Steps:

  • Preheat oven to 375°F.
  • Mix together Parmesan cheese, spinach, and artichoke hearts.

2 slices fresh white sandwich bread, crusts trimmed
1 1/2 cups part-skim ricotta cheese (about 12 ounces)
1/2 teaspoon freshly grated lemon zest
1/2 teaspoon fresh thyme leaves
1 teaspoon kosher salt
Pinch cayenne
1/4 cup freshly grated Parmesan
Vegetable cooking spray
1 tablespoon extra-virgin olive oil
2 garlic cloves, minced

Steps:

  • Preheat the oven to 350 degrees F. Drain the artichoke hearts and spinach in a colander, pressing with the back of a large spoon to remove excess liquid. Set aside to drain.
  • In a food processor, pulse the bread to make medium-textured crumbs. Transfer crumbs to a small bowl and set aside.
  • Put the ricotta, zest, thyme, 3/4 teaspoon salt, and cayenne in the processor and pulse until smooth. Add the artichokes, spinach, and Parmesan; pulse until evenly mixed but chunky. Spray a 4-cup gratin dish with vegetable cooking spray. Transfer the artichoke-spinach mixture to the dish.
  • Heat the olive oil in a medium skillet over medium heat. Add the garlic, cook until aromatic and lightly toasted, about 1 minute. Stir in the bread crumbs and the remaining 1/4 teaspoon salt, cook another minute. Spread the crumbs over the artichoke-spinach mixture. Bake the dip until browned and warmed through, about 45 minutes. Serve warm.

2 heaping cups frozen artichoke quarters
One 8-ounce block cream cheese
2 heaping cups chopped frozen spinach
1 cup grated Havarti cheese
1 cup grated low-moisture mozzarella
1/4 cup heavy cream
1/3 cup mayonnaise
1 clove garlic, grated
1/4 cup grated Parmesan
1/4 cup panko breadcrumbs

Steps:

  • Preheat the oven to 400 degrees F. Drizzle the olive oil on the bottom of a 2-quart baking dish. Scatter the artichokes over the oil, set the cream cheese in the center and top with the spinach. Sprinkle with the Havarti and mozzarella and top with the heavy cream, mayonnaise and garlic. Sprinkle with the Parmesan. Bake until browned and bubbling, 33 to 36 minutes.

1 (14 ounce) jar marinated artichoke hearts
6 green onions (one small bunch)
1 (2 ounce) can water chestnuts
1 cup parmesan cheese, coarsely shredded
1 cup mozzarella cheese, shredded
3/4 cup sour cream
3/4 cup mayonnaise
5 -6 garlic cloves, chopped
1 teaspoon black pepper, freshly cracked
1 teaspoon salt (or to taste)

Steps:

  • Preheat oven to 350°F.
  • Thaw spinach and squeeze to get as dry as possible.
  • Drain jar of marinated artichoke hearts and chop coarsely. Discard marinade.
  • Thinly slice the green onions until you've cut up about 1/3 the green tops. Coarsely chop the remaining tops.
  • Chop water chestnuts coarsely.
  • Combine spinach, artichoke hearts, green onions, and water chestnuts in a large bowl until well mixed.
  • Combine sour cream (use the real thing - lite sour cream doesn't do well in this recipe) and mayonnaise with garlic, pepper, and salt.
  • Add cheeses, then blend this mixture together with the spinach mixture. Resulting dip will be very chunky.
  • Pour into lightly greased baking dish and bake for 30-45 minutes until heated through and slightly bubbly (if you're in a hurry, just nuke it for about 10 minutes -- it won't get crusty on top, but it will be hot and melty!).
  • Sprinkle with red pepper sauce, paprika, and more cracked black peppers.

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.

Kosher salt and freshly ground black pepper
16 ounces baby spinach
8 ounces whipped chive cream cheese
1/4 cup sour cream
12 ounces shredded pepper jack cheese
One 14.5-ounce bag tortilla chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Place a strainer over a medium bowl and drain the liquid from the artichoke jar into the bowl. Reserve the liquid and set aside the artichokes.
  • Add 3 tablespoons liquid from the artichoke jar to a large saute pan over medium heat along with a pinch of salt and a few grinds of pepper. Add the baby spinach in handfuls and stir until all the spinach is wilted, then cook for a few minutes, allowing the liquid to evaporate a bit.
