CHICKEN SPAGHETTI SAUCE
I created this recipe on the fly because I didn't have my usual ingredients for spaghetti. I was so happy with how it tasted that I decided to make this my first recipe submission. This makes a very light sauce. If you prefer a heartier sauce, add 1/2 can of tomato paste or even use crushed tomatoes instead of whole, but I encourage you to try it as written; it's so yummy! Serve over al-dente spaghetti noodles. I hope you enjoy!

Steps:
- Heat olive oil in a large skillet over medium-high heat. Cook and stir chicken and onion together in the hot oil until the chicken is completely browned and the onions tender, 7 to 10 minutes. Stir garlic, basil, kosher salt, and black pepper into the chicken mixture; cook for 1 minute.
- Blend the tomatoes in a blender until smooth; pour over the chicken mixture and bring to a simmer. Cook mixture at a simmer until hot and the sauce has thickened slightly, about 10 minutes.

Steps:
- In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
- Amen.

SO-EASY SPAGHETTI SAUCE
This traditional, thick pasta sauce is a cinch to prepare. It has a pleasantly mild flavor and goes with any kind of cooked pasta. If you like, use ground turkey or chicken instead of the beef.-Cathy Johnson, Somerset, Pennsylvania

- While the pasta is cooking, add olive oil and garlic to a large pan or Dutch oven. Sauté the garlic over medium-high heat for 1 minute or until fragrant.
- Add the diced onion and zucchini. Sauté the vegetables until the onion is translucent, then add the ground chicken. Break apart the chicken continuously and sauté until chicken is cooked through. You can tell the chicken is cooked when it is no longer pink and it has broken down into small pieces. (Make sure there are no large pieces left, as the middle of these may still be undercooked.)
- Sprinkle seasonings over the pan and add the entire can of diced tomatoes, with the juices. Bring to a boil and allow the pot to simmer until you are ready to serve.
