- Preheat oven to 350 degrees F (175 degrees C). Sift together flour, salt, baking soda, and cinnamon; set aside. Grease and flour an 8 inch Bundt pan.
- Whisk together eggs, oil, and 2 teaspoons vanilla extract until smooth. Mix in sifted dry ingredients until moistened, then fold in sliced apples, pecans, and walnuts. Pour batter into prepared Bundt pan.
- Bake cake in preheated oven until golden brown on top, and a toothpick inserted in the center comes out clean, about 1 1/2 hours. Stir together brown sugar, milk, butter, and 1 teaspoon vanilla extract in a saucepan. Simmer for 2 minutes, then pour over cake in the Bundt pan as soon as it comes out of the oven. Allow cake to cool in pan set over a wire rack until it is room temperature, about 4 hours.
- Whisk together mayonnaise, 1 teaspoon vanilla extract, and confectioners' sugar until smooth. Unmold cake and place onto a serving plate, spread icing over the top.

CARAMEL APPLE CAKE

- Preheat the oven to 350 degrees F. Generously butter and flour a 10-cup bundt pan.
- Whisk the flour, baking powder, baking soda, salt, 1 1/3 cup of the sugar and 1 teaspoon of the pie spice together in a large bowl.
- Toss the apples with the remaining 1/4 cup sugar and 1/2 teaspoon pie spice and set aside. Whisk the eggs and oil together in another bowl.
- Whisk in the sour cream, orange zest and juice, and vanilla. Pour the egg mixture into the dry ingredients and stir with a wooden spoon just until combined but still a bit lumpy.
- Using a slotted spoon, scatter about 1/2 cup of the apples in the bottom of the bundt pan. Put about a third of the batter on top. Repeat, alternating with the remaining apples and batter, ending with the batter.
- Bake the cake until it pulls away from the sides of the pan and a skewer inserted into the center of the cake comes out clean, about 1 hour and 15 minutes. Cool 10 minutes and invert the cake onto a rack placed over a baking sheet. Cool. (The cake can be prepared to this point a day ahead.)
- To make the caramel: Combine the sugar, corn syrup, and 2 tablespoons water in a small saucepan. Bring to a boil over medium heat and cook, swirling the pan but not stirring, until the sugar is dark amber-colored caramel, about 15 minutes. Pull pan from the heat and carefully pour in the cream (take care it will splatter). Stir in the pecans, vanilla, and salt. Cool until caramel becomes thick and syrupy, then evenly pour over the cake and cool until set.
CARAMEL APPLE CAKE

- Butter a 9-by-3-inch round cake pan. Make the caramel: Cook the sugar and corn syrup in a large skillet over medium-high heat, stirring occasionally, until the sugar is dissolved and the mixture is dark amber, 7 to 10 minutes.
- Reduce the heat to medium. Carefully add the cream and 4 tablespoons butter (it will splatter) and cook, stirring, until combined, about 3 minutes.
- Remove the skillet from the heat and let sit 1 minute. Pour 1 1/2 cups caramel into a glass measuring cup and set aside. Pour the remaining caramel into the prepared pan and set aside until set, about 30 minutes.
- Cut 3 apples into quarters and cut out the cores with a paring knife. Arrange the pieces skin-side down in the pan (overlapping them slightly) to form a ring about 1/2 inch from the edge. Save any pieces that do not fit for later.
- Halve the remaining whole apple crosswise. Scoop out the seeds with a melon baller or measuring spoon, leaving the stem on the top half. Chop the bottom and any of the leftover quartered apples into pieces; set aside.
- Arrange the apple top, stem-side down, in the center of the pan. If the quartered apples shift, just push them back into place.
- Preheat the oven to 350 degrees F. Make the batter: Whisk the flour, baking powder, baking soda, salt and cinnamon in a medium bowl. In a small bowl, whisk the sour cream, orange juice and vanilla.
- Using a stand mixer with the paddle attachment, beat the butter and sugar on medium-high speed until light and fluffy, about 5 minutes.
- Crack the eggs into a small bowl. Slip them into the mixer bowl, one at a time, and beat until the mixture is pale and creamy, about 5 more minutes. Scrape down the bowl and beater with a rubber spatula.
- With the mixer on low speed, add half of the sour cream mixture, then half of the flour mixture. Repeat. Turn off the mixer and scrape down the bowl with a rubber spatula; finish combining the batter by hand.
- Spread the batter over the apples in the pan. Top with the chopped apple. Bake on the middle oven rack until the cake is brown on top and springs back when pressed, 1 hour to 1 hour 20 minutes (don't worry if the top is dark). Cool in the pan on a rack.
- Bring 1 inch of water to a simmer in a skillet wide enough to hold the cake pan. Carefully run a sharp knife around the inside of the pan several times, then rest the pan in the water to soften the caramel, about 8 minutes. Remove the pan from the water and dry.
- Invert a plate on top of the cake, then flip over the cake and plate. Using pot holders or a towel, wriggle the pan off. Soften the reserved 1 1/2 cups caramel in the microwave, about 2 minutes. Drizzle the cake with some of the caramel. Slice and serve with the rest.

- Mix eggs, oil, and sugar. Blend well.
- Sift flour, salt,soda and cinnamon.
- Add to egg mixture.
- Add vanilla, apples and nuts. Mix well.
- Pour into a 9 inch bundt pan.
- Bake for 1 to 1-1/2 hours at 350°F until cake is set in the middle and is golden brown.
- Meanwhile combine brown sugar, milk, butter, and vanilla in a sauce pan and cook for 2 minutes.
- Pour over cake while it is hot out of the oven (leave cake in the bundt pan).
- When cooled completely remove cake to a serving plate.
- For frosting, combine powdered sugar, mayonnaise, vanilla and milk until a smooth, slightly thick icing forms.
- Once cake is cooled drizzle icing over entire cake.
- Sprinkle with additional nuts and enjoy!

CINNAMON APPLE CAKE

- To make cake: Preheat oven to 350°F. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. In a separate mixing bowl, combine eggs, apples, oil and vanilla. Add mixture to the dry ingredients, and stir just until well mixed. Batter will be thick. Pour cake batter into greased 13 x 9-inch pan. Sprinkle with brown sugar and cinnamon. Bake 50 to 60 minutes, or until a toothpick inserted in center comes out clean. To make Caramel Sauce: Combine butter, sugars, and evaporated milk in medium saucepan over medium high heat. Stirring constantly, bring to a boil for 1 minute. Add cinnamon and vanilla. Cool. Cut cake and serve with caramel sauce. If desired, top with ice cream or whipped topping.
APPLE CAKE

- Blend flour, shortening, sugar, salt, grated lemon peel, and the lightly beaten eggs. Add milk as required, roll 1/2-inch thick, and line pie pan.
- Mix the applesauce with the cinnamon and cloves, spread over dough in pie pan, and top with dough rolled to 1/2-inch thickness. Bake 1 hour in moderate (375 degrees F) oven. Serve in deep dish with whipped cream.
OZARK FRESH APPLE CAKE
Steps:
- Preheat oven to 350 degrees F. Spray 9"x12" baking pan with Pam. Peel and chop apples and place in large mixing bowl with lemon juice and stir until well coated. Set aside.
- In small mixing bowl cream eggs and sugar with mixer. Set aside. In large mixing bowl sift together dry ingredients. Add in egg mixture and mix. Stir in oil and mix well. Fold in apples, nuts and vanilla. Stir to mix well and spoon into baking dish.
- Bake on center rack of oven for 45 minutes. Remove from oven when toothpick inserted into center of cake comes out clean. Serve when cooled.

- Mix oil, sugar, eggs, and vanilla together.
- Sift the plain flour, salt, soda, & cinnamon together and then add to the wet mixture.
- Fold in the pecans and apples last.
- Mix by hand as batter is very stiff.
- Bake in a greased & floured 13x9 pan at 350 for 40-45 minutes.
- To make topping: Mix the brown sugar, milk & margarine and bring to a boil on the stove. Boil for 3 minutes.
- Punch holes in the cake with a wooden spoon and then pour the topping over the cake.

- Pre Heat oven to 350*.
- Sift Flour,Baking Soda,Baking Powder,Salt and Cinnamon together and set aside.
- Peel and dice Apples into a bowl of salty water ( so they don't turn brown ) and set aside.
- Combined Sugars, Eggs, Vanilla, Apple- Sauce,Apple Butter ( I use homemade Smoky Mountain Apple Butter but any brand you like is fine ) and diced Apples.
- Stir with a Sturdy Spoon. ( No need for a Mixer).

- 1. Preheat the oven to 350°F and place the rack in the middle position.
- 2. Combine the dry ingredients in a bowl and whisk to combine. Set aside.
- 3. Combine the butter and sugar in the bowl of a standing mixer fitted with the paddle attachment and mix on medium speed until wet and grainy.
- 4. Add the molasses. Scrape the sides of the bowl with a flexible spatula to get all of the molasses into the mixture.
- 5. Add the eggs one at a time. Scrape all the way to the bottom of the bowl and mix on low speed.
- 6. Alternately add the buttermilk and the dry mixture about a quarter at a time. Stop the mixer to scrape the bowl and turn it on again on low speed for about 10 seconds. The mixture should be stiff like a soft cookie dough.
- 7. Shape the dough into a ball and wrap it in plastic wrap. Refrigerate for 30 minutes.
- 8. Divide the dough into 6 or 8 equal portions and place each one on a round piece of parchment paper a little larger than a 9-inch cake pan. Roll out the dough to the size of the parchment. Place the cake pan over the disk and trim away the excess around the edge.
- 9. Leaving the parchment paper underneath, lift the disks onto baking sheets and bake them for approximately 10 minutes, or until the top surface appears dry and a wooden skewer inserted in the center comes out clean.
- 10. Slide the disks off the baking sheet onto a flat surface to cool.
- 11. To make the filling, combine all the ingredients in a large, heavy-bottom saucepan and bring to a light simmer. Immediately transfer to the work bowl of a food processor fitted with the steel blade and pulse into a thick paste.
- 12. To assemble the cake, spread about 1 cup of the filling onto each layer, taking care to center each disk on top of the one beneath it. Repeat until all the layers are used. Do not put apple filling on top of the cake.
- 13. Wrap the cake well and refrigerate it for up to 24 hours. This gives the apple filling time to work itself into the cake. Dust with confectioners' sugar and serve chilled.
