Moroccan Carrot and Chickpea Salad image

This moroccan inspired salad is gluten-free, easy to make, and healthy! This is a protein packed, whole-foods salad recipe, using fresh and flavourful ingredients. Finished with a deliciously spiced Moroccan Salad Dressing to drizzle.

2/3 cup quinoa
1 1/2 cup water
1/2 cup almonds (chopped)
1 shallot (small)
1 cup carrots (grated)
1 can chickpeas ((14 fl oz/400 ml))
2.5 oz arugula ((70 g))
1/2 cup mint (tightly packed)
1/4 cup dates (chopped)
1/4 cup + 2 tbsp olive oil
2 tbsp lemon juice
2 tbsp orange juice
1 tbsp maple syrup
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp cumin
1/2 tsp coriander
1/4 tsp sea salt
pinch red pepper flakes

Steps:

  • In a saucepan combine quinoa and water. Bring to a boil, then reduce to simmer and cook quinoa for 12-15 minutes. Fluff with a spoon and cover with tea towel. Let cool.
  • Toast almonds in a skillet on medium heat, stirring often until fragrant and golden browned (approx. 8-10 mins). Remove from heat.
  • Prepare dressing in a small bowl by whisking together oil, lemon juice, orange juice, maple syrup, cinnamon, ginger, cumin, coriander, sea salt and red pepper flakes.
  • In a large mixing bowl combine quinoa, chopped shallot, grated carrot, chickpeas, arugula, chopped mint and dates and toasted almonds. Pour over dressing and toss to combine

With fragrant spices, bright colors and savory flavors, this exotic twist on the carrot-raisin salad is a feast for the senses.

Number Of Ingredients 18

¼ cup extra virgin olive oil
1 teaspoon lemon zest and 3 tablespoons lemon juice, from one large lemon
¼ cup freshly squeezed orange juice, from one large orange
1½ tablespoons honey
¾ teaspoon salt
1 teaspoon ground cumin
½ teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon ground coriander
¼ teaspoon ground allspice
¼ teaspoon cayenne pepper
1 pound carrots, peeled and shredded
⅓ cup currants
½ cup slivered almonds, toasted (see note below)
½ cup chopped fresh mint or cilantro (or a combination), plus more for serving
1 (15-ounce) can chickpeas, rinsed and drained
2 tablespoons finely minced shallots, from one large shallot
1 garlic clove, minced

Steps:

  • In a large bowl (large enough to mix the entire salad), whisk together all of the ingredients for the dressing.
  • To the dressing, add all of the ingredients for the salad and toss well. Cover with plastic wrap and refrigerate for at least 30 minutes or up to a few hours. Taste and adjust seasoning if necessary (you might need more salt, lemon or honey, depending on the sweetness of the carrots). Transfer to a serving dish and garnish with more fresh chopped herbs. Serve cold.
  • Note: To toast the almonds, preheat the oven to 350°F. Place the almonds on a foil-lined baking sheet for easy clean-up. Bake for about 5 minutes, until the almonds are golden.

For lamb chops and carrots:
1/4 cup olive oil
1 teaspoon ground allspice
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
6 medium carrots, halved crosswise and quartered lengthwise
8 to 12 rib lamb chops (1/4 to 1/2 inch thick; 1 1/2 pounds total
For chickpea purée:
1 small garlic clove
1 cup canned chickpeas, rinsed
1/3 cup warm water
1/4 teaspoon ground cumin
1 tablespoon olive oil

Steps:

  • Roast lamb chops and carrots:
  • Put a 4-sided sheet pan in lower third of oven and preheat oven to 450°F.
  • Whisk together oil, spices, and 1 teaspoon salt. Toss carrots with half of spiced oil and coat chops with remaining oil. Arrange chops and carrots side by side in hot sheet pan. Roast, turning and stirring halfway through, until carrots are just tender and chops are medium-rare, 4 to 6 minutes total for lamb; 10 to 15 for carrots.
  • Meanwhile, make chickpea purée:
  • With food processor running, drop garlic through feed tube to finely chop. Add chickpeas, water, cumin, and 1/4 teaspoon salt and purée. With motor running, slowly add oil and blend until smooth.
  • Serve lamb and carrots on a bed of chickpea purée. Drizzle with pan juices.

An unlikely pairing, but I had to post this Sunset Magazine recipe as it looked so delicious. Lamb chops could definitely be used in this dish to make it more authentically Moroccan. *Make sure you use fresh mint -- it really makes a big difference. The recipe suggests getting the pan "ripping" hot before you add the chops -- that will give them their nice brown crust.

1 1/2 teaspoons honey
1 teaspoon harissa (North African spice available in the International section of the grocery store)
1/4 teaspoon cumin
6 tablespoons extra-virgin olive oil, divided
salt and pepper
2 carrots, thinly sliced
1 (15 ounce) can chickpeas, rinsed and drained
1/4 cup flat leaf parsley, coarsely chopped
6 large fresh mint leaves, chopped
4 pork chops (bone-in)
1/2-1 serrano chili, thinly sliced

Steps:

  • Whisk together lemon juice, zest, honey, harissa and cumin in a medium bowl. Add 1/4 ccup oil and season with salt and pepper. Add carrots, chickpeas, parsley and mint and toss until well combined. Set aside.
  • Season pork chops with salt and pepper. Heat a heavy stainless steel or a cast-iron skillet, large enough to hold chops in a single layer, over medium-high heat until very hot, about 5 minutes. Add pork chops and sear, without moving, until browned, about 3 minutes. Turn over and cook until just cooked through, 1 - 3 minutes, depending upon the thickness of chops.
  • Spoon half of carrot and chickpea salad onto a platter. Arrange pork chops on top and spoon remaining salad over them. Sprinkle with chile slices.

  • While the quinoa cooks, place the chickpeas and carrots in a large serving bowl. In a small bowl or measuring cup (my favorite for easy pouring), whisk together the dressing ingredients: olive oil, lemon juice, Dijon, maple syrup, chili powder, salt, and cinnamon. Taste and adjust as desired.
  • Once the quinoa has finished cooking, fluff with a fork, then add to the serving bowl. Pour the dressing over the top, just until it is moistened, then stir to combine. Add the arugula (see recipe note if not eating all of the salad within a day or so) and stir again, adding a bit more dressing as desired. Sprinkle with the pistachios, feta, raisins, and mint. Enjoy immediately or refrigerate until ready to serve.
