Shrimp Scampi with Artichokes is a lovely, easy spring-inspired classic Italian dish that's perfect for a spring date night dinner! You can use baby artichokes or frozen!

4 large lemons
1 package baby artichokes (usually 9-count)
Salt and freshly ground black pepper (to taste)
2 tablespoons olive oil
2 small shallots (thinly sliced)
3 cloves garlic (minced)
1/3 cup dry white wine
3/4 pound large shrimp (peeled, deveined and tail removed)
4 tablespoons softened butter (regular or light)
1/2 teaspoon crushed red pepper flakes (or to taste)
1/4 cup chopped fresh Italian parsley

Steps:

  • Fill a small mixing bowl with water. Juice the lemons and place the juice of 3 of the lemons in the water. Reserve the juice of the remaining lemon.
  • Trim the baby artichokes: Remove the tough outermost leaves until the pale green area appears about halfway up the artichoke. Cut off the stem and trim the rough edges at the base where the leaves were removed. Cut off the top of the artichoke about 3/4 of an inch down from the tip. Immediately submerge in the lemon water.
  • When finished trimming all the artichokes, cut each one into quarters and immediately place back in the acidulated water.
  • Transfer artichokes and 1 cup of the acidulated water to a skillet or sauté pan. Season with salt and black pepper. Bring to a boil, reduce heat to medium-low, cover and simmer 8-10 minutes or until artichokes are easily pierced with a knife. Drain in a colander and set aside.
  • Heat olive oil over medium-high heat in the skillet or sauté pan. Add the shallots and cook 8-10 minutes or until softened, being careful not to brown. Add the garlic and drained artichokes and cook briefly, about 30 seconds.
  • Add the white wine and the reserved lemon juice. Bring to a boil, cook 1 minute.
  • Reduce heat to low, stir in the shrimp and cook gently until the shrimp are cooked through.
  • Stir in the butter, red pepper flakes and parsley. Adjust seasoning if necessary with salt. Serve immediately.

12 ounces linguine
1 1/4 pounds large shrimp, peeled and deveined
1/3 cup extra-virgin olive oil
5 cloves garlic, minced
1/4 to 1/2 teaspoon red pepper flakes
1/3 cup dry white wine
Juice of 1/2 lemon, plus wedges for serving
4 tablespoons unsalted butter, cut into pieces
1/4 cup finely chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
  • Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.

½ cup butter
3 white mushrooms, sliced
¼ cup finely chopped onion

2 tablespoons chopped fresh parsley
1 pound large shrimp, peeled and deveined

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain.
  • Melt butter in a skillet over medium-high heat. Saute mushrooms, onion, scallions, and garlic until onions are translucent, about 5 minutes. Add wine, broth, tomatoes, and parsley. Bring sauce to a boil. Stir and reduce heat to low. Simmer, covered, for 10 minutes.

5 tablespoons Dry White Wine
6 ounces frozen Artichoke Hears, thawed (or canned)

Steps:

  • Set shrimp aside in a bowl to thaw while you prepare all of the ingredients. To speed thawing you can rinse in warm water.
  • Juice half of the lemon, reserving the other half to garnish the plate.
  • Prepare the pasta according to package instructions so it is ready when you need it.
  • Measure the butter and olive oil into a large saute or cast iron pan over medium heat.
  • When butter has melted, swirl to combine with the oil.
  • Add the shallots to the pan and saute over medium heat for 3 minutes.
  • Then, add the garlic and saute for another 1-2 minutes or until the garlic becomes fragrant and the shallots are tender and translucent.
  • Next, add the shrimp, salt, and pepper.
  • Stir to combine and cook for 3-5 minutes over medium-high heat. Add the wine and cook for another 2-3 minutes.
  • Stir the artichoke hearts sun-dried tomatoes into the shrimp mixture.
  • Cook until heated through. Stir in the lemon juice and half of the parsley.
  • Add the hot pasta to the pan, stir until evenly distributed.
  • Taste for seasonings and adjust salt and pepper if desired. Sprinkle with the remaining parsley.
  • Serve topped freshly grated Parmesan cheese and a wedge of lemon.

4 (14 ounce) cans canned quartered artichoke hearts
1 cup olive oil
3 pounds thinly sliced shallots
3 small red onions, chopped
3 cloves garlic, minced
¾ cup all-purpose flour
½ cup rice vinegar
1 gallon water
6 tablespoons vegetable base
1 ½ teaspoons salt
½ teaspoon ground black pepper
½ teaspoon ground cayenne pepper
½ teaspoon ground nutmeg
2 tablespoons dried thyme
6 dried portabella mushrooms, softened in water
3 pounds fresh mushrooms, sliced
3 pounds carrots, sliced
¾ cup capers
¾ cup chopped fresh parsley

Steps:

  • Place artichokes in a food processor, slice thinly and set aside. It works well when using a 3 millimeter slicing disk.
  • Using a extra-large stock pot saute onions, garlic and shallots in olive oil and set on low. Cook for 15 minutes.
  • Sprinkle flour over onions and cook for 1 minute. Stir in vinegar and cook for approximately 3 minutes, in order for vinegar to evaporate.
  • Stir in water, vegetable base, salt, pepper, cayenne, nutmeg, thyme and sliced artichokes and cook for 25 minutes.
  • Add dried mushrooms along with the water they soaked in, fresh mushrooms and carrots. Let cook for 15 minutes.
  • Stir in capers and parsley, season with salt and serve.
