Categories     Entree

Time 2h10m

Yield 6

Number Of Ingredients 12

2 pheasants (2 1/2 to 3 pounds each), thawed if frozen
1/2 cup all-purpose flour
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 package (8 ounces) whole mushrooms
2 cups baby-cut carrots
1 tablespoon butter or margarine
1 cup half-and-half
1/2 cup chicken broth
2 tablespoons dry sherry or chicken broth
1 tablespoon chopped fresh or 1/2 teaspoon dried oregano leaves

Steps:

  • Heat oven to 350°. Cut each pheasant in half along backbone and breastbone from tail to neck with kitchen scissors. Mix flour, seasoned salt and pepper in shallow bowl. Coat pheasant generously with flour mixture. Reserve remaining flour mixture.
  • Heat oil in 12-inch skillet over medium-high heat. Cook pheasants in oil 3 to 4 minutes on each side or until well browned. Place in ungreased rectangular pan, 13x 9 x 2 inches, or in shallow roasting pan. Top and surround pheasants with mushrooms and carrots.
  • Melt butter in 2-quart saucepan over medium heat. Add enough additional flour to remaining flour mixture to make 2 tablespoons. Stir flour mixture into butter. Cook, stirring constantly, until mixture is smooth and bubbly; remove from heat. Gradually stir in half-and-half and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in sherry and oregano. Pour evenly over pheasants.
  • Bake uncovered 1 hour 15 minutes to 1 hour 30 minutes, spooning sauce in pan over pheasants once, until pheasants are tender and juice is no longer pink when centers of thickest pieces are cut. Remove pheasants from pan with slotted spoon. Stir sauce until smooth. Serve sauce with pheasants.

While it sounds fancy, this dish is easy to make. And if you don't have pheasant available, you can substitute chicken for an equally delicious main course. -Julie Anderson, Wausau, Wisconsin

Categories     dinner, one pot, main course

Time 20m

Yield Four servings

Number Of Ingredients 9

4 boneless, skinless pheasant breasts, about 1/3 pound each
Salt and freshly ground pepper to taste
2 teaspoons paprika
2 teaspoons butter
1/2 cup finely chopped onions
2 sprigs fresh thyme or 1/2 teaspoon dried
1/4 cup dry white wine
1/3 cup heavy cream
1/3 cup sour cream

Steps:

  • Sprinkle the breasts with salt, pepper and paprika.
  • Melt the butter in a heavy nonstick skillet large enough to hold the pheasant breasts in one layer. Add the breasts and cook over medium-high heat for 3 minutes or until they are lightly browned. Turn the breasts and cook for 3 minutes more. Add the onions and thyme. Stir and cook until the onions are wilted. Add the wine to dissolve the brown particles that cling to the bottom of the pan. Continute cooking until most of the wine evaporates.
  • Add the heavy cream and cook until the liquid is reduced by half. Add the sour cream, blend well and bring to a boil, stirring until smooth. Taste and adjust the seasonings and serve very hot.

PHEASANT WITH BACON AND SOUR CREAM

Pheasant With Bacon and Sour Cream image

I used to own a poultry and game shop many years ago. This recipe (from The Poultry and Game Cookbook) was one of my favourite ways to cook pheasant. I think the modern trend is to eat game cooked rare, but I love a longer, slower cooking method still. This is supposedly a Swedish recipe.

Provided by JustJanS

Categories     Pheasant

Time 1h35m

Yield 4 serving(s)

Number Of Ingredients 8

1 -2 pheasant
2 slices bacon, thick fat ones halved, with rind removed
2 tablespoons melted butter
1 cup light sour cream
salt
fresh ground black pepper
1/4 cup cream
salt

Steps:

  • Pre-heat the oven to moderate.
  • Carefully loosen the skin over the breasts of the pheasants and insert a piece of bacon under the skin over each breast.
  • Pull the skin back over the breasts, and brush the birds liberally with the melted butter.
  • Fold the wings under the body of the birds, tie the legs together loosely, and place the birds in a casserole dish.
  • Roast, uncovered in the centre of the oven for 15 minutes, until the birds begin to brown.
  • Pour the sour cream over the birds and season with salt and pepper.
  • Cover and cook for 40 to 55 minutes.
  • Transfer the birds to a heated serving platter and keep hot.
  • Stir the cream into the pan juices, on top of the stove.
  • Simmer gently until the sauce has thickened, adjust the seasoning, and serve with the pheasants.
