Rich, buttery, and oh-so-simple, the classic pecan pie has earned its place as a Thanksgiving mainstay. It's also a wonderful choice to make ahead of time since it will need several hours to cool before serving. Dollop with freshly whipped and barely sweetened cream to balance out the bold sweetness of this pie.

1/2 recipe Basic Pie Dough, rolled out and fitted into a 9-inch pie plate
4 large eggs
1 cup light corn syrup
1/3 cup packed light-brown sugar
1/4 cup granulated sugar such as Sugar In The Raw
4 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 teaspoon salt
3 cups pecan halves
Lightly sweetened whipped cream, for serving (optional)

Steps:

  • Preheat oven to 375 degrees. with rack set in lowest position.
  • Using kitchen shears or a paring knife, trim dough to a 1-inch overhang. With floured fingers, fold overhang under itself to form a rim; pinch between thumb and forefinger to form a uniform edge around rim of pie plate. Crimp with fingertips. Transfer dough-lined pie plate to refrigerator.
  • Make filling: In a large bowl, whisk eggs, corn syrup, sugars, butter, vanilla, and salt until smooth; mix in pecans. Pour mixture into chilled pie crust; place pie plate on a rimmed baking sheet. Bake until filling jiggles slightly in the center when gently shaken, 50 to 60 minutes.
  • Cool pie completely in plate, 5 to 6 hours. Serve with whipped cream, if desired.

Homemade or store-bought pie crust
Easy Lemon Curd
1 cup cold water
1/4 cup cornstartch
8 large eggs, whites only
2/3 cups sugar
1/4 teaspoon coarse salt

Steps:

  • Preheat oven to 350 degrees. Fit a homemade or store-bought pie crust into a 9-inch pie plate; line crust with parchment paper and fill with dried beans or pie weights. Bake until crust is lightly browned, about 45 minutes. Carefully lift and remove paper with pie weights and let crust cool.
  • Prepare Lemon Curd through step 1. Whisk together 1 cup cold water and 1/4 cup cornstarch add to lemon mixture along with butter in step 2 and continue as directed. Do not chill curd; pour directly into cooled crust and smooth top. Refrigerate until chilled and set, 3 hours (or up to 1 day).
  • Preheat oven to 350 degrees. In a large bowl, combine egg whites, sugar and salt. Using an electric mixer, beat on medium-high until stiff peaks form. Pile meringue on pie, making sure it touches the crust all around. Bake until meringue begins to brown, 8 to 10 minutes.

This recipe was printed in the Fall 2007 Taste of the South Magazine. It was once a secret family recipe belonging to a Southern lady from Mississippi. This pie is special in that it has a creamy custard pecan filling and it's topped with meringue.

9 inches deep dish pie shells
1 cup chopped pecans
3 eggs, separated
1/2 cup sugar
3 tablespoons all-purpose flour
1 (14 ounce) can sweetened condensed milk
3/4 cup water
1 teaspoon vanilla extract
3 tablespoons sugar

Steps:

  • Preheat oven to 350°F.
  • Prick pie shell with a fork.
  • Bake pie shell for 10 minutes or until golden brown; remove from oven and allow to cool.
  • On a baking sheet, place pecans in a single layer and roast in oven until fragrant, checking every few minutes to avoid burning; remove from oven and let cool.
  • In a medium microwave safe bowl, beat egg yolks, 1/2 cup sugar, and flour on medium speed with an electric mixer, beating until thick and pale.
  • Add sweetened-condensed milk, water and vanilla and beat until well combined.
  • Microwave on high (100 percent power) for 5 1/2 minutes, stirring halfway through, or until mixture is a thick pudding-like consistency.
  • Stir in pecans.
  • Let cool for 20 minutes.Spoon filling into pie shell.
  • Increase oven temperature to 400°F
  • In a clean, medium bowl, beat egg whites at high speed with an electric mixer until foamy.
  • Gradually add 3 tablespoons sugar, beating until stiff peaks form.
  • Spread meringue over pie, sealing to edge.
  • Return pie to oven and bake for 5-10 minutes or until merigue is slightly brown.

No one knows exactly when it was invented, but since the 1940s -- when it was first popularized in "Joy of Cooking" and "The Fannie Farmer Cookbook" -- myriad pecan-pie recipes have emerged, including this sweet, rich version, brought to us by Martha's mother, Mrs. Kostyra.

All-purpose flour, for dusting
1/2 recipe Pate Brisee for Plum Crumb Pie, or frozen store-bought pastry shell
2 1/2 cups pecan halves
4 large eggs
1/2 cup sugar
1 cup dark corn syrup
1/2 cup light corn syrup
1 teaspoon pure vanilla extract
Whipped cream, for serving

Steps:

  • Preheat oven to 350 degrees. If using homemade pate brisee, lightly dust a clean work surface with flour, and roll dough into a 12-inch circle. Fit circle into a 9-inch pie plate being careful not to stretch dough too thin; create edges of choice. Transfer to freezer until firm, about 15 minutes.
  • Coarsely chop 1 1/4 cups pecans; set aside. In a medium bowl, combine eggs and sugar. Whisk to combine. Add corn syrups and vanilla. Whisk until well combined. Add chopped pecans, and stir. Pour into prepared crust.
  • Arrange remaining 1 1/4 cups pecan halves decoratively on top of pie. Bake until crust is golden, filling is firm, and a cake tester inserted in center of pie comes out clean; 50 to 55 minutes. Cool completely before slicing. Serve with whipped cream.

2 tablespoons Dark Karo syrup
2 egg yolks (beaten)
1 1/2 cups flour
1 teaspoon vanilla
1/4 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup pecan pieces
16 pecan halves
1 tablespoon Dark Karo syrup (for pecan halves)

Steps:

  • Mix pecan halves with 1 tablespoon of dark Karo syrup and set aside.
  • Beat shortening with brown sugar until creamy.
  • Add molasses, 2 tablespoons dark Karo syrup, and pecan pieces, blend.
  • Beat in egg yolks and vanilla.
  • Measure flour, add baking powder, baking soda, and salt.
  • To batter slowly mix in dry ingredients until all ingredients are blended well.
  • Place in a 8"x 8" greased baking pan.
  • Top batter with arranged pecan halves that have been mixed with the dark Karo syrup.
  • Place baking pan in a preheated oven at 350 for 25- 30 minutes.
  • (if glass baking dish is used bake at 325 for 25- 30 minutes).

12 tablespoons (1 1/2 sticks) unsalted butter
1/2 cup honey
1 cup packed light-brown sugar
1/4 cup granulated sugar
4 cups pecan halves (about 1 pound)
3/4 cup heavy cream
All-purpose flour, for dusting
1/2 recipe Pate Brisee for Upside-Down Pecan Pie

Steps:

  • In a 10-inch cast-iron skillet over medium heat, combine butter, honey, and sugars. Bring to a boil; let boil for 4 minutes. Add pecans and heavy cream, and boil 3 minutes more. Remove from heat, and set aside. Let stand about 30 minutes to cool. Using a wooden spoon, gently mound pecans and caramel slightly in center of skillet, leaving a gap between pecans and edge of skillet.
  • Preheat the oven to 425 degrees.with rack in the top third. On a clean, lightly floured work surface, roll out one disk of prepared chilled pastry to approximately a 7/8-inch-thick, 13-inch-diameter circle. Place the pastry over the skillet, carefully tucking the dough down against the edge of the skillet and around the edges of the mound of pecans. Trim the excess dough.
  • Place two rimmed baking sheets, one on top of the other, underneath the skillet to catch any drips while the pie bakes and to provide insulation for the caramel. Place skillet in the oven, and bake pie until the dough is just turning golden brown, about 10 minutes. Reduce heat to 350 degrees, and continue baking until the pastry is cooked through and the caramel is bubbling up around the edges of the skillet, about 30 minutes more.
  • Remove the pie from the oven, and let cool about 20 minutes. Carefully invert the pie onto a parchment-lined tray or baking sheet (the pie is easy to transfer to serving plate once it has been inverted). Be careful inverting pie; the caramel is very hot. If the pie does not release easily from skillet, heat the skillet over medium heat for about 30 seconds. Serve warm.

2 eggs
2 tablespoons butter, melted
1 teaspoon vanilla
1/8 teaspoon almond extract
1 cup sugar
1/2 cup light corn syrup
1/2 cup dark corn syrup
2 cups pecan halves or 2 cups chopped pecans
3/4 cup chocolate chips or 3/4 cup chopped dark chocolate

Steps:

  • In a large bowl, whisk together eggs, butter, vanilla and almond extract to combine.
  • Add the sugar, mix well.
  • Add the corn syrups and mix thoroughly.
  • Using a rubber spatula, stir in pecans and chocolate.
  • Pour filling into pie crust and bake at 350 degrees until filling is set about 55-60 minutes. Cool on a wire rack.

1/2 teaspoon salt
5 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
3 tablespoons chilled vegetable shortening, cut into 1/2-inch pieces
3 tablespoons (about) ice water
For filling and topping
1 3/4 cups plus 1/3 cup sugar
1/3 cup cornstarch
1 1/2 cups water
1/2 cup fresh lemon juice
5 large eggs, separated
2 tablespoons grated lemon peel
1/2 teaspoon cream of tartar

Steps:

  • Make crust:
  • Mix first 5 ingredients in large bowl; add butter and shortening. Using electric mixer, beat at low speed until mixture resembles coarse meal. Add 2 tablespoons ice water. Beat until dough holds together, adding more water by 1/2 tablespoonfuls if dry. Gather dough into ball; flatten into disk. Wrap disk in waxed paper and chill until firm enough to roll, at least 1 hour and up to 1 day.
  • Roll out dough between sheets of waxed paper to 12-inch round. Peel off top sheet of paper. Invert dough into 9-inch-diameter glass pie dish; peel off paper. Press dough gently into dish. Trim overhang to 3/4 inch; turn under and crimp edge decoratively. Freeze crust until firm, about 30 minutes.
  • Position rack in center of oven and preheat to 375°F. Line crust with foil; fill with dried beans or pie weights. Bake crust until golden at edge, about 15 minutes. Remove foil and beans; continue to bake until crust is pale golden, piercing with fork if crust bubbles, about 12 minutes. Cool completely on rack.
  • Reduce oven temperature to 325°F.
  • Make filling and topping:
  • Whisk 1 3/4 cups sugar and 1/3 cup cornstarch in heavy medium saucepan to blend. Gradually add 1 1/2 cups water and lemon juice, whisking until cornstarch dissolves and mixture is smooth. Add yolks and peel; whisk to blend. Cook over medium-high heat until filling thickens and boils, whisking constantly, about 8 minutes. Pour into prepared crust.
  • Using electric mixer, beat whites and cream of tartar in large bowl until soft peaks form. Gradually add remaining 1/3 cup sugar, beating until stiff and shiny. Mound meringue atop warm lemon filling, spreading to seal to crust at edges.
  • Bake pie until meringue is golden, about 20 minutes. Cool pie 1 hour. Refrigerate up to 6 hours; serve cold.

1 cup dark corn syrup

1 1/2 cups whole pecans
1 whole unbaked pie shell
whipped cream

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the white sugar, brown sugar, salt, corn syrup, butter, eggs, bourbon (optional) and vanilla together in a bowl. Arrange the pecans in the bottom of the unbaked pie shell.
  • Pour the syrup mixture over the top. Bake the pie until it's no longer loose and jiggly, 1 hour 10 minutes, being careful not to burn pecans and crust. (Cover with foil for part of the baking time if it browns too quickly).
  • Allow to cool for several hours or overnight. Serve in thin slivers with freshly whipped cream.

Spread meringue evenly over filling, sealing to edge of crust. Bake until meringue is golden brown, 12-15 minutes. Cool 1 hour on a wire rack. Refrigerate at least 6 hours before serving.
