The name Mulligatawny means 'pepper water', and curry is the particular ingredient that gives this incredible soup such a delicious flavor...so I'm told. This old recipe was given to me long ago.

½ cup chopped onion
2 stalks celery, chopped
1 carrot, diced
¼ cup butter
1 ½ tablespoons all-purpose flour
1 ½ teaspoons curry powder
4 cups chicken broth
½ apple, cored and chopped
¼ cup white rice
1 skinless, boneless chicken breast half - cut into cubes
salt to taste
ground black pepper to taste
1 pinch dried thyme
½ cup heavy cream, heated

Steps:

  • Saute onions, celery, carrot, and butter in a large soup pot. Add flour and curry, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.
  • Add apple, rice, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.
  • When serving, add hot cream.

1 medium tart apple, peeled and diced
1/4 cup each chopped carrot, celery and onion
1/4 cup butter, cubed
1/3 cup all-purpose flour
1 teaspoon curry powder
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground mace
6 cups chicken or turkey broth
1 cup cubed cooked chicken or turkey
1 medium tomato, peeled, seeded and chopped
1/2 cup chopped green pepper
2 whole cloves
1 tablespoon minced fresh parsley
1 cup cooked rice

Steps:

  • In a Dutch oven, saute the apple, carrot, celery and onion in butter for 5 minutes or until tender. Stir in the flour, curry, sugar, salt, pepper and mace until blended. Gradually add broth. , Bring to a boil. Cook and stir for 2 minutes or until thickened. Add the chicken, tomato, green pepper, cloves and parsley; return to a boil. Reduce heat; cover and simmer for 20-30 minutes. Add rice; heat through. Discard cloves.

1 garlic clove, minced
1/4 teaspoon cumin seed, ground
6 whole cloves, finely crushed
1 tablespoon curry powder (or to taste)
1/4 teaspoon ginger, ground
cayenne pepper
1/4 cup unsalted butter (1/2 stick)
1 (4 -4 1/4 lb) roasting chickens, cut into serving pieces
chicken giblets, coarsely chopped
3 stalks celery, with leaves, thinly sliced
2 large onions, chopped
2 carrots, diced
1 leek, thinly sliced (white part only)
11 cups chicken stock, defatted (preferably homemade, 2 quarts plus 3 cups)
salt & pepper, freshly ground
2/3 cup long grain rice
2 medium apples, peeled, cored and diced (tart)
1 cup plain yogurt
2 tablespoons fresh lemon juice (or to taste)
2/3 cup whipping cream, warmed
chopped fresh parsley, to garnish
lightly toasted sliced almonds, to garnish

Steps:

  • Combine garlic and spices.
  • Melt butter in large skillet over medium-high heat. Add chicken and saute until lightly browned on all sides.
  • Add giblets and saute until cooked through.
  • Transfer chicken and giblets to stockpot. Drain all but 1 tablespoon fat from skillet. Add celery, onion, carrot, leek and spice mixture and blend well.
  • Add a small ladle of stock and cook over low heat, stirring constantly, until vegetables are tender.
  • Add to chicken.
  • Stir in remaining stock and season with salt and pepper.
  • Cover and simmer 30 minutes.
  • Remove chicken with slotted spoon and set aside. Add rice to soup and continue cooking 15 minutes.
  • When chicken is cool enough to handle, cut meat into bite-size pieces, discarding skin and bones.
  • Return chicken to soup and blend in apples and yogurt. Simmer 10 minutes.
  • Degrease soup if necessary.
  • Stir in lemon juice, then blend in cream.
  • Taste and adjust seasoning.
  • Pour into heated tureen and sprinkle with parsley and almonds.

1 tablespoon ghee (clarified butter), or vegetable oil
1 onion, chopped
4 cloves garlic, minced
2 teaspoons grated fresh ginger
2 green chile peppers, chopped
¼ teaspoon ground cinnamon
¼ teaspoon ground cloves
2 teaspoons ground coriander seed
1 ½ teaspoons ground cumin
1 teaspoon ground turmeric
4 pods cardamom, bruised
1 tablespoon chopped fresh curry
1 carrot, chopped
1 apple - peeled, cored, and chopped
1 large potato, peeled and diced
1 cup Masoor dhal (red lentils), rinsed, drained
8 cups chicken broth
1 tablespoon tamarind concentrate
1 tablespoon lemon juice
2 cups coconut milk
2 tablespoons chopped fresh cilantro

Steps:

  • Heat ghee or vegetable oil in large pan (use low heat); cook onion, garlic, ginger, chilies, spices and curry leaves, stirring, until onion is browned lightly and mixture is fragrant. Do not over brown the onion or else it will give the soup a burnt taste.
  • Add carrot, apple, potato, dhal, and chicken stock to pan; simmer, covered, for about 15 minutes or until vegetables are just tender. Discard cardamom pods and curry leaves.
  • Blend or process soup mixture, in batches, until pureed; return to pan. Add tamarind, lemon juice, coconut milk and fresh coriander leaves; stir until heated through.

1 teaspoon ginger, crushed
1 teaspoon garlic, crushed
1 large onion, sliced
2 tablespoons besan flour (gram flour)
1 green apple, peeled and diced

2 medium tomatoes
1 bay leaf
1 teaspoon fresh coarse ground black pepper
3 cups chicken stock

Steps:

  • Heat the oil and add the ginger and garlic. Saute for 2 minutes, then add the onion and saute until onion is transparent.
  • Add the gram flour, apple, curry powder, turmeric, tomatoes, bay leaf, pepper and chicken stock.
  • Bring to a boil, cover and reduce heat. Simmer for 45 minutes, then process in a blender.
  • Add the rice if using and chicken.
  • Stir well and serve with lemon wedges.

4 tablespoons unsalted butter
1 large Spanish onion, chopped
6 cloves garlic, finely chopped
3 tablespoons finely chopped peeled, fresh ginger
1/2 jalapeno, stemmed, seeded, and chopped
1 tablespoon ground coriander
2 teaspoons ground cumin
1 1/2 teaspoons ground turmeric
1/4 cup all-purpose flour
1 3/4 cups red or pink lentils
9 cups chicken broth, homemade or low-sodium canned
3 tablespoons minced fresh coriander (cilantro) leaves, plus 12 sprigs
1 cup unsweetened canned coconut milk
1/4 cup freshly squeezed lemon juice, plus lemon wedges for garnish
2 teaspoons kosher salt
Freshly ground pepper

Steps:

  • Heat the butter in a large pot over medium-high heat. Add the onion, garlic, ginger, and jalapeno and cook, stirring, until browned, about 12 minutes. Lower the heat to medium, stir in the coriander, cumin, and turmeric, cook until fragrant, stirring, for 45 seconds. Stir in the flour and cook for 1 minute more.
  • Pour in the broth and bring to a boil while whisking constantly. Add the lentils to the thickened broth, lower the heat, and simmer, covered, until very tender, about 45 minutes. Remove from the heat and allow to cool.
  • When the lentil mixture has cooled, stir in the cilantro. Working in batches, transfer the mixture to a blender and puree until smooth, or puree with an immersion blender. Return the puree to the pot and reheat over medium heat.
  • Whisk the coconut milk, lemon juice, salt, and season with pepper to taste. Divide among warm soup bowls and garnish with the coriander sprigs. Serve immediately with the lemon wedges.
  • Cook's Note: If making the soup in advance, adjust it's consistency when re-heating with water or broth, since it has a tendency to thicken as it sits.

Steps:

  • In a large stockpot, over medium, add the onions, carrots, celery stalks and butter. Cook until tender, but do not burn them. Stir in the flour and curry and cook for 3 minutes. Pour in 8 cups of chicken stock and let simmer for 30 minutes. Then add in the remaining ingredients, except the hot cream. Let simmer for 15 minutes and then add in 1 cup hot cream. Ladle into serving bowls and serve.

4 ounces onions, chopped
1/2 garlic clove, chopped
2 ounces butter
2 ounces flour
1 tablespoon curry powder
1 tablespoon tomato puree
1 liter beef stock, stock cube is fine
1 ounce apple, chopped
1/4 ounce ground ginger
1 tablespoon mango chutney
1 ounce desiccated coconut
salt
1/2 ounce cooked rice

Steps:

  • Lightly brown the onion and garlic in the butter (you may use oil if you wish, but not olive oil).
  • Mix in the flour and curry powder; cook for a few minutes, browning slightly.
  • Mix in the tomato puree. Cool slightly.
  • Gradually mix in the stock until smooth. Stir to the boil.
  • Add the remaining ingredients except for the rice. Season to your taste and simmer for 30-45 minutes.
  • Liquidise soup to your preferred consistency.
  • Add rice to serving bowl and pour hot soup over the top.

20g butter
2 tbsp olive oil
1 onion, finely chopped
2 celery sticks, chopped
3 carrots, peeled and chopped
1 parsnip, peeled and chopped
2 garlic cloves, chopped
1 thumb-sized piece ginger, peeled and grated
1 eating apple, cored and chopped
1½-2 tbsp medium curry powder
1 tsp ground cumin
¼ tsp sweet smoked paprika
1.2l hot chicken stock
1 tbsp tomato purée
100g basmati rice
1 tbsp mango chutney
½ lemon, juiced
½ small bunch of coriander, shredded
yogurt, to serve

Steps:

  • Heat the butter and olive oil in a casserole dish and fry the onion and celery with a pinch of salt for 10-12 mins, or until softened and translucent. Stir in the carrots, parsnip, garlic, ginger and apple and cook for 1 min more. Stir through the curry powder, cumin and paprika. Add the stock and tomato purée and season to taste. Reduce to a low simmer, cover and cook for 40 mins.
  • Rinse the rice and cook for 10 mins in boiling water. Blitz the soup until smooth with a blender. Drain the rice and stir through the soup with the mango chutney, lemon juice and half the coriander. Check for seasoning, then ladle into bowls and top with the remaining coriander and yogurt.

There are about a million varieties, but I prefer the smoother, soupier versions than the more rustic, chunkier stews. Garnish with peanuts and cilantro and drizzle with heavy cream.

3 (5 ounce) skinless, boneless chicken breast halves
2 teaspoons chili powder
2 teaspoons salt, divided
3 tablespoons coconut oil
4 medium carrots, diced
1 medium Granny Smith apple - peeled, cored, and sliced
1 medium onion, diced
2 stalks celery, diced
3 tablespoons minced garlic
2 tablespoons minced fresh ginger
4 cups chicken stock, or more as needed
1 ½ cups coconut milk
½ cup dry red lentils
1 tablespoon red curry powder
1 tablespoon hot (Madras) curry powder
1 tablespoon ground cumin
1 tablespoon chopped fresh thyme
1 tablespoon hot English mustard
1 teaspoon ground cinnamon
1 teaspoon dried oregano
1 teaspoon ground coriander
½ teaspoon ground turmeric
½ teaspoon ground nutmeg
½ teaspoon cayenne pepper
1 bay leaf
4 tablespoons tomato paste

Steps:

  • Rub chicken breasts with chili powder and 1 teaspoon salt. Place in a baking dish and let rest for 1 hour.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake chicken in the preheated oven until no longer pink in the centers and juices run clear, about 15 minutes. Remove from the oven and coarsely shred with 2 forks; set aside.
  • Pour coconut oil into a large pot and heat over medium heat. Add carrots, apple, onion, and celery. Cook for 5 to 6 minutes, then add in garlic and ginger. Cook 1 minute more.
  • Pour in 4 cups chicken stock, coconut milk, lentils, both curry powders, cumin, thyme, mustard, cinnamon, oregano, coriander, turmeric, nutmeg, cayenne, and bay leaf. Bring to a simmer. Reduce heat to medium-low and cook for 30 minutes.
  • Fish out and discard the bay leaf. Use an immersion blender to blend into a smooth sauce. Add tomato paste and chicken; cook for another 20 minutes. If it appears too thick, add a little more stock, but the soup is pretty thick. Season with remaining 1 teaspoon salt.
  • Spoon cooked rice into bowls and ladle soup over top to serve.

This was my favourite soup from the Bell Canada cafeteria; many years later, I found the recipe in a Soup & Starter cookbook! Its a good way to use up leftover roast beef (or lamb). If I don't have dripping on hand, I broil some bacon, use the bacon fat & eat the bacon!!

1 large onion, chopped
2 carrots, chopped
1 apple, peeled, cored & chopped
1/4 cup dripping
2 tablespoons flour
2 -4 teaspoons curry powder
5 cups beef stock
1 (14 ounce) can tomatoes, chopped
salt and pepper
1 cup leftover cooked beef, minced
1/3 cup cooked rice

Steps:

  • Fry vegetables & apple in drippings until soft & beginning to lose colour.
  • Stir in flour & curry and cook for 1 minute.
  • Add stock, tomatoes & seasoning.
  • Bring to a boil, then lower heat, cover & simmer for about 1 1/2 hours, stirring occasionally.
  • Sieve or liquidize the soup & return to pot.
  • Add minced beef & rice.
  • Bring back to the boil for 2- 3 minutes, check the seasoning & serve.

1 lb chicken breast, cut into bite size pieces
4 carrots, diced
2 onions, diced
4 stalks celery, diced
2 apples, diced
2 tablespoons oil

1 pinch cayenne

1 cup light cream
1/4 cup cilantro, chopped

Steps:

  • Place the flour in a bag and add chicken, shake to coat. Reserve flour. In large pan heat oil and brown the chicken and set aside.
  • Add carrots, onions, celery and apples to pan and cook until soft, add curry powder and cayenne. Sprinkler with reserved flour., stirring for 2 minutes. Gradually stir in chicken stock, return chicken to pot and bring to a boil, reduce heat and simmer 1 hour.
  • Stir in cram and season with salt and pepper to taste. Heating gently over low heat. Do not boil.
  • Spoon over rice and garnish with cilantro.

Mulligatawny - which means pepper water - is the name given to the classic East Indian soup that is a meal in intself. Although it starts with a basic chicken soup, its unique flavor comes from a mix of pungent spices. The traditional accompaniment is a bowl of rice pilaf. Most of the preparation is done the day before serving, with the finishing touches done on the day of serving. However, I did not calculate the overnight refrigeration in the time estimates.

1 roasting chicken, cut up (4- to 5-lb.)
1/3 cup unsifted all-purpose flour
2 medium onions, peeled
4 carrots (3/4 lb.)
2 stalks celery
2 tart apples
1/3 cup butter
1 1/2 tablespoons curry powder
4 teaspoons salt
3/4 teaspoon mace
1/4 teaspoon chili powder
1 dash cayenne
3/4 cup grated fesh coconut
1 bay leaf, crumbled
2 (14 1/2 ounce) cans chicken broth
1 cup apple juice
1 cup light cream
1 cup cooked white rice
1/2 cup seedless raisin
1/4 cup slivered almonds
1/4 teaspoon cinnamon
1 dash mace

Steps:

  • Wash chicken; dry with paper towels. On waxed paper, roll in flour; coat completely. Reserve remaining flour.
  • Chop onions to make 1-1/2 cups. Pare carrots; slice diagonally about 1/2-inch thick. Slice celery 1/4-inch thick. Pare, core apples; c ut into 1-inch cubes.
  • In hot butter in large heavy 8-quart kettle, saute chicken, several pieces at a time, turning with tongs until browned on all sides. As chicken browns, remove to shallow pan to catch juices. Continue browning the rest of the chicken - 20 minutes in all.
  • To fat in kettle, add onion, carrot, celery, apple, remaining flour, curry, salt, mace, chili, cayenne, coconut and bay leaf; cook, stirring, 5 minutes. Add broth and 3 cups water. Return chicken. Bring to boil; reduce heat; simmer, covered, 2 hours.
  • Stir occasionally. Remove from heat; cool completely. Refrigerate chicken and broth, covered, overnight.
  • Next day: Skim fat from surface of soup. Remove skin and bone from chicken. Cut chicken meat into large pieces. Return chicken to the kettle.
  • Add apple juice and cream. Reheat, stirring.
  • Meanwhile, make pilaf: Cook rice, raisins, almonds, cinnamon and mace; toss to mix.
  • to serve: Spoon pilaf into warm bowls. Add soup and parsley.
