- Roll out the Pizza Dough on a floured surface until it's a large rectangle about 8 inches by 12 inches. Smear with a little olive oil and sprinkle with salt. Spread the surface with about 1/2 cup of the Marinara Sauce, then sprinkle with the Parmesan. Lay the mozzarella slices over the sauce. Smear the pesto over the cheese. Lay on the pepperoni, olives and bell peppers.
- Unwrap the string cheese and lay it in a line at the top of the dough. Roll it towards you so that the string cheese ends up in the middle of the roll of dough; pinch the seam closed. Slice into 1-inch pieces and place them in a 10-inch cast-iron skillet. Allow the rolls to rise for 20 minutes.
- Preheat the oven to 400 degrees F.
- Bake until the bread is golden and the fillings are bubbly, about 15 minutes. Serve immediately with warm Marinara Sauce.
- Sprinkle the yeast over 3/4 cup warm (not lukewarm) water in a bowl and leave to sit for a bit.
- In a mixer, add the flour and salt and, with the mixer running on low speed (with the paddle attachment), slowly pour in the olive oil and keep going until it's mixed through. Next, pour in the yeast/water mixture and mix until just combined.
- Coat a separate mixing bowl with a light drizzle of olive oil, tip the dough in and form it into a ball. Toss to coat the dough ball in the olive oil, then cover the bowl tightly with plastic wrap and allow the dough to rise for at least 1 hour.
- Add a tablespoon or so of olive oil to a hot pan over medium-high heat, throw in the garlic and onion and give them a stir. Add the wine (or chicken broth), whisking to deglaze the bottom of the skillet. Cook until the liquid reduces by half.
- Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Reduce the heat to low and simmer for 30 minutes.
- Toward the end of the cooking process, chop up fresh parsley and basil and add it to the sauce to taste, stirring to combine.
EASY PEPPERONI PIZZA MUFFINS

- Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.
- Press biscuits, one at a time, between hands to flatten. Place each flattened biscuit in a muffin cup; press into bottom and up sides of muffin cup. Set aside for biscuit to settle and slightly rise, about 5 minutes. Lightly press biscuits into cups as needed.
- Spoon 1 tablespoon pizza sauce into each biscuit; top each with 1 slice pepperoni and 1 tablespoon mozzarella cheese.
- Bake in the preheated oven until biscuit is lightly browned and cheese is melted, about 10 minutes. Remove each pizza from tin and place on a cooling rack, about 5 minutes.

- Preheat oven to 375°. Separate tubes of dough into 8 rolls each; halve the rolls. Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray. , Spoon pizza sauce into each cup. Sprinkle with onion, green pepper, pepperoni and cheese. MUFFIN PAN PIZZA ROLLS
I have come up with a homemade version of the pizza rolls at a local pizza restaurant. They can be filled with what ever toppings you enjoy. I used recipe #35805 in my bread machine and recipe #22280 with great results my kids loved. ***Update: Having made this recipe several more times, I have found that I get better results baking the muffins with the sauce for 10 to15 minutes before adding the cheese. This eliminates the having to cover with foil to keep the cheese from over browning. I have changed the recipe below.

- Preheat oven to 375°F.
- Grease 1 12-cup muffin tin with cooking spray. (Have another 6-cup muffin tin available. You may have enough dough to make a few more muffins.).
- Pinch off a ball of dough slightly larger than a golf ball and flatten in the palm of your hand. Press into a muffin cup. Continue until all dough is used. The pizza dough will not stay up the sides of the cups, this is okay.
- Put 1-2 tablespoons of sauce into each dough cup. Use the spoon to press downward into the dough to make a cup.
- Add other toppings to each roll. (Hold off adding the cheese for now).
- Bake muffins for 15 minutes before adding cheese.
- Sprinkle 1-2 tablespoons of cheese on top of sauce and any other toppings.
- Bake for 10 minutes more. Lift one roll out of cup gently to check bottom to make sure it is baked through the bottom.
PIZZA ROLLS
This is just the base for a basic pepperoni pizza roll. I made this with leftover pizza toppings. I didn't feel like making any dough so I substituted egg roll wraps.

- Heat oil in a deep-fryer or large saucepan to 300 degrees F (150 degrees C). Whisk egg and water together in a small bowl.
- Combine the pizza sauce and pepperoni in a blender or food processor. Process until pepperoni is well chopped and the sauce has thickened. Transfer sauce to a large bowl, and stir in mozzarella.
- Lay out one eggroll wrapper on work surface. Place 1 tablespoon filling at the bottom center of the wrapper, leaving 1/2 inch border on each side. Lightly brush the wrapper edges with the egg mixture. Fold over both sides; roll up to encase filling in wrapper. Repeat with remaining wrappers and filling.
- Deep fry pizza rolls in batches until crisp and golden brown, 5-9 minutes.

MUFFIN TIN DEEP DISH PIZZAS RECIPE BY TASTY
These deep dish pizzas are the perfect little bites! They bake up in just a few minutes, and are totally customizable. We feature Chicago Deep Dish, Caprese, and Sausage and Pepper versions, but feel free to customize them with your own favorite toppings! But don't skip the roasted garlic butter for brushing, it's easy to make and oh so delicious.

- Preheat the oven to 400°F (200°C).
- Make the roasted garlic butter: Drizzle the halved head of garlic with the olive oil and wrap tightly in aluminum foil.
- Transfer to the oven to bake for 40-50 minutes, or until the garlic cloves are golden and tender. Set aside to cool completely. Squeeze the garlic cloves into a bowl and mash into a paste using a fork. Add the melted butter and stir to combine. Keep in a warm place until ready to use. If the garlic butter solidifies, microwave for 15-20 seconds before using.
- Make the deep dish pizzas: Lightly grease a 12-cup muffin pan with nonstick spray.
- On a lightly floured surface, unroll the pizza dough and roll out slightly. Cut the dough lengthwise into quarters and crosswise into thirds so you have 12 squares total.
- Gently shape each piece of dough into a circle, then place into a prepared muffin cup, pressing the dough flush against the bottom and sides. Brush each dough cup with the roasted garlic butter.
- To 4 of the dough cups, add 1 tablespoon shredded mozzarella and 2 slices of pepperoni. Top with 1 tablespoon pizza sauce and a sprinkle of grated Parmesan to create mini Chicago-style deep dish pizzas.
- To another 4 dough cups, add 1 tablespoon pizza sauce, 1 tablespoon Italian sausage, ½ tablespoon diced green pepper, and ½ tablespoon diced onion. Finish with 1 tablespoon of shredded mozzarella to create mini Italian sausage and pepper deep dish pizzas.
- To the remaining 4 dough cups, add 4 cherry tomato halves and 1 tablespoon shredded mozzarella to each to create mini caprese deep dish pizzas.
- Transfer the pizzas to the oven to bake for 15-18 minutes, or until the dough is golden brown and the cheese is melted. Let cool in the pan for 5 minutes, then transfer to a serving platter. Drizzle the caprese pizzas with balsamic glaze and garnish with the basil.
- Serve warm.
