons olive oil
4 finely chopped garlic cloves
1 shallot, (finely chopped)
1 quart of crushed tomatoes
1/2 teaspoon cayenne
2 tablespoons finely chopped parsley (or cilantro)
12 cherry tomatoes, halved ((optional))
Balsamic vinegar, (for garnish)

Steps:

  • Pour about 1 cup of salty water -- ideally boiled seawater -- into a large, wide pot with a cover and bring to a boil. Add the mussels and steam until they all open, about 3 to 5 minutes. NOTE: If you are using wild mussels, you will need to scrub and debeard them all first.
  • When the mussels are open, pick out the meats of all but your "show mussels" and put in a bowl. Toss with a little olive oil and set aside. Strain the mussel broth through cheesecloth or a paper towel into another bowl.
  • In a soup pot, get the olive oil hot over medium-high heat. Add the shallot and sauté for 2 minutes, stirring often. Add the garlic and sauté another 2 minutes.
  • Pour in the mussel broth, tomatoes and cayenne and mix well. Simmer uncovered for 10 minutes. You can puree this mixture and run it though a sieve to make it a refined soup, or leave it rustic. Your choice. Add the mussels and cook for another 3 minutes. If you're using the cherry tomatoes, add them at the last minute.
  • Garnish with the parsley or cilantro, and drizzle a little balsamic vinegar over everyone's bowl.
  • Serve hot with a nice medium-bodied Italian red, a dry rose or an amber beer. Be sure to have lots of crusty bread to serve

3 pounds fresh mussels (about 5 dozen), scrubbed and beards removed
2 medium onions, finely chopped
2 celery ribs, finely chopped
1 cup water
1 cup white wine or chicken broth
1 bottle (8 ounces) clam juice
1/4 cup minced fresh parsley
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup half-and-half cream

Steps:

  • Tap mussels; discard any that do not close. Set aside. In a stockpot, combine the onions, celery, water, wine or broth, clam juice, parsley, garlic, salt and pepper. , Bring to a boil. Reduce heat; add mussels. Cover and simmer until mussels have opened, 5-6 minutes. Remove mussels with a slotted spoon, discarding any unopened mussels; set aside opened mussels and keep warm., Cool cooking liquid slightly. In a blender, cover and process cooking liquid in batches until blended. Return all to pan. Add cream and reserved mussels; heat through (do not boil).

This is a classy yet simple soup from France. I have made mussel soup before but this is the best recipe. Make sure you have the freshest mussels!! Serve with a good loaf of crusty bread to soak up all the wonderful broth! To make this into an entrée add 1/2 pound of cooked pasta, such as penne. Add the pasta to the soup just before serving. 4 lbs mussels, cleaned
2 shallots, diced
2 cups dry white wine
3 tablespoons butter or 3 tablespoons extra virgin olive oil
2 leeks, white and light green parts only, well cleaned and sliced
2 garlic cloves, minced
1 pinch saffron
1/4 teaspoon cayenne (to taste)
1/2 cup heavy cream (optional)
1 tablespoon fresh lemon juice (to taste)
salt and pepper, to taste
basil, chopped for garnish
chervil, leaves chopped for garnish

Steps:

  • Put the mussels, wine and shallots in a saucepan and turn the heat to high. Cover and cook, shaking occasionally, just until the mussels open, about 5 minutes.
  • Remove the mussels with a slotted spoon and strain the broth; set aside.
  • Melt the butter in a saucepan over medium heat. Add the leeks and cook until fragrant and softened, about 5 minutes.
  • Stir in the garlic and crumble the saffron into the saucepan. Pour in the reserved mussel broth, cayenne and enough water to make 5 cups of soup.
  • Add the cream, if you are using it. Bring to just a boil, then turn off the heat and season with lemon juice, salt and pepper.
  • Arrange mussels in soup bowls and pour the hot broth over them.
  • Garnish with basil and chervil if desired.

1 1/2 pounds leeks (3 medium; white and pale green parts only), quartered lengthwise, then sliced crosswise
2 tablespoons unsalted butter
4 (3-inch) sprigs fresh thyme
1 (12-ounce) bottle lager
1 1/2 cups water
3 pounds mussels (preferably cultivated), scrubbed well and beards removed if attached
1 cup half-and-half
1/4 teaspoon salt
1/4 teaspoon coarsely ground white pepper
1 (8-ounce) firm-ripe avocado
18 very small grape or pear tomatoes (1/4 pound), halved
3 tablespoons coarsely chopped fresh dill

Steps:

  • Wash leeks in a bowl of cold water, agitating them, then lift out leeks and pat dry.
  • Cook leeks in butter in a wide 5-quart heavy pot over moderate heat, stirring occasionally, until softened, 5 to 7 minutes. Add thyme and cook, stirring, 1 minute. Stir in beer and water, then increase heat to moderately high and bring to a boil. Add mussels and return liquid to a boil, partially covered. Cook, completely covered, stirring occasionally, just until mussels open wide, checking frequently after 4 minutes and transferring to a large bowl. (Discard any mussels that remain unopened after 8 minutes.)
  • Working over a bowl, remove mussels from shells and put in bowl (discard shells along with any clinging leeks). Pour any cooking liquid accumulated in bowl back into pot.
  • Pour cooking liquid through a sieve lined with a double layer of cheesecloth or dampened paper towels into a 2-quart heavy saucepan. Stir in half-and-half, salt, and white pepper, then heat over moderately low heat until hot (do not let boil). Stir in mussels and heat until just warmed through.
  • Meanwhile, halve avocado, then peel 1 half (wrap remaining half tightly in plastic wrap and reserve for another use). Cut into 1/2-inch cubes, then toss gently with tomatoes and dill in a bowl.
  • Divide soup among 6 shallow bowls and spoon some avocado mixture into each. Serve immediately.

500g pack mussel in creamy sauce (find these in the chilled aisle)
1l strong, hot fish stock (we used Knorr Touch of Taste concentrate)
500g floury potato , cut into sugarcube-size pieces
200g mixed fish
small bunch flatleaf parsley

Steps:

  • Drain the sauce from the mussels into a large saucepan and add the stock. Tip in the potatoes, cover and bring to the boil. Once boiling, take off the lid and simmer for about 12 mins or until the potatoes are very tender.
  • Meanwhile, cut the fish into large chunks and roughly chop the parsley. Stir the fish and mussels into the soup, then bring back to a simmer for about 3 mins or until the fish has changed colour and flakes easily. Stir in most of the parsley, then serve scattered with the rest of the parsley and eat with crusty bread.

Mussels are a great protein for a busy weeknight because the cook so quickly. Try them in this quick soup. To make this soup in under 15 minutes first gather together all of the tools, pots, pans and ingredients that you'll need. But don't do any prep. 1 Tbsp. olive oil
1 small onion
1 large handful fresh parsley
3 cloves garlic
½ - 1 tsp crushed red pepper flakes (to taste)
½ cup dry white wine
1 (28 oz.) can crushed tomatoes
1 (28 oz.) can diced tomatoes
2 cups low or no-sodium chicken broth
½ tsp. salt
2 lbs. fresh live mussels

Steps:

  • Heat the olive oil in a large pot or Dutch oven over medium heat. peel and chop the onion and add it. Chop the parsley and set it aside. Mince the garlic cloves. Add garlic to onions along with red pepper flakes. Stir. Let cook for 30 seconds. Add the wine. Stir.
  • Open the cans of crushed and diced tomatoes and add them to the pot along with the chicken broth, salt and half of the chopped parsley. Stir, cover and increase heat to high. Cook until it reaches a boil. Reduce to a heavy simmer.
  • While the soup heats up, remove the beards from the mussels (just pull off the thread that runs along them, if that thread is there) and gently scrape off any barnacles. Put them in a colander and rinse with cold water. If any mussels are open, tap them. If they close they're fine. If they stay open, discard.
  • Once the soup is simmering, add the mussels. Cook until all mussels have opened. If most have opened, discard any that have stayed closed.
  • Ladle into bowls and sprinkle with remaining parsley.

800 g mussels (I find mussels very light and with the fact they don't all open I tend to buy a kilo for 4)
1 medium onion, finely chopped
4 slices bacon, rashers chopped
2 -3 garlic cloves, crushed (depending on your taste)
1/2 cup dry white wine
2 tablespoons lemon juice
1 1/2 cups water
1 teaspoon fish stock (Concentrated,either powder, cube, paste etc..)
1 teaspoon vegetable stock (concentrated, either powder, cube, paste etc..)
300 ml cream (can use light)
2 tablespoons fresh basil, chopped
2 egg yolks

Steps:

  • Scrub mussels and remove hairy beards from them. Heat a small amount of olive oil in a fry pan, add onion and garlic and cook until onion is soft. In a small pan cook bacon until browned then drain on absorbent paper.
  • In a large saucepan add enough water that will cover mussels and bring water to boil. Add mussels to pan, cover and cook for a few minutes or until mussels open. drain and discard any mussels that do not open. (I cook mussels in a separate pan so that any sand or grit that has not been washed off does not end up in my soup). Remove shells completely from some of the mussels, remove half the shell from others and leave some complete. This is for presentation and ease of eating.
  • Wash saucepan and return to medium heat combine wine, lemon juice, water, both stocks, and onion garlic mixture, bring liquid to boil then reduce heat to a simmer, add cream and bacon. Remove pan from heat. In a bowl lightly beat egg yolks and add a few tablespoons of soup mixture to egg and mix, then add to soup, return pan to a low heat add mussels and basil and stir until heated through.
  • Serve with a mixture of soft cut french loaf and fried french loaf.
  • For fried.
  • Cut a french loaf into slices, crush a couple of cloves of garlic and mix with butter. Spread garlic butter on both sides of bread and fry until golden brown on both sides.

500 g mussels frozen
500 ml water
80 ml butter
1 onion chopped
2 l full cream milk long life
2 stock cube chicken
250 ml flour cake
3 bay leaves
dried oregano pinch
25 ml fresh parsley chopped
125 ml wine dry white
sea salt and freshly ground black pepper

Steps:

  • Place mussels in a mixing bowl, pour water over and set aside.Heat butter in a heavy based pot and fries the onion until soft. Heat the milk in another pot, add chicken stock cubes, and stir till dissolved. Add the cake flour to the butter and cook for two minutes, stirring all the time. Remove from the heat.Add the hot chicken stock milk gradually, stir continuously until smooth.Put back onto the heat; add the spices and herbs as well as the mussels and water. Bring to the boil while stirring continuously. Reduce heat and let the soup simmer until the mussels are cooked and the soup has thickened.Add the white wine and simmer for another 5 minutesServe hot with some crusty bread. A warming soup for a cold day, this easy blend of mussels, fennel and cream is served with toasted garlicky bread.

1 kg/2lb 3oz fresh mussels
200ml/7fl oz white wine
1 tbsp olive oil
1 shallot, finely chopped
1 garlic clove, finely chopped
1 fennel bulb, roughly chopped
pinch saffron
50ml/2fl oz aniseed liqueur
300ml/10½fl oz fish stock
100ml/3½fl oz double cream
2 tsp coriander cress (or finely chopped coriander)
1 loaf white bread, sliced
2 tbsp olive oil
1 garlic clove, halved

Steps:

  • Clean the mussels by thoroughly scrubbing them under plenty of running water, pulling away and discarding the 'beards', the seaweed-like stringy threads. Discard any broken mussels, and any mussels that don't close tightly when you tap them.
  • Place the mussels in a saucepan, add the white wine and cook for 3-4 minutes.
  • Drain, reserving the cooking liquor, and pick the mussels from their shells. Set aside the liquor and the mussels, but discard the shells.
  • Heat a large frying pan and add the oil. Add the finely chopped shallot, garlic and fennel and cook for 3-4 minutes.
  • Add the saffron, aniseed liqueur, stock, three-quarters of the mussel meat, finish with the cream
  • Cook for a further 3-4 minutes until warmed through, then blend with a stick blender until smooth.
  • Heat a large griddle pan and drizzle the sliced bread with oil and rub with the halved clove of garlic. Toast the bread on the griddle for 2-3 minutes.

2 pounds mussels, well scrubbed, de-bearded, and rinsed in several changes of water
1 cup dry white wine
1 cup water
1 tablespoon fresh lemon juice
1 bay leaf
1 teaspoon crab boil
3 slices bacon, chopped
1 cup chopped yellow onion
1 cup chopped leeks, whites only, well rinsed
2 teaspoons minced garlic
1/2 teaspoon salt
Pinch cayenne
2 bay leaves
2 sprigs fresh thyme
1 pound baking potatoes, like russets, peeled, diced, and blanched
2 cups milk
1 cup heavy cream
1 small loaf French bread, cut into 1/2-inch thick slices
2 large cloves garlic, peeled and crushed
1/4 cup chopped fresh parsley, garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium pot, combine the mussels, wine, water, lemon juice, bay leaf, and crab boil, and bring to a boil. Cover, reduce the heat, and simmer until the mussels have opened, 5 to 6 minutes. Remove from the heat and discard any unopened mussels. Strain the cooking liquid through a strainer lined with cheesecloth into a clean container. Remove the mussels from the shells and set aside. Discard the shells.
  • In a large pot, cook the bacon over medium heat until just golden and starting to crisp, about 3 minutes. Add the onions and leeks, and cook until soft, about 4 minutes. Add the garlic, salt, and cayenne, and cook, stirring, for 30 seconds. Add the bay leaves and thyme, and stir well. Add the strained mussel cooking liquid, the potatoes, milk, and cream and bring to a boil. Reduce the heat and simmer until the potatoes are tender, about 12 minutes. Discard the bay leaf and thyme sprigs. Add the cooked mussels and simmer until warmed through. Remove from the heat and adjust the seasoning, to taste.
  • Meanwhile, place the bread slices on a baking sheet and rub on both sides with the garlic cloves. Bake until light golden brown, turning once, about 15 minutes. Remove from the oven and let cool slightly. Ladle into soup bowls, garnish with the parsley, and serve with the garlic croutons.

2 pounds large mussels
1/2 cup dry white wine
2 cups canned Italian plum tomatoes, chopped, juices reserved
Chiffonade of basil

  • Heat olive oil in a large enameled casserole. Add onions, carrots, celery and garlic. Cover and simmer, stirring on occasion, for 10 minutes or until really tender. Add the white wine and reduce by half. Add the tomatoes and their juices and simmer for 20 minutes to mellow the flavor. Add the mussels, cover the casserole and cook over high heat until they open. Discard unopened mussels. Spoon mussels and their liquid in deep bowls and garnish with basil. Could also serve over pasta or rice or with a potato salad.

3 fresh chili peppers, very finely chopped (with pips)
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1 slice white bread, soaked in a little of the soup and mashed

  • -------------MUSSELSOUP-------------------.
  • Sauté the onions in the butter/oil mixture.
  • Add the garlic, herbs, saffron and flour and stir-fry for 2 minutes.
  • Add the stock and fresh tomatoes.
  • Reduce the heat and simmer for 20 minutes.
  • Add the tomato pesto, sugar and mussels and simmer a further 5 minutes.
  • Add the cream and adjust the seasoning.
  • If the soup tastes weak allow to reduce by cooking without a lid for a while.
  • Sprinkle with chopped fresh parsley and serve with a spoonful of rouille and a crusty garlic loaf.

  • Mix all ingredients together thoroughly and serve with seafood soups and stews.

Steps:

  • Discard any mussels that have opened. Scrape off barnacles and scrub mussels with a stiff brush under running water; drain.
  • In a 4 to 5-quart kettle over medium heat, melt the butter. Add the paprika and shallots and cook, stirring, until soft but not brown. Add the mussels in shells, parsley, peppercorns, and wine. Bring to a boil, cover, reduce heat, and simmer until the mussels open (about 6 to 8 minutes). Discard any mussels that remain closed.
  • Remove the mussels from the liquid. Strain the liquid through a dampened cloth and measure it. Add fish broth to make 4 cups. Return liquid to the kettle (rinsed to remove any sand).
  • Remove the mussels from the shells, discarding the shells. Pinch out and discard any "beards" from the mussels.
  • To the liquid, add the cream. Bring to a boil over high heat, reduce the heat slightly, and boil until the soup is reduced by about one-fourth. Lower heat to medium. Taste and add salt, if needed. Add the mussels and cook until just heated through. Serve hot or chilled, garnished with parsley.

2 cups dry white wine
3 tablespoons butter or extra virgin olive oil
2 leeks, white and light green parts only, sliced and well rinsed
2 garlic cloves, minced
Large pinch of saffron
1/4 teaspoon cayenne, or to taste, optional
1/2 cup heavy cream, optional
1 tablespoon fresh lemon juice, plus more to taste
Salt and black pepper to taste
Chopped fresh basil or chervil leaves for garnish, optional

Steps:

  • Put the mussels, shallots, and wine in a saucepan and turn the heat to high. Cover and cook, shaking the pan occasionally, just until the mussels open, about 5 minutes. Remove them from the broth with a slotted spoon, then strain the broth through cheesecloth or a fine strainer and set aside.
  • Melt the butter in a saucepan over medium heat. Add the leeks and cook until fragrant and softened, about 5 minutes. Stir in the garlic and crumble the saffron into the saucepan. Pour in the reserved mussel broth, the cayenne if you're using it, and enough water to make about 5 cups of soup; add the cream if you're using it. Bring just to a boil, then turn off the heat and season with lemon juice, salt, and pepper.
  • Arrange the mussels in soup bowls and pour the hot broth over them. Garnish with the basil or chervil if desired and serve.
  • Cook 1/2 pound cut pasta, like penne, in salted boiling water until tender but not mushy, about 8 minutes. Add the pasta to the mussel soup, garnish, and serve.
