PWWB ALL-PURPOSE GRILLING MARINADE
Equal parts zesty, sweet & spicy, this All-Purpose Marinade recipe hits all of the right notes! Pantry spices like chili powder & smoked paprika add just the right amount of kick to this homemade marinade, while brown sugar lends the perfect amount of sweetness, creating an absolutely crave-worthy caramelized crust on whatever you're grilling. Steps:
- Add the olive oil, brown sugar, soy sauce, Worcestershire sauce, apple cider vinegar, chili powder, paprika, & a pinch of cayenne pepper, if using, to a bowl or jar. Season with 2 teaspoons kosher salt & ground black pepper as desired. Whisk or shake to combine.
- Pour the all-purpose marinade over your meat or veggies of choice. Marinate for at least 6 hours or up to overnight.

EASY GRILL MARINADE
This is an all-purpose marinade used at The Black Dog Restaurant in Martha's Vineyard. I love it on chicken but you could also use it over meat, vegetables or fish. If using it on white fish, omit the red wine vinegar. It's great for grilling.

- Cover and put in the refrigerator. The longer you marinate, the deeper the flavors. I usually marinate overnight.

MULTI PURPOSE BBQ MARINADE
I needed to knock together a marinade for two salmon fillets. If you have no bourbon then any whiskey (not scotch) will do.

EASY BBQ CHICKEN MARINADE
Came up with this one on the fly. This quantity of ingredients will be sufficient marinade for 4 drumsticks. I like to use zipper-seal bags for marinating because the air can be removed so that the meat is surrounded by marinade, which means I can throw it into the fridge and forget about it until cooking time. I get a nice, even marinade on every piece without any extra fuss. Plus, it is one less dish to wash after.

- Mix all ingredients together in a small bowl.
- Put chicken pieces into a large zipper-seal bag.
- Pour marinade into bag.
- Seal bag, making sure to remove most of the air so that the chicken has lots of contact with the marinade.
- Refrigerate for 1 hour or more before grilling.
MULTI PURPOSE MARINADE OR BASTING SAUCE
This is just something I came up with while wanting something different for grilled salmon. Hope you like it too! You can double it or cut it in half, it can be tweaked to suit your taste. Great on chicken too.

Steps:
- Put all ingredients into a pan or bowl and simmer on the stove or in the microwave just until warm enough to melt the preserves. Mix well and pour over fish fillets or chicken and marinate in a zip top bag for several hour or over nite in the fridge. I generally save some back to baste with while cooking. If you do not have time to marinate, you can just use it as a basting sauce as I sometimes do.

ALL PURPOSE HAWAIIAN MARINADE
I originally concocted this recipe for a party I hostessed. I used it on chicken thighs and legs, but since then, I've tried it beef and pork, as well. I also think it would be awesome on tuna steaks or shrimp! I've also used Pineapple Coconut Juice and it's EXCELLENT. Enough for 3 lbs meat of choice.

- In a large bowl, mix all ingredients together. Allow meat to marinate in zip top baggies for 12 to 48 hours.
- Remove meat from bags and pour marinade into sauce pan. Bring to boil over medium high heat and for 10 minutes.
- Baste meat with marinade in between flips on the grill.
