I found this recipe in the Pillsbury's Cookie Book. They're great! If you're looking for a cookie this cookie is huge and is just about a meal in itself.

Number Of Ingredients 11

2 large eggs
1 cup sugar
1 cup brown sugar
1 cup butter
1 cup peanut butter
2 teaspoons vanilla
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
20 Snickers miniature candy bars, unwrapped

Steps:

  • In large bowl, combine sugars, butter, peanut butter, vanilla and eggs.
  • Beat well.
  • Add flour, baking soda, baking powder and salt.
  • Mix well.
  • Shape about 1/4 cup of dough smoothly around candy bar making sure bar is completely covered.
  • Place 4 inches apart on ungreased cookie sheet.
  • Bake at 375°F for 13-14 minutes or until light golden brown and puffy.
  • Cool 10 minutes and remove from cookie sheets.
  • Makes 20 HUGE cookies.

This recipe is from the book Blueberry Muffin Murder by Joanne Fluke. I am posting it for safe keeping. Seems to me you can't go wrong with this recipe nor tire of it as you can make hundreds of combinations. You could even combine items listed in each catagory. It does not specify but I am guessing that you bake these in a 9"x11" pan sprayed with non-stick spray or lined with non-stick foil. Servings and yield is a guesstimate as it is not listed.

1/2 cup butter, melted
1 (14 ounce) can sweetened condensed milk
graham cracker crumbs
vanilla wafer crumbs
chocolate wafer crumbs
animal cracker crumb
sugar cookie crumbs
semi-sweet chocolate chips
butterscotch chips
peanut butter chips
raisins (regular or golden)
m&m's plain chocolate candy
flaked coconut
Rice Krispies
miniature marshmallow (can add 2 1/2 cups of these)
frosted flakes, cumbled
walnuts, chopped
pecans, chopped
peanuts, chopped
cashews, chopped

Steps:

  • Preheat oven to 350 degrees with rack in the middle position.
  • Evenly sprinkle item chosen from list A over the melted butter.
  • Drizzle sweetened condensed milk over the crumbs.
  • Evenly sprinkle item chosen from list B on top.
  • Evenly sprinkle item chosen from list C on top of that.
  • Evenly sprinkle item chosen from list D over the very top.
  • Press everything down with the palms of your hands. Bake at 350 degrees for 30 minutes. Cool thoroughly on a wire rack and cut into brownie sized bars.

I'm copying the recipe here so I can try the cookies someday. If you try the recipe before I get a chance, please leave a review to let me know if they are good. ps. the book was fun to read. (one more note: I guessed at the number of servings, not quite sure how many cookies this recipe makes.

Number Of Ingredients 10

1 cup butter
1 cup white sugar
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons vanilla
2 eggs, beaten (you can beat them with a fork)
2 1/2 cups flour (do not sift)
2 cups crushed corn flakes (just crush them with your hands)
1 cup chocolate chips (you can use up to 2 cups choc. chips if desired)

Steps:

  • Melt butter,
  • add the sugars and stir.
  • Add soda, salt, vanilla, and beaten eggs.
  • Preheat oven to 375 degrees F (rack in middle position).
  • Grease cookie sheet.
  • Mix well.
  • Add flour and stir it inches.
  • Add crushed corn flakes & chocolate chips.
  • Mix it all thoroughly.
  • Form dough into walnut-sized balls with your fingers.
  • Place on a greased cookie sheet (12 to a standard sheet).
  • Press balls down with a floured or greased fork - in a criss-crossed pattern.
  • Bake at 375 degrees for 10 minutes.
  • Cool on cookie sheet for 2 minutes then.
  • remove to a wire rack until completely cool. (This is important-the rack makes them crisp.).

Number Of Ingredients 8

1 (16 ounce) box keebler Club crackers
1/2 cup margarine
1/3 cup milk
1/2 cup sugar
3/4 cup brown sugar
1 cup crushed graham cracker
1 cup chocolate chips
3/4 cup crunchy peanut butter

Steps:

  • Line a 9 x 13 inch pan with Keebler Club Crackers.
  • Combine in saucepan margarine, milk and sugar. Boil about 5 minutes.
  • Add 1 cup crushed graham crackers to mixture. Stir.
  • Pour on top of Club crackers. Lay another layer of Club crackers on top of sugar mixture. Melt chocolate chips and crunchy peanut buttr together in double boiler or microwave, stirring often. Pour over top. Refrigerate.
