As Halloween is coming up, make chef Lynn Crawford's famous and delicious Mummy Meatloaf! A spooky meal that the whole family will enjoy.

Number Of Ingredients 18

1 cup ( 250 mL ) panko bread crumbs
⅓ cup ( 75 mL ) milk
2 tbsp ( 30 mL ) unsalted butter
1 medium onion, finely chopped
4 garlic cloves, minced
1 celery stalk, finely chopped
1 medium carrot, finely chopped
2 tbsp ( 30 mL ) Worcestershire sauce
½ cup ( 125 mL ) ketchup
1 tbsp ( 15 mL ) dry mustard
1 tbsp ( 15 mL ) thyme, chopped
1 1/2 lb ( 0.7 kg ) ground pork
1 lb ( 0.5 kg ) ground beef
½ lb ( 0.3 kg ) ground veal
2 large eggs, lightly beaten
⅓ cup ( 75 mL ) parsley, finely chopped
½ tsp ( 2.5 mL ) each salt and pepper
6 slices bacon

Steps:

  • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Soak breadcrumbs in milk. In a large pan over medium heat, add butter and cook onion, garlic, celery and carrot until soft, about 10 minutes. Remove from heat and stir in Worcestershire, ¼ cup (60 mL) ketchup, dry mustard, thyme. Transfer to a large bowl.
  • Add pork, beef, veal, soaked breadcrumbs, eggs and parsley. Season with salt and pepper. Using hands, mix until just combined; do not overmix.
  • Transfer meatloaf mix to baking sheet and form into a long mummy shape. Brush remaining ketchup over entire shape. Drape bacon slices over to form wrapping.
  • Bake meatloaf for about 50 minutes to an hour, or until juices run clear and internal temperature reaches 160°F (70°C).

Meatloaf:
1 1/2 pounds ground beef
1 egg
1 medium onion, chopped
1 cup milk
1 cup dry breadcrumbs
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons brown sugar
2 tablespoons prepared mustard
8 ounces pappardelle pasta
1 3-ounce mozzarella ball
1 can pitted large black olives
Sauce:
3/4 cup ketchup
3/4 cup water
1/4 cup brown sugar
1/2 teaspoon prepared mustard

Steps:

  • To make the meatloaf:
  • 1. Heat the oven to 350°F. Lightly oil a 10 x 13-inch (or 10-inch round) baking dish. Combine the meat, egg, onion, milk, breadcrumbs, salt, and pepper in a large bowl. Shape the mixture into a 10-inch round dome and place it in the baking dish. Mix the 1/3 cup ketchup, 2 tablespoons brown sugar, and 2 tablespoons prepared mustard in a small bowl until blended. Spread the mixture over the meatloaf. Bake for 1 hour. Transfer the meatloaf to a wire rack and let rest for 20 minutes.
  • 2. Cook the pappardelle according to the package directions; drain and keep warm while meatloaf rests.
  • To make the sauce:
  • 1. Combine all the ingredients in a small saucepan. Cook over medium heat, stirring, until bubbly and thickened, about 3 minutes. Keep warm until ready to serve.
  • 2. Remove the meatloaf from the pan and place on a serving plate. Cut the mozzarella ball in half. Layer the pasta strands one by one over the meatloaf to look like a mummy's wrappings, adding the mozzarella and two olives for eyes as shown. Surround the meatloaf with more olives. Serve with the sauce on the side.

This meatloaf is not the same old boring version. My family loves it!!!! I serve it with mashed potatoes and peas.

2 lbs extra lean ground beef
1 egg
20 saltine crackers, crushed
1 (8 ounce) can tomato sauce
1 teaspoon mustard
1 tablespoon Worcestershire sauce
3/4 cup onion, chopped
3/4 cup bell pepper, chopped
4 slices bacon, cooked crispy and crumbled
1/4 cup barbecue sauce
2 tablespoons butter, melted
salt & pepper
2/3 cup catsup
1 (8 ounce) can tomato sauce

Steps:

  • Mix ingredients well and pour into 9 x 13 dish.
  • Top with Catsup and tomato sauce.
  • Bake at 375 degrees for 1 ½ hours.
  • Note: I pour off most of the liquid after it has cooked for about an hour.

2 (8 ounce) packages crescent rolls
2 cups mozzarella cheese, shredded
1 -2 ounce pepperoni slice

Steps:

  • Preheat oven to 375 degrees.
  • Divide and place each crescent as shown in picture, each slightly overlapping each other. Roll with a rolling pin just to blend the dough to each other.
  • Place slices of pepperoni down the center and top with the cheese.
  • Start at the bottom and bring the sides in being not perfect. Overlapping to make it look like rags. Bring the head part down and mold the figure to look like a body of a mummy.
  • Bake for 15-20 minutes.
  • Decorate as you like. I used red and orange peppers cut out to make an ankh, eyes, lips, &bats.
