2-1/2 pounds beef top round steak
1 to 2 envelopes onion soup mix
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup water
Mashed potatoes, optional

Steps:

  • Cut steak into 6 serving pieces; place in a 3-qt. slow cooker. Combine the soup mix, soup and water; pour over beef. Cover and cook on low for 7-8 hours or until meat is tender. If desired, serve with mashed potatoes., Freeze option: Place beef in freezer containers; top with gravy. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring occasionally; add water if necessary.

1 cup reduced-sodium beef broth
1 beef top sirloin steak (1-1/4 pounds)

1 garlic clove, minced
1/2 teaspoon dried rosemary, crushed
1/8 teaspoon salt
1/4 cup sherry or additional reduced-sodium beef broth
1 tablespoon butter

Steps:

  • In a large skillet over medium-high heat, cook and stir flour for 4-5 minutes or until light tan in color. Immediately transfer to a small bowl; whisk in broth until smooth. Set aside., Sprinkle beef with salt and pepper. In the same skillet, cook beef in oil over medium heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove and keep warm., In the same skillet, saute mushrooms until tender. Add the garlic, rosemary and salt; saute 1 minute longer. Stir in the sherry. Stir flour mixture; add to the pan. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in butter until melted. Serve with steak.

Do you like recipes with a short list of ingredients? Here is a quick and easy, delicious beef patty dish that fits the bill. I found this recipe in a magazine many years ago, and have made it numerous times. Please don't substitute any other soup as it will just not be the same, this one is special! Also, don't add salt - it is not needed. The original recipe called for topping the patties with canned French Fried onions, if desired. I do not usually do this, but you might like them that way.

1 1/2 lbs ground beef
1 egg, lightly beaten
1/2 cup soft breadcrumbs
1 (10 3/4 ounce) can campbell beefy mushroom soup

Steps:

  • Add the egg and bread crumbs to the ground beef and mix well.
  • Shape into 4 to 6 patties.
  • Brown both sides in ungreased skillet, over medium heat, not cooking them completely here.
  • Drain off the fat.
  • Spoon over the patties the undiluted Beefy-Mushroom soup.
  • Cover the skillet and simmer a few minutes, spooning the gravy over the patties occasionally.
  • Note: Sometimes I use only 1 lb of ground beef and make 4 patties. This is the only change I make.

A great cost alternative to an expensive cut of beef and if cooked properly using a meat thermometer this recipe will give you perfect results! The roast weight specified should give you 8-10 servings --- *important* the roast must be brought down to almost room temperature, this is a critical step that will relax the meat fibers and insure a juicy tender roast, this step should take a few hours so start this well in advance, do *not* season the roast with salt it will draw out moisture from the meat and will create an overly salty gravy --- one or two 8-ounce cans sliced drained mushrooms may be used in place for the fresh but fresh is better

1 (200 g) package fresh mushrooms, sliced
1 (3 lb) sirloin tip roast
2 tablespoons vegetable oil or 2 tablespoons olive oil
1/2-1 teaspoon garlic powder
1 teaspoon ground black pepper
1 1/2 cups water, divided
1 (1 1/4 ounce) package dry onion soup mix
3 tablespoons cornstarch

Steps:

  • Allow the roast to come down to almost room temperature before starting which will take a few hours.
  • Meanwhile sauté the fresh mushrooms in a skillet until all moisture is released; set aside (if using canned them omit this step).
  • Set oven to 350°F.
  • Loosely place a piece of heavy-duty foil in a shallow roasting pan (use a large enough piece to wrap the roast in).
  • Rub the meat all over with oil, then season with garlic powder and ground black pepper (do not season with salt).
  • Place the roast onto the the foil in the. pan.
  • Pour 1-1/4 cups water into the bottom of the foil, then sprinkle dry soup mix over the water.
  • Insert a meat thermometer into the middle of the roast.
  • Wrap the foil around the roast (leaving the thermometer sticking out of the foil for easy reading, then seal the roast up tightly with foil.
  • Cook until an meat thermometer reads 130°F for medium-rare.
  • IMPORTANT; start checking the temperature of the thermometer at about 1-1/2 hours.
  • Remove the roast to a serving platter then cover just loosely with foil.
  • Place the pan drippings into a saucepan.
  • In a small cup whisk together the cornstarch with 1/4 cup cold water.
  • Gradually whisk into the saucepan then bring to a boil whisking for 2 minutes.
  • Add in the sautéed mushrooms to the gravy.
  • Serve with the sliced roast.

I was experimenting with some beef cubes that I bought and couldn't make up my mind what to do with - this is what I came up with and both DH and I loved it! I made it with the pasta as stated in the recipe, but you could also serve with potatoes or rice. Hope you enjoy!

1 1/2-2 lbs boneless beef cubes
2 cups flour
1 tablespoon meat tenderizer
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon paprika
1 teaspoon salt
1 teaspoon pepper
1/2 cup olive oil
12 ounces mushrooms
1 1/2 cups milk
1/4 cup Worcestershire sauce
1 lb pasta

Steps:

  • Boil water for pasta.
  • In large fry pan, heat olive oil to 350 degrees - use enough oil to coat bottom of pan.
  • In large bowl, combine flour, meat tenderizer, onion powder, garlic powder, paprika, salt and pepper and mix well.
  • Toss beef cubes in flour mixture and coat well.
  • Cook pasta according to directions on package - you should cook the beef while the pasta is cooking.
  • Saute coated beef cubes until nicely brown on all sides, turning while cooking - add oil if necessary and do not overcook because cubes can become chewy.
  • Remove cubes from pan - place in a bowl and set aside and do not drain the pan.
  • Drain cooked pasta and set aside.
  • Add mushrooms to the fry pan and cook 3-5 minutes, stirring while cooking.
  • Add milk and worcestershire sauce - bring to a boil and reduce heat to simmer, stirring constantly - add water if too thick.
  • Add beef cubes and pasta to mushroom mixture and simmer for 5 minutes or until meat is heated through - do not overcook!
  • Serve with salad and biscuits or garlic bread.

1 (1 1/2 lb) beef sirloin tip or 1 (1 1/2 lb) top round beef, well-trimmed
salt and pepper
3 tablespoons oil
1 lb button mushroom, quartered
1 medium carrot, diced
1/2 medium onion, diced
3 tablespoons dry red wine
1/4 cup beef broth
2 tablespoons cold butter, cut into pieces

Steps:

  • Cut the beef into thin, 2 x 1/4-inch strips. Season with salt and pepper.
  • Heat 2 T of oil in a large, heavy skillet over med-hi heat. Add the meat and sear for approximately 1 minute on each side or until just browned. Remove from the skillet with a slotted spoon and keep warm.
  • Add the remaining 1 T oil to the skillet and heat. Add the mushrooms, carrot, and onion and sauté until the mushrooms give up their juice, about 8 minutes.
  • Return the beef to the skillet and stir in the wine and broth. Continue to sauté until the meat is just done, 1 to 2 minutes for rare. Stir in the butter until just melted. Season to taste with salt and pepper. Serve immediately.

Everything is done in the pressure cooker except what you serve it over, rice, noodles, small dumplings, grits or whatever you prefer. The ingredients and directions are broken down for you making it look like it's far more involved then what it is. It's super fast cooking and really good. Fork tender tasty dinner.

2 lbs good stir fry meat (or lean stew meat)
1 very large onion (or 2 medium onions, white or yellow)
2 tablespoons extra virgin olive oil (may need a drop more)
1 (12 ounce) pre-washed fresh mushrooms (any kind)
1 cup organic beef broth
2 large 10-minute Success rice, bags (or preference)
1 mccormick mushroom gravy mix (or make a roux)
3 tablespoons butter (for rice after cooked) (optional)
1 tablespoon crushed red pepper flakes (optional)
2 teaspoons cayenne powder (optional, to taste)
1/2 teaspoon garlic powder
1/2 teaspoon salt (to taste)
1 teaspoon black pepper (to taste)
3 tablespoons Hungarian paprika
1 teaspoon dried parsley
1 teaspoon dried basil
2 tablespoons instant minced garlic
1 bay leaf
1 teaspoon seasoning salt (optional, to taste)

Steps:

  • Prepare your onion(s). You need 1 very large or 2 medium onions diced. (this aids in making a natural gravy).
  • PREPARE Beef Strips (you shouldn't have to do much unless you see some fat trim it and if any slices are very long cut in 1/2. (if using stew meat, remove fat and cut ea. piece into bite size pieces).
  • Turn your electric pressure cooker on saute and add olive oil and heat up.
  • Once heated add your onions.
  • After 2 minutes add crushed red pepper flakes, cayenne powder, garlic powder, salt & pepper to taste and continue to saute onions, stir often. Do not burn.
  • DO NOT ADD BEEF YET.
  • On saute still, add Hungarian Paprika and stir all the time for 30 seconds. You don't want it to burn but you just want to release the flavor. NOW ADD BEEF RIGHT AWAY TO STOP THE PAPRIKA FROM COOKING FURTHER. Stir meat till coated with onion/paprika mixture.
  • Turn pressure cooker to brown and brown your meat quickly. Do not flour meat just quick brown it. If needed add a little more oil.
  • NOW ADD: Dried minced garlic, a little more garlic powder (optional), dried basil, dried parsley and bay leaf. You can add some more salt (or seasoning salt) & pepper to taste if you wish. (You will taste this at end of cooking time and adjust seasoning to taste).
  • Add the whole bag of mushrooms (or to taste), and 1 cup of beef broth. You don't want to add too much liquid (water may be substituted) (give it a good stir).
  • Close and lock pressure cooker and cook STIR FRY BEEF OR TENDER MEAT on HIGH pressure for 7 minutes and HIGH pressure for stew meat for 15 minutes.
  • Quick release, taste and make any adjustments to the flavor that are needed. If meat is tender then take out bay leaf. If not tender then cook on high again for 4-6 minutes more.
  • Put pressure cooker on brown to get a low boil or saute if it's boiling too hard. NOW add gravy mix, little at at time and keep stirring YOU SHOULD NOT NEED ANY MORE LIQUID but if you do add another 1/2 cup to 1 cup of broth or water. Cook 5 minutes and it should be perfect. (remember as it is cooling off the mixture will get a little thicker, if too thick simply add more beef broth). NOTE: You can skip the gravy mix if you prefer making a roux. You can find recipes on this site on how to.
  • * You can prepare your rice during the time your cooking the Mushroom Beef Strips w Gravy. or whatever you have chosen to put it over. Serve when done. You can add a salad and some fresh bread. Again you can serve it over pasta, dumplings, grits or anything you desire not just over rice.
