2 tablespoons olive oil
1 onion, chopped
1 green bell pepper, chopped
1 large carrots, chopped
1 (14.5 ounce) can chicken broth
1 (15 ounce) can tomato sauce
¼ cup packed brown sugar
¼ cup distilled white vinegar
1 (8 ounce) can crushed pineapple with juice
¼ cup ketchup
1 slice white bread
2 tablespoons milk
¾ pound ground chicken
½ zucchini, shredded
1 egg, beaten
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
2 cups instant rice

Steps:

  • Heat oil in a large skillet. Add onion, green pepper, and carrot. Cook for 5 minutes, until onion is softened. Stir in broth, tomato sauce, brown sugar, white vinegar, pineapple with juice, and ketchup. Simmer for 10 minutes, or until vegetables are tender.
  • Meanwhile, soak bread in milk in a large bowl until milk is absorbed. Mix together with ground chicken, shredded zucchini, egg, salt, black pepper, and garlic powder. Shape into 12 meatballs, about 2 tablespoons each.
  • Drop meatballs into simmering sauce. Cook 15 minutes, or until cooked through, turn over once during cooking.
  • Remove skillet from heat. Stir in rice. Cover, and let stand 5 minutes. Fluff rice with fork before serving.

Don't bother ordering Chinese chicken balls make these at home they are just as good if not even better and the sweet and sour sauce is the same as what is served at your Chinese restaurant!-- these are a great weekend snack or can be served as appetizers, if you want some extra flavor to you chicken batter feel free to add in some garlic or onion powder or spices of choice --- this makes a large amount so you may want to reduce the chicken ball batter amount by half (using 4 chicken breasts) --- NOTE: the sauce recipe is one you may have to make a few times before you get the consistancy and sweetness to your liking, 1 cup white sugar and 1/2 cup lightly packed brown will give you a sweet sauce you may reduce the white sugar amount by a few tablespoons

1 cup all-purpose flour
1 cup cornstarch
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon garlic powder (garlic lovers add 1 teaspoon)
2 teaspoons sugar
1 1/3 cups cold water (if you are reducing to half a recipe use 1/2 cup plus 2-1/2 tablespoons water)
1 -2 teaspoon sesame oil (optional but good to add)

Steps:

  • To make the sweet and sour sauce sauce; in a saucepan combine the first 5 ingredients until combined.

  • Add in chicken pieces; using clean handsand mix until well coated.
  • Heat oil in a deep-fryer or Dutch oven to 375 degrees.
  • Carefully dip the battered chicken pieces in hot oil and fry until golden brown (about 3-4 minutes).
  • Remove to a paper towel.
  • Sprinkle with seasoning salt immediately after frying if desired.
  • Serve immediately with sweet and sour sauce.

  • Heat the oil in the pan on medium-high heat.
  • Prepare the chicken. Cut 8 two-inch strips (or more if you prefer). Season the meat with about 1/2 tsp salt and sprinkle of white pepper. Then using 1 tbsp of the self-raising flour coat the chicken strips with the flour.
  • Prepare the batter. Add the self-raising flour and the salt together. Mix 100g of cold water into the flour. Let the mixture rest for 5-10 minutes as it will rise a little and become a smoother batter. Add 1/2 teaspoon of vegetable oil into the mix to make it shiny.
  • To make the sweet and sour sauce: In a saucepan pour the vinegar and add the granulated sugar in, heat these up on a low heat until the sugar dissolves.
  • Add the ketchup, tomato puree and Worcester sauce and mix. Put this to one side as the sauce is now complete and ready.
  • Now bring your chicken and your batter to your stove where your oil is heated up. Turn it down to low heat. One chicken strip at a time, place a chicken strip into the batter and coat it. Then put it in to the oil. Repeat this step for the other strips.
  • Fry the balls for about 4 minutes until the batter is golden. If the balls are not floating after 4 minutes, leave it for an extra 1-2 minutes. Tip: If you find your batter browning too fast then add more oil to cool it down. Tip: when the balls float it generally means that the chicken is cooked. Use a slotted spoon to take the balls out.

Steps:

  • Combine all the ingredients to make the Chicken Meatballs in a bowl. Make small balls with by rolling Balls between your Palms of about 1-inch size. Heat Olive Oil in a skillet. 4 chicken breasts
280ml cold water
2 tsp baking powder (or baking soda)
200g self-raising flour
Pinch of salt
Vegetable oil (to fry with)
150ml Pineapple juice (I took this from a tin of pineapple slices)
50g Light brown sugar
50ml Rice Vinegar
1 tbsp Worcestershire Sauce
3 tbsp Tomato Ketchup
2 tbsp soy sauce
1 tsp cornflour
1 tbsp water

Steps:

  • Heat the oil in a wok or deep fryer, until it is shimmering.
  • In the meantime cut the chicken into bite-sized pieces, keeping them as symmetrical as possible.
  • Whisk together the flour, water, baking powder and salt in a bowl to give a nice thick batter.
  • Coat the chicken pieces in the batter, and carefully place them in the hot oil (careful not to splash boiling oil - I do this with some tongs). In a deep fryer, place them in the basket. You may need to do this in batches. Make sure they do not touch in the oil or they will stick together.
  • Cook in the wok for about 5 minutes, turning once, until the batter is browned on all sides and the chicken is cooked. Remove from the oil with a slotted spoon and place on some kitchen paper.
  • Check one to make sure the chicken is properly cooked, to verify the cooking time (which will vary with oil temperature), before serving.
  • Put the pineapple juice, sugar and rice vinegar in a saucepan and bring to a simmer on a low heat until the sugar has melted.
  • Then add the ketchup, soy sauce, and Worcester sauce and simmer for about 5 minutes.
  • Meanwhile, mix the cornflour with the water with a teaspoon. After the 5 minutes add this to the saucepan. Stir until the sauce has thickened and is ready to serve.

2 eggs
160ml semi-skimmed milk
1 tbsp groundnut oil, plus extra for deep-frying
4 chicken breasts cut into 3cm cubes
240ml orange juice
3 tbsp caster sugar
1 tbsp tomato purée
1 tbsp tomato ketchup
3 tbsp white wine vinegar
3 tbsp cornflour, mixed with 6 tbsp water

Steps:

  • First, make the sauce. Put the orange juice, sugar, tomato purée, ketchup and vinegar in a large saucepan over a medium heat. Bring to the boil, then reduce the heat and simmer for 5 mins. Slowly pour in the cornflour mixture, a little at a time, stirring continuously until you have the desired consistency. Remove from the heat and set aside.

Steps:

  • Dice your chicken breast into chunks or strips and place in a mixing bowl.

500 g Chicken breast (About 18 oz ( Boneless skinless chicken breast ) Cut in 1" cubes.)
½ cup Corn starch
Vegetable oil for deep frying (Or canola, sunflower, grapeseed oil, or any neutral flavour oil)
2 tsp Sugar
1 tsp Salt
¼ tsp White pepper
1 tsp Sesame oil
1 tbsp Garlic paste (( Finely grated garlic ) Or 1tsp garlic powder)
½ tsp Baking Soda
1 tsp Cornstarch
1 cup Plain flour (Or all purpose flour)
½ cup Cornstarch (Or potato starch)
1 tsp Baking soda (Or Bicarbonate of soda)
½ tsp Salt
1 cup Water (Add more water if needed )
4 tbsp Ketchup
1 tbsp Tomato Puree (Or tomato concentrate)
4 tbsp White vinegar
3 tbsp Sugar
½ cup Water
1 tsp Cornstarch
½ tsp Salt

Steps:

  • Cut the chicken breast into 1" dices. Place them in a large mixing bowl and add all the seasoning ingredients, salt, sugar, white pepper, sesame oil, garlic paste, corn starch, and baking soda. Mix well, set aside, and marinate for 15-30 minutes. ( If you have more time you can leave it for 1 hour. )
  • In a small saucepan, combine all the sweet and sour sauce ingredients, ketchup, vinegar, sugar, tomato puree, water, corn starch and salt. Mix well until corn starch dissolved, then turn on the heat to low-medium. Stir continuously until the sauce is thicken to desire consistency. Turn off the heat and let it cool down.
  • Combine plain flour, corn starch, baking soda, and salt in a large bowl. Pour the cold water in, whisk well and make it into smooth batter. ( The batter should be medium thick. Add more water if needed. )
  • Add ½ cup of corn starch in the chicken marinade, coat each chicken piece with the corn starch. Then dip into the batter and turn to coat evenly.
  • Fry the battered chicken pieces with pre-heated high heat oil for 2-3 minutes until light brown. ( about 350° F/ 180° C ) Remove from oil and set aside for 4-5 minutes. Repeat the process to remaining chicken pieces.
  • Then reheat the oil back to 350° F/ 180° C , fry the chicken 2nd time for 2-3 minutes until crispy golden brown. Remove from oil and transfer to cooling rack or paper towel.
