MUSHROOM STIR-FRY

2 ounces dried mushrooms, preferably shiitakes
2 cups broccoli florets and stems, cut into bite-size pieces
3 tablespoons peanut or vegetable oil
2 tablespoons minced garlic
2 tablespoons minced fresh ginger
1 large yellow onion, halved and sliced
1 pound fresh mushrooms like button, cremini, shiitake, sliced (a variety is nice)
2 carrots, peeled and roughly chopped
2 ribs celery, roughly chopped
1 teaspoon cornstarch, optional
2 tablespoons soy sauce
Salt and freshly ground black pepper
1/4 teaspoon crushed red pepper, optional
3/4 cup mushroom-soaking liquid or water
1/2 cup chopped scallions

Steps:

  • Soak the dried mushrooms in 3 cups very hot water until soft, anywhere from 5 to 15 minutes. (Dried shiitake are much tougher than other varieties and should be soaked in boiled water.) When they are tender, remove the dried mushrooms from the liquid with a slotted spoon, reserving the liquid; slice or chop if the pieces are large.
  • Meanwhile, set a pot of water to boil for the broccoli. Cook the broccoli for 2 minutes in the boiling water, then drain.
  • Put a large, deep skillet over medium-high heat; add the oil and swirl it around, then add the garlic and ginger. Cook for 15 seconds; add the onions and cook, stirring occasionally, until beginning to soften and brown, 3 to 5 minutes. Add the fresh mushrooms and dried mushrooms when they're ready, and allow them to cook down 2 or 3 minutes before adding the carrots and celery. Cook, stirring occasionally, until vegetables are tender but not at all mushy, 10 to 12 minutes. Add the broccoli during the last five minutes of cooking.
  • If you like, dissolve the cornstarch in the soy sauce to thicken it; stir into the pan, and sprinkle with salt and pepper. Add the crushed red pepper if you're using it, and pour in the soaking liquid. Stir the mixture, and scrape the bottom of the pan, then turn off the heat; the liquid should be mostly absorbed. Sprinkle with the scallions, and serve with rice.

1 pound boneless sirloin steak, sliced 1/4 inch thick
1 tablespoon plus 2 teaspoons cornstarch
1 tablespoon plus 2 teaspoons balsamic vinegar
3 teaspoons soy sauce
2 teaspoons packed light brown sugar
3 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
1/2 small red onion, cut into thin wedges
4 ounces mixed mushrooms, sliced
1 bunch Swiss chard, stems cut into 1/2-inch pieces, leaves shredded
Kosher salt and freshly ground pepper
Juice of 1/2 lemon
Cooked rice, for serving (optional)

Steps:

  • Toss the beef with 1 tablespoon each cornstarch and vinegar and 2 teaspoons soy sauce in a medium bowl. In another bowl, stir the brown sugar, the remaining 2 teaspoons each cornstarch and vinegar, the remaining 1 teaspoon soy sauce, and 1/3 cup water until dissolved.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over high heat. Add the beef and cook, stirring occasionally, until just cooked through, 2 to 3 minutes. Transfer to a bowl and wipe out the skillet.
  • Heat the remaining 2 tablespoons olive oil in the skillet over high heat. Add the garlic and red onion and stir-fry 2 minutes. Add the mushrooms, chard stems, 1/4 teaspoon salt, and pepper to taste and stir-fry until the vegetables are just tender, 4 minutes. Add the chard leaves and stir-fry until wilted. Stir the brown sugar mixture and add to the skillet along with the beef, stirring, until thickened, 1 minute. Add the lemon juice and season with salt and pepper. Serve with rice.

2 tablespoons olive oil
3 green onions, sliced
3 garlic cloves, minced
2 bell peppers, deseeded and diced (the colorful the better)
1 cup champignon mushrooms, sliced
1 tablespoon chinese rice wine
2 -3 tablespoons soy sauce
1 teaspoon sesame oil

Steps:

  • Heat oil til really hot.
  • Stir fry onions (1 minute), then garlic (20 seconds).
  • Then add peppers and mushrooms. Stir-fry until it becomes a bit soft, (about 2 minutes).
  • Add the wine and soy sauce and continue to stir for 2 minutes.
  • When done, remove from heat and add the sesame sauce mixing it all together, and serve.

4 tbsp oyster sauce
2 tbsp dark soy sauce
1-2 tbsp vegetable oil
400g beef rump steak, thinly sliced across the grain into ½cm thick pieces
finger-tip length chunk fresh root ginger , chopped
300g spring greens , sliced
150g pack chestnut mushroom , sliced

Steps:

  • Mix the sauces together and set aside. Heat a wok until smoking hot, add 1 tsp oil, then stir-fry the meat until browned all over. You may need to do this in 2 batches, adding a little more oil. Remove the meat, then wipe the wok clean.
  • Add a little more oil. Stir-fry the ginger until golden, then add the spring greens and mushrooms. Cook for 3 mins, stirring often, then add the steak and soy sauce mixture. Cook for 3-4 more mins until the sauce has thickened a little and everything is warmed through. Serve over rice or noodles.

1 low-salt vegetable stock cube
2 nests medium egg noodles
1 small head broccoli, broken into florets
1 tbsp sesame oil, plus extra to serve
250g pack shiitake or chestnut mushroom, thickly sliced
1 fat garlic clove, finely chopped
½ tsp chilli flakes, or crumble one dried chilli into pieces
4 spring onions, thinly sliced
2 tbsp hoisin sauce
handful roasted cashew nuts

Steps:

  • Put the stock cube into a pan of water, then bring to the boil. Add the noodles, bring the stock back to the boil and cook for 2 mins. Add the broccoli and boil for 2 mins more. Reserve a cup of the stock, then drain the noodles and veg.
  • Heat a frying pan or wok, add the sesame oil and stir-fry the mushrooms for 2 mins until turning golden. Add the garlic, chilli flakes and most of the spring onions, cook 1 min more, then tip in the noodles and broccoli. Splash in 3 tbsp of the stock and the hoisin sauce, then toss together for 1 min using a pair of tongs or 2 wooden spoons. Serve the noodles scattered with the cashew nuts and remaining spring onions. Add a dash more sesame oil to taste, if you like.

½ teaspoon salt, divided
2 cups mushroom, sliced
1 cup asparagus, sliced
1 tablespoon ginger, minced
1 tablespoon low sodium soy sauce

Steps:

  • Heat 1 tablespoon of sesame oil in a large, non-stick skillet over medium heat. Add the shrimp and season with ¼ teaspoon of salt. Cook the shrimp for 1 minute on each side, until just pink. Remove from the pan.
  • Add the remaining tablespoon of oil to the pan. Toss in the mushrooms, asparagus, and remaining ¼ teaspoon of salt and sauté for a few minutes, until the vegetables begin to soften.
  • Add the ginger and soy sauce and sauté until the ginger is fragrant, about 30 seconds.
  • Toss the shrimp back into the pan and mix until everything is well incorporated and the shrimp is fully cooked, about 1 minute.

While stir-fries have long gone hand-in-hand with rice, this recipe shows the versatility of the dish. Here, a quick stir-fry is transformed into a flavorful, unconventional pasta sauce. Five spice is a Chinese seasoning that is said to incorporate all five tastes: sweet, sour, bitter, salty and umami. In this recipe, its blend of star anise, cloves, Chinese cinnamon, Sichuan peppercorns and fennel intensifies the robust flavor of the mushrooms. Don't overcook the broccolini; it should be crisp, with a bright green vibrancy. You could easily substitute broccoli, green beans, snow peas or other crunchy greens. And don't skip the butter (or use vegan butter, if you prefer), as it provides a beautiful richness which brings the sauce and ingredients together.

1 pound spaghetti or other long pasta
4 tablespoons neutral oil, such as grapeseed
1 pound mushrooms (any small variety), trimmed and cut into 1/4-inch-thick slices
2 garlic cloves, grated
1 1/4 teaspoons five-spice blend
3/4 pound broccolini, trimmed and cut into 3-inch pieces, thick stems halved lengthwise
3 tablespoons unsalted butter
2 scallions, thinly sliced
2 tablespoons oyster sauce (or vegetarian mushroom oyster sauce)
2 tablespoons maple syrup or brown sugar
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon chile oil or chile crisp

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions, until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.
  • Meanwhile, heat a large (12-inch), deep skillet over medium-high. When hot, add 2 tablespoons oil and the mushrooms. Cook for 7 to 8 minutes, giving it a stir every 2 minutes or so. The mushrooms will release lots of liquid, but it will evaporate as it cooks. When the mushrooms start to turn golden, add the garlic, five spice and 1/2 teaspoon each salt and black pepper, then cook for 1 minute. Transfer the mushrooms to a plate and set aside.
  • While the mushrooms are cooking, make the sauce: In a small bowl, whisk the oyster sauce, maple syrup, soy sauce, sesame oil and chile oil with 1/4 cup water until combined. Set aside.
  • Heat the same skillet back over medium-high. Add the remaining 2 tablespoons oil and the broccolini. Season with salt and pepper and cook for 4 to 5 minutes, tossing occasionally, until the broccolini is tender but still quite crisp.
  • Add the pasta to the pan, along with the sauce and the butter. Using tongs, toss to combine, then add the reserved pasta cooking water, 1/4 cup at a time, just to loosen the sauce. When the butter has melted, add the mushrooms and toss again. Remove from the heat. Serve topped with scallions.

12 ounces flank steak ((340g, sliced ¼-inch thick))
1 tablespoon water
1 teaspoon cornstarch
1 teaspoon vegetable oil ((plus 3 tablespoons, divided))
2 teaspoons oyster sauce
¼ teaspoon baking soda ((optional))
2½ cups beef stock ((warmed, no added vegetable in stock or water))
2 tablespoons soy sauce
1 teaspoon dark soy sauce
2 tablespoons oyster sauce
½ teaspoon sesame oil
½ teaspoon salt ((or to taste))
¼ teaspoon sugar
1/8 teaspoon white pepper
3 slices ginger
2 cloves garlic ((sliced))
2 scallions ((cut into 2-inch pieces at an angle, white and green portions separated))
10 ounces mushrooms ((white button, cremini, or shiitake mushrooms, sliced))
1½ tablespoons Shaoxing wine
3 tablespoons cornstarch ((mixed with 3 tablespoons water))
1 tablespoon butter ((optional))

Steps:

  • Combine 12 ounces of sliced beef, 1 tablespoon water, 1 teaspoon cornstarch, 1 teaspoon oil, 2 teaspoons oyster sauce, and ¼ teaspoon baking soda (if using). Mix all of the ingredients into the beef. Set aside for 10 minutes.
  • Combine warmed beef stock or water with 2 tablespoons soy sauce, 1 teaspoon dark soy sauce, 2 tablespoons oyster sauce, ½ teaspoon sesame oil, ½ teaspoon salt, ¼ teaspoon sugar and 1/8 teaspoon ground white pepper. Use pure beef stock only. Many are made with celery, tomato, and carrot, which will make this stir-fry taste like beef stew! If you can't find a purer stock, use water and/or a beef bullion cube. Just remember to adjust the seasoning accordingly, as they can be salty. You can add more water and cornstarch slurry to offset this effect.
  • Heat your carbon steel wok until it's just smoking. Spread 2 tablespoons oil around the perimeter, and add the beef.
  • Use your wok spatula to spread the beef out, and sear for 30 seconds. Stir-fry the beef for another 30 seconds until it's 80% done, and transfer the beef back to the bowl.
  • Without washing the wok, turn the heat back on to medium. Add 1 tablespoon of oil to the wok, and immediately add the ginger, white portion of the scallions and garlic. Stir-fry for 15 seconds, and add the mushrooms.
  • Next spread 1½ tablespoons of Shaoxing wine around the perimeter of the wok to deglaze, and stir-fry everything for 20 seconds.
  • Add the stock and sauces to the wok, and bring to a simmer, stirring occasionally to deglaze the wok and heat the sauce. Once the mixture starts to simmer, add the beef and any juices from the bowl along with the rest of the scallions. Stir-fry everything to combine.
  • Immediately stir up your cornstarch slurry (the water and cornstarch has likely separated by now). Slowly drizzle about two thirds of the slurry into the sauce while stirring.
  • Within 10 seconds, you should see the sauce thicken. Add more cornstarch slurry if you like your sauce thicker, or add more stock or water if the sauce is too thick. (Remember your sauce will thicken slightly as it cools.) Either way, move quickly during this step so you don't overcook your beef. Turn the heat off as soon as the sauce is to your desired consistency.
  • At this point, if you like a little extra richness and the combination of soy sauce and butter, stir in a tablespoon of butter just before plating the dish!
  • To serve, spoon cooked white rice onto a plate and immediately serve your beef and mushroom stir-fry poured over the top.

2 cups White beech mushroom
1 tbsp. vegetable cooking oil
1 tsp. sesame oil
1 thumb piece of ginger ( , peeled and shredded )
4 green onions (, white part only, cut into small sections)
1/2 tbsp. oyster sauce ( , vegan for note 1)
1 tsp. dark soy sauce ( , optional only for dark color)
1/2 tbsp. light soy sauce

Steps:

  • Clean and prepare the beech mushrooms and drain.
  • Hit up some oil in wok, add green onion white to fry over slowest fire until slightly browned and seared. Add ginger shreds in.
  • Then place mushrooms in, add oyster sauce and soy sauce. At the very beginning, there will be lots of water. Continue to evaporate most of the water. Takes 2 to 3 minutes. Mix in sesame oil.
  • Transfer out and sprinkle fresh ground pepper.

300 g portobello mushrooms (wiped clean then cut into medium slices)
3 tbsp dark soy sauce
2 tbsp sweet chilli sauce
The zest of half a small lime
The juice of 1 lime about 3 tbsp
1/2 tsp rice wine vinegar
1 tsp toasted sesame oil
1 tbsp coconut oil
1/2 a medium onion (125g) (cut lengthways then sliced thinly)
1 red chilli pepper (1 level tbsp when chopped) (pith and seeds removed then finely chopped)
2 fat cloves of garlic (minced)
1 thumb size piece of ginger (20g) (peeled and finely grated)
1 red bell pepper (180g) (pith and seeds removed then sliced thinly)
280 g (or a small head) of broccoli (broken into florets)
50 g cashew nuts
175 g of noodles of your choice, we like wholewheat noodles
3 small spring onions (the white and some of the green part, finely chopped )
Sesame seeds for serving

Steps:

  • Whisk together all the marinade ingredients. Place the mushrooms in a large shallow dish then pour over the marinade, making sure to turn the mushrooms a few times so they are all coated in the marinade.Leave the mushrooms to soak up the marinade for about 10 minutes.
  • Cook the noodles according to the packet instructions.
  • In a large wok heat the oil over a medium heat. Add the onion and stir-fry for about 5 minutes. Turn up the heat then add the garlic, ginger and chilli pepper, stir-fry for about 2 minutes. Now add the pepper, broccoli and cashews and stir-fry for another 2 minutes. If the wok starts to get a little dry you may need to add a tiny bit more coconut oil here.
  • Now add the mushrooms and the marinade to the wok and stir-fry until the mushrooms are cooked about 4 or 5 minutes. Once the sauce is piping hot and the mushrooms are cooked add the noodles and toss until the noodles are covered in the sauce. Finally, add the spring onions.
  • Serve immediately and top with a sprinkling of sesame seeds and some more chopped spring onions.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or nonstick baking dish with olive oil, just enough to coat.

Mix in enoki mushrooms, green parts from green onions, garlic, and ginger, and stir-fry for 2 more minutes.
  • Move vegetables to one side of the wok. Whisk sauce ingredients to combine, then pour sauce into the wok. Stir into vegetables and cook until sauce thickens, about 1 minute. Remove from heat and serve immediately.

The exact constituents of the stir-fry can be varied according to what you like and what's available, but the trio of beans, peppers and carrots is particularly attractive. Serves 3-4 as a vegetarian main course, 6 as a side dish.

2 carrots, peeled and sliced on the diagnonal 1/4in thick
9 ounces French beans, topped and tailed, then halved crosswise
1 -2 red pepper, deseeded and cut into shreds (around 12oz)
1 tablespoon soy sauce
1 tablespoon red wine vinegar or 1 tablespoon cider vinegar
2 garlic cloves, peeled and finely chopped
2 thick slices fresh ginger, peeled and shredded
1 teaspoon sesame oil
1 tablespoon toasted sesame seeds, for garnish (optional)
vegetable oil, to coat the pan well (around 1 - 2 tbs)
fresh cilantro, for garnish (optional)

Steps:

  • Assemble the carrots, beans and peppers in separate piles on individual plates for easy use once the stir-frying starts.
  • Put the soy sauce and vinegar in one small bowl, the garlic and ginger in another, and the sesame oil in a third.
  • Toast the sesame seeds in a small frying pan till lightly browned, and mix with a little soy sauce for extra flavour if you like.
  • Heat a very large frying pan or wok over a high heat. Add enough oil to cover the bottom of the pan generously, then add the carrots and stir-fry vigorously, moving the veg non-stop, for 30 secs. Put in the beans and continue to fry for 2 minutes Now add the peppers and cook for another 2 minutes At this point you can stop stirring long enough to grind in plenty of black pepper.
  • Now add the mushrooms and the garlic and ginger. Turn the heat down a little and stir-fry until the mushrooms are cooked al dente - 1 or 2 minutes.
  • Pour in the soy and vinegar and mix thoroughly. Finally, add the sesame oil.
  • Serve immediately straight from the pan or transfer to a large bowl, and garnish with cilantro and toasted sesame seeds if you wish. Serve with egg noodles or plain boiled rice.

1 carton (900 mL) CAMPBELL'S® Ready to Use Mushroom Broth
2 tbsp 30 mL butter
1 1/2 cups 375 mL jasmine rice
1/4 cup 60 mL soy sauce
1 tbsp 15 mL sesame oil
3 tbsp 45 mL brown sugar
1 tbsp 15 mL rice vinegar
2 tbsp 30 mL cornstarch
2 tbsp 30 mL olive oil
1 cup 250 mL green beans cut into 1-inch pieces
1 package (227 g) sliced mushrooms
1 small onion, diced
1 lb 454 g ground beef
1/2 tsp 3 mL each salt and pepper
1 large red pepper cut into bite size pieces
1 tbsp 15 mL garlic, minced
1/3 cup 80 mL fresh cilantro, roughly chopped
1/4 tsp 1 mL allspice, ground
1 lime, cut into wedges

Steps:

  • In saucepan with a fitted lid, heat 1 tbsp of butter and fry rice for 1 minute to coat, add 3 cups of broth. Bring to boil and reduce heat to simmer. Cover and cook for 15 minutes, or until all the liquid has been absorbed. Fluff with fork and set side.
  • In a small bowl, whisk together the remaining broth, soy sauce, sesame oil, brown sugar, rice vinegar, and cornstarch.
  • Heat 1 tbsp oil in a large skillet over medium-high heat, cook the green beans, stirring often, until beginning to blister (3-4 minutes). Remove from pan and set aside. In the same pan add onions and sauté until translucent, add the ground beef and cook until browned, add the mushrooms, allspice, salt and pepper. Push beef mixture aside and add the red pepper to the skillet, sauté for 30 seconds, add green beans back in. Stir sauce and pour over the vegetables. Let sauce thicken for about 3 minutes, stirring often.
  • In a separate small saucepan, heat 1 tbsp of butter with 1 tbsp oil on medium-low and add garlic, once garlic is fragrant and sizzling 1-2 minutes-be careful not to burn the garlic, add cilantro and continue frying for an additional minute. Pour mixture over skillet. Serve over rice with a wedge of lime.
