Broccolini is delicious when used in place of broccoli or asparagus in recipes. This side dish goes well with broiled fish or roasted or sauteed chicken.

2 teaspoons white sesame seeds
2 teaspoons vegetable oil
2 bunches broccolini (about 1 pound), stalks halved lengthwise if large
2 garlic cloves, thinly sliced
1 small piece peeled fresh ginger, thinly sliced
1/2 cup water
2 teaspoons soy sauce
1 teaspoon toasted sesame oil

Steps:

  • Heat a large skillet over medium. Add sesame seeds and toast, tossing, until golden, about 3 minutes. Transfer to a small bowl.
  • Return skillet to heat and add vegetable oil. Add broccolini, garlic, ginger, and water. Cover and cook, stirring occasionally, until broccolini is crisp-tender, about 12 minutes. Add soy sauce and cook until it evaporates, 30 seconds. Top with sesame oil and sesame seeds.

1 1/2 cups quick-cooking white rice
1 3/4 teaspoons kosher salt, divided, plus more
8 cups broccoli florets
1/4 cup plus 2 tablespoons cornstarch
1/2 teaspoon freshly ground black pepper
2 pounds boneless skinless chicken thighs, breasts, or a mix, patted dry, cut into 1" chunks
4 tablespoons vegetable oil, divided
1/4 cup plus 1 tablespoon honey
1/4 cup low-sodium soy sauce
3 tablespoons rice wine vinegar
1 tablespoon Sriracha
1 large clove garlic, finely grated
1 teaspoon finely grated ginger
1 1/2 teaspoons toasted sesame oil
2 tablespoons toasted sesame seeds, divided
2 scallions, thinly sliced

Steps:

  • Cook rice with a pinch of salt according to package directions.
  • Set a steamer basket in a medium pot filled with 1" water, cover pot, and bring water to a boil. Steam broccoli, covered, until crisp-tender, 5-6 minutes. Drain and set aside.
  • Whisk cornstarch, pepper, and 1 1/2 tsp. salt in a large bowl. Add chicken and toss to coat.
  • Heat 2 Tbsp. vegetable oil in a large skillet over high. Add half of the chicken and cook, turning occasionally, until chicken is cooked through and a light brown crust forms, about 5 minutes.
  • Meanwhile, whisk together honey, soy sauce, vinegar, Sriracha, garlic, ginger, sesame oil, 1 Tbsp. sesame seeds, and remaining 1/4 tsp. salt in a medium bowl.
  • Transfer first batch of chicken to a plate. Heat remaining 2 Tbsp. vegetable oil and cook remaining chicken. Add sauce to skillet along with first batch of chicken. Toss well and cook until sauce is reduced and thickened, about 2 minutes. Fold in reserved broccoli, toss to coat, and remove from heat.
  • Divide chicken and broccoli among 4 plates and top with scallions and remaining 1 Tbsp. sesame seeds. Serve with rice on the side.

1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
2 tablespoons olive oil, divided
1 cup chopped green pepper
1/2 cup chopped onion
Hot cooked rice

Steps:

  • In a small bowl, combine the first seven ingredients until blended; set aside., In a large skillet or wok, stir-fry chicken in 1 tablespoon oil for 4-6 minutes or until no longer pink. Remove and keep warm., Stir-fry green pepper and onion in remaining oil for 2 minutes. Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 1 minute or until thickened. Add chicken; heat through. Serve with rice.

1/2 cup soy sauce
1/3 cup water
1/4 cup sugar
2 tablespoons sesame or olive oil
4 green onions with tops, sliced
1/2 medium onion, sliced
2 garlic cloves, minced
1 to 2 tablespoons sesame seeds
Dash pepper
2-1/2 pounds chicken wings

Steps:

  • In a large plastic bag or glass dish, combine the first nine ingredients. Add chicken wings; coat well. Cover and refrigerate 2-3 hours or overnight, turning occasionally. Remove chicken to a shallow rack in a baking pan; discard marinade. , Bake, uncovered, at 350° for 30 minutes. Turn and bake about 20 minutes longer or until tender.

2 inches piece gingerroot, grated
1/4 cup soy sauce, plus
1 tablespoon soy sauce
1/2 teaspoon chili flakes
1 tablespoon molasses
1 tablespoon maple syrup or 1 tablespoon dark brown sugar
2 tablespoons white wine or 2 tablespoons rice wine
1 tablespoon sesame seeds
2 lbs chicken drummettes or 2 lbs chicken wings
2 heads broccoli
vegetable oil or sesame oil
salt, to taste
1 tablespoon cilantro, finely chopped (optional)
cooked rice

Steps:

  • Preheat oven to 400 degrees. Combine the garlic, ginger, soy sauce, chile flakes, molasses, maple syrup, wine and sesame seeds in a large bowl. Add the chicken chicken and thoroughly in the soy mixture. Allow to marinate briefly while you prepare the broccoli.
  • Chop broccoli into 1 by 2 Inch florets. In a large bowl, toss in enough vegetable oil to coat. Salt to taste and spread out on a baking sheet.
  • Using tongs to leave the marinade behind, spread the chicken on a foil lined pan. Place chicken in the oven and bake for 12-15 minutes or until browned on the bottom. Add broccoli pan to oven, turning after 12 minutes and coking until tender. Cook the chicken an additional 12-15 minutes or until thick parts are throughly cooked.
  • Sprinkle the chicken with the cilantro and serve the broccoli over rice.

  • Put oven rack in upper third of oven and preheat oven to 425°F.
