ITALIAN HERB TOMATO BREAD
An easy savory quick bread combining fresh tomatoes, Italian herbs, garlic, and cheese. Bake up some summer right in your kitchen with this tomato bread.

- Preheat oven to 350 °F. Grease an 8.5 x 4.5-inch loaf pan.
- In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. Stir in the egg, oil, and milk, followed by the grated cheese. The batter will be very thick.
- Combine the chopped garlic, tomatoes, basil, and oregano in a food processor. Using a series of 10-15 one-second pulses, chop the tomatoes and garlic until no large pieces remain, but mixture is not completely smooth.
- Fold the tomato and garlic mixture into the batter. Resulting batter will still be thick, but should be fully moist. If dry patches of flour remain, stir in an additional 2-3 tablespoons of milk. If batter is quite wet, stir in an additional 2-3 tablespoons of flour.
- Pour (scoop) the batter into the prepared loaf pan. Bake 45-50 minutes, until a tester inserted into the center of the bread comes out clean.
- Cool in pan for 10 minutes, then turn out onto a wire rack to continue cooling. Enjoy while still warm.

- Preheat oven to 400°. In a small skillet, heat butter over medium heat. Add onion and cook until tender. Remove from the heat. Stir in the cheese, sour cream, mayonnaise and seasonings; set aside. , In a bowl, combine the baking mix and milk to form a soft dough. Turn dough onto a well-floured surface; knead lightly 10-12 times. Pat into a greased 13x9-in. baking dish, pushing dough up sides of dish to form a shallow rim. Arrange tomato slices over top. - Preheat the broiler. Place the bread on a baking sheet and broil until lightly golden on both sides.
- Whisk 2 tablespoons olive oil with the garlic and basil in a small bowl; brush evenly on the toasted bread. - Butter both sides of french bread slices, and sprinkle lightly with garlic salt.
- Arrange bread slices on an ungreased cookie sheet.
- Spoon about 1 tablespoon of pizza sauce on each slice, and spread to cover.
- Put a thin slice of tomato over top the sauce.
- Then put a slice of mozzarella cheese on top of the tomato.
- Sprinkle generously with parmesan cheese.
- Lightly sprinkle with oregano and parsley.
- Bake at 350 until cheese is melted, and bread is slightly toasted.
- Serve Warm.

This bread is wonderful made with garden fresh tomatoes, it's perfect for a barbecue! I used the Philadelphia brand soft cream cheese in the small tub for this. Use only firm plum tomatoes for this.

- Microwave the the cream cheese in a medium microwave-safe bowl on HIGH for 20 seconds; Add in the Parmesan cheese, garlic and basil; mix well to combine, then season with salt and pepper to taste.
- Slice the bread in half lengthwise.
- Evenly divide and spread the mixture over the cut sides of the bread.
- Top with the sliced tomatoes, then sprinkle a small amount of salt over the tomato slices.

Of all the different appetizers I've made over the years, this one is always the first to go and it is SUPER easy to make. You can use either sweet or sour dough bread, both are tasty! I will usually assemble the Cheesy Breads the morning of the party on cookie sheets and cover with plastic wrap and keep in the fridge. When everyone has arrived at the party I just pop them in the oven and serve them piping hot! If you don't want the bread to be crunchy, broil them instead of baking them. I've tried them both ways and crunchy is better!

- Preheat oven to 350 degrees F (175 degrees C).

- Heat oven to 200C/180C fan/gas 6. Make up the bread mix following pack instructions, then roll out to a 30 x 40cm rectangle. Spread over 75g of the garlic butter and half the oregano, then sprinkle the cheese and roll up like a Swiss roll.
- Cut into 8 even slices and transfer to a well-greased round 23cm tin and arrange 7 round the outside, 1 in the middle. Brush with any leftover butter. Cover with oiled cling film and leave in a warm place to puff up while you make the soup. Once doubled in size, bake bread for 25-30 mins.
- Heat the remaining garlic butter in a pan until foaming. Add the onion and carrot, and cook until softened. Pour in the tomatoes, crumble over the stock cube, add the remaining oregano and simmer for about 20 mins, then stir in the crème fraîche. Blend and season - it may need a pinch of sugar if it tastes slightly acidic. Add enough boiling water for a good soup consistency and keep on a gentle heat until the bread is done.

- Cut 2 tablespoons butter unto 1/4-inch dice. Place on a piece of waxed paper and place in the freezer.
- In a large bowl, combine flour, sugar, salt, and yeast. Heat soft butter and tomatoes to 125 degrees. Add to the dry ingredients with the egg, Parmesan cheese, and parsley. Beat vigorously for 2 minutes.
- Turn dough into a well-greased, 8-inch round pan. Cover with a tightly woven towel and let rise for 1 hour. About 10 minutes before baking, preheat oven to 375 degrees. Just before baking, remove the diced butter from the freezer and sprinkle on the top of the dough. Bake for 20 minutes, or until the internal temperature of the bread reaches 190 degrees. Serve immediately.
