2 pounds meaty beef soup bones (beef shanks or short ribs)
6 cups water
5 medium potatoes, peeled and cubed
5 medium carrots, chopped
1 medium onion, chopped
1/2 cup medium pearl barley
1 can (28 ounces) plum tomatoes, undrained
1 to 1-1/2 teaspoons salt
1/2 teaspoon pepper
2 garlic cloves, minced, optional
1 bay leaf, optional
3 tablespoons cornstarch
1/2 cup cold water

Steps:

  • Place soup bones and water in a Dutch oven or soup kettle. Slowly bring to a boil. Reduce heat; cover and simmer for 2 hours. , Set beef bones aside until cool enough to handle. Remove meat from bones; discard bones and return meat to broth. Add the potatoes, carrots, onion, barley, tomatoes, salt, pepper, garlic and bay leaf if desired. Cover and simmer for 50-60 minutes or until vegetables and barley are tender. , Discard bay leaf. Combine cornstarch and cold water until smooth; stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened.

4 cups Chili Sans Beans, recipe follows, or your favorite prepared chili
4 Chicago-style hot tamales (or 4 prepared pork, chicken or beef tamales), usually found in the freezer section
12 sport peppers, chopped
1/4 white onion, chopped
4 hot dog buns
1 1/2 cups shredded Manchego
2 small bags corn chips, such as Fritos, crushed
1 teaspoon vegetable oil
1 1/2 pounds ground sirloin
1 pound Mexican-style chorizo,such as El Supremo brand
1 onion, diced
1 to 2 tablespoons chili powder
1 to 2 tablespoons ground cumin
1 teaspoon paprika
Kosher salt and freshly ground black pepper
1 stout beer
1 tablespoon hot sauce
One 14.5-ounce can crushed tomatoes
1 cup chicken stock

Steps:

  • Heat the Chili Sans Beans in a small saucepot until it is simmering, about 5 minutes.
  • Heat up the tamales using a steamer basket set over a pot of simmering water, until they are warmed through, about 10 minutes. (Or follow the package directions of the tamale you use.)
  • In a small bowl, combine the sport peppers and chopped onion.
  • For the sandwich build: Place a sprinkling of the onions and sport peppers along the bottom of the buns. Remove the husks of the tamales. Place the tamales in the buns and top with the Manchego. Then ladle a small amount of chili on top of that! Top with the remaining sport peppers and onions and sprinkle with the corn chips. Take a bite and instantly blog about how surprisingly amazing this combination of ingredients is.
  • In a large Dutch oven, heat the oil over medium heat. Add the beef and chorizo and smoosh down. Start breaking up the chunks with a wooden spoon and let sear until the beef is no longer pink, about 5 minutes.
  • Remove the meat from the pot and leave the fat. Then add the onions, chili powder, cumin, paprika and season with salt and pepper. Cook until the onions are soft, 7 to 8 minutes. Deglaze with the beer. Cook until the alcohol smell subsides, 3 to 4 minutes. Add the hot sauce, tomatoes, stock and the reserved meat. Simmer until thickened, stirring frequently, about 20 minutes. Adjust seasoning.

2 medium onions, quartered
3 stalks celery, cut in large chunks

1 cup tomato juice (V-8 recomended)
1/4 cup tapioca
1 tablespoon sugar
1 tablespoon salt
1/4 teaspoon pepper
1/2 teaspoon dried basil
1/2 cup dry red wine (burgundy recommended, or omit wine and use 1 cup water)
1/2 cup water

Steps:

  • Preheat oven to 300°F
  • Mix together all ingredients, except potatoes, in a large Dutch oven casserole; cover and cook for 3 hours.
  • Add potatoes and cook for additional 1 hour.

3 tablespoons olive oil
1 1/2 lbs stewing beef
1/2 cup flour (to dust beef with,you probably won't use all of it but what ever is extra just falls off (and flour)
6 cups water
2 (14 ounce) cans tomato soup
1 onion, diced
3 stalks celery, diced
3 carrots, sliced diagonally
3 potatoes, cubed
2 tablespoons Worcestershire sauce or 1/4 cup dry red wine
1 bay leaf
1/4 teaspoon ground pepper

Steps:

  • Coat stewing beef in flour, I use a colander so that the excess easily goes through.
  • Heat a large pot, add oil and then beef and onion.
  • Cook, stirring occasionally until the outside is browned (you are not cooking it; just giving it a crust).
  • Add water, Worcestershire sauce, or wine and spices (except salt and pepper).
  • Add one 14 oz can of tomato soup, depending on your taste you may or may not want to add some or all of the second can. Start with one.
  • Simmer for approximately 2 hours (it really depends on the size of the pieces of stewing beef and if you want them firm or more towards the shredded stage.
  • After the beef is close to your desired texture add vegetable, another partial or full can of soup, and pepper. Salt is optional, as the tomato soup contains salt. Cook for 20 min or until vegetables are cooked to your liking.
  • Stir occasionally through the cooking process so that it does not stick.
  • * this feeds four in my family but it should feed six (they just like it a lot so eat more than they normally would.
  • * dumpling are a perfect companion to this recipe.

1-1/2 pounds beef stew meat (1-1/4-inch pieces)
3 tablespoons all-purpose flour
3/4 teaspoon salt
2 to 4 teaspoons canola oil, divided
2 teaspoons beef bouillon granules
2 teaspoons dried parsley flakes
1-1/2 teaspoons Italian seasoning
2 cups water
1 cup Burgundy wine or beef stock
3 medium potatoes (about 1-1/3 pounds), peeled and quartered
1 cup fresh mushrooms, halved
1 medium onion, cut into 8 wedges
2 medium carrots, cut into 1-inch pieces
2 celery ribs, cut into 1/2-inch pieces
Additional water, optional

Steps:

  • Preheat oven to 350°. Toss beef with flour and salt to coat lightly; shake off excess. In an ovenproof Dutch oven, heat 2 teaspoons oil over medium heat. Brown beef in batches, adding additional oil as needed. Remove from pan., Add bouillon, parsley, seasoning, 2 cups water and wine to same pan; bring to a boil, stirring to loosen browned bits from pan. Add beef; return to a boil. Transfer to oven; bake, covered, 1 hour., Stir in vegetables and, if desired, thin with additional water. Bake, covered, until beef and vegetables are tender, 45-60 minutes.

2 lbs beef stew meat, cubed
1 (15 ounce) can tiny peas (use pea juice also)
1 cup sliced carrot (lengthwise)
2 onions, cut up
1 -2 stalk sliced celery (optional)
1 (8 ounce) can sliced mushrooms (use juice) (optional) or 2 (8 ounce) cans mushrooms (use juice) (optional)
1 teaspoon salt
1 dash pepper
1 (10 3/4 ounce) can tomato soup, thin with 1/2 cup water
1 large raw potato
1 bay leaf (optional)

Steps:

  • Put all together in large casserole dish.
  • Pour soup and pea juice over top of ingredients.
  • Make sure to have a good fitting lid for your casserole dish.
  • Cook for 5 hours at 275 to 300°F.
  • You may also use a crock pot to cook this on high for 5 approx hours or low for approx 10 hours.

  • Place stew meat, water, onion, salt, and pepper in a large stockpot. Cook over medium heat until meat is fork-tender, about 45 minutes. Do not drain.

This recipe of my grandmother's was passed to me from my mother. It is basically an "Irish Stew", keeps well and tastes very good. This stew freezes very well and would make a great make-ahead dish.

1 lb beef, cubed
2 tablespoons bacon fat or 2 tablespoons lard
1 cup all-purpose flour
2 cups beef stock
2 bay leaves
5 medium potatoes, peeled and quartered
3 medium onions, peeled and quartered
3 carrots, scraped
fresh parsley or dried parsley
salt
2 bouillon cubes (optional)

Steps:

  • For this very old recipe to work it must be made in a cast iron pot or skillet. Other pans can, of course be used, but the results are not the same. Melt the grease in the pot; coat the meat cubes with flour and add them to the hot grease.
  • Stir and fry till all sides are brown.
  • When the meat is nice and brown but not cooked, add enough water or beef stock to cover, the bay leaves, parsley, and salt. If using water you may reinforce with two bouillon cubes.
  • Cover, and cook on low for about an hour, adding water or broth as necessary.
  • When the meat is tender add some scrapped carrots, cut in half.
  • Cook these for about 20 minutes then add peeled, quartered potatoes and several peeled, halved onions.
  • Cook for another twenty minutes or until the potatoes are soft.
  • At this time the stew may be eaten, however it is really better the next day. That is the way I suggest serving it.

Reduce heat; cover and simmer for 30-35 minutes or until meat and vegetables are tender. , Combine remaining flour and water until smooth; stir into the pan.
