1 package active dry yeast
1/2 cup lukewarm water
2 cups shifted all-purpose flour
1/2 cup sugar
1/2 cup soft butter or margarine
1/2 teaspoon salt
3 eggs, well beaten
1 cup sugar
1 cup water
1/4 cup rum
1 quart strawberries
1/3 cup sugar
3 tablespoons currants

Steps:

  • Sprinkle yeast over water, stir until dissolved. Add 1/2 cup of the flour and 1 tablespoon of the sugar. Beat until smooth. Cover and let rise in warm place about 45 minutes until double in volume. Put butter in large bowl. Add rest of the 1/2 cup sugar gradually. Beat until fluffy. Add salt and eggs, rest of flour, currants, and yeast mixture and beat 5 minutes. Pour mixture into a well-greased 3-quart ring mold. Cover, let rise in warm place about 1 hour, until double in size. Heat oven to 350°F. Bake 40 minutes. Cool 5 minutes. Invert cake on serving plate. Combine 1 cup sugar and water in a saucepan. Boil 5 minutes over moderate heat. Cool and stir in rum. Spoon sauce over cooled cake. Slice the berries, reserving a few whole berries for garnish. Add 1/3 cup sugar. Place strawberries in center of cake and garnish with whole berries.

1 tablespoon Worcestershire sauce
2 cups coarsely crushed potato chips
paprika

Steps:

  • Heat oven to 400°F. Combine crab meat, shrimp, mayonnaise, green pepper, onion, celery, salt, and Worcestershire. Pour into a buttered 2-1/2 quart casserole. Top with crushed potato chips. Sprinkle with paprika. Bake 20 to 25 minutes, until mixture is thoroughly heated.

2 cups canned green turtle soup
1 cup sherry
1/2 cup whipped cream

Steps:

  • Cook the green peas in boiling, salted water and strain through a fine sieve or an electric blender to get a puree. Reheat. Add 1 tablespoon sweet butter, salt, and white pepper to taste. Blend with the green turtle soup and 1 cup sherry. Heat to just under the boiling point. Put the soup into serving cups. Cover each cup with a spoonful of unsweetened whipped cream and put the cups under the broiler to brown the topping. Serve immediately.

1 (16-ounce) can red salmon
water
1 (.9-ounce) envelope unflavored gelatin
1 tablespoon onion juice
1/4 cup finely chopped celery
2 tablespoons chopped green peppers
1 cup heavy cream, whipped
1 large cucumber, thinly sliced
1 cup green-tinted mayonnaise

Steps:

  • Drain salmon and measure liquid. Add water to make 1-1/2 cups. Sprinkle gelatin over 1/2 cup of the liquid. Stir over low heat until gelatin is dissolved. Remove from heat, stir in rest of liquid and onion juice. Chill to consistency of unbeaten egg white. Flake fish and combine with celery and green pepper. Fold into chilled gelatin with whipped cream. Turn into a 1-quart mold. Chill until firm. Unmold onto a serving plate. Garnish with cucumber. Serve with mayonnaise tinted pale green with food coloring.

Steps:

  • Peel potatoes and cut into balls with a melon ball cutter. Melt butter in a large skillet over moderate heat. Add potato balls; cook and stir about 10 minutes, until lightly browned. Add mushrooms and cook over low heat 5 minutes. Add salt, pepper, and sherry. Keep hot over very low heat. Place filets on broiler rack in preheated broiler 3 inches from heat. Broil 4 to 5 minutes on each side for rare; 6 to 7 minutes on each side for medium well done. Serve filets with the sautéed potatoes and mushrooms.
