BREAD MACHINE CINNAMON ROLLS
You can make cinnamon rolls like Cinnabon in your bread machine with this easy recipe.

Steps:
- Place all of the cinnamon roll dough ingredients in your bread machine in the order recommended by your machine's manufacturer.
- Set the machine to run the dough cycle.
- When the cycle is finished, remove the dough and knead it enough to punch down.
- Roll out the dough to a 17 X 10-inch rectangle.
- Place butter, brown sugar, and cinnamon in a small bowl. Mix well.
- Heat the filling in the microwave for 10 seconds to make it spreadable.
- Spread the filling over the rolled-out dough with a rubber spatula. Get as close to the edges as possible.
- Sprinkle nuts and/or raisins over the dough, if using.
- Starting with the widest end, roll the dough into a tight log. Pinch the edge to seal.
- Cut the log into 1-inch slices.
- Place the slices cut-side down in a lightly greased baking dish with sides.
- Put the dish in a warm draft-free place and allow the dough to rise until double.
- Bake at 350 for 15 to 20 minutes, until golden brown.
- Place softened butter and cream cheese in a bowl. Mix together with a mixer.
- Add lemon juice, vanilla, and blend well.
- Slowly add in the powdered sugar, beating with a mixer, until all powdered sugar is incorporated.
- Spread the frosting on the cinnamon rolls when they have cooled slightly.

APPLE CINNAMON RAISIN PITAS (BREAD MACHINE)
I used to buy these breakfast "pitas" from the grocery store, but figured out how to make them at home - for a heck of alot less. They're more like small, flatbreads, and I slice them in half, toast them, and spread them with peanut butter, honey, or jam. Yum! They're not very sweet, as there isn't much sugar in them.

Steps:
- 1. Place ingredients except apples and raisins in bread machine in order that your machine specifies.
- 2. Set to "dough" setting and allow to complete cycle, adding the apples and raisins when your machine alerts you to add nuts/fruit. I actually have found that kneading these in by hand is actually easier, as they're a bit finicky to get worked through the dough.
- 3. Separate into 10 balls. Press each ball into a 4" round with your hands - you'll likely need to stuff some raisins and apples back in - it's worth it. Place on nonstick cookie sheets and allow to rise for 30 minutes.
- 4. Preheat oven to 500. Flip rounds, then place in oven for 5 minutes, flip again; turn oven down to 350 and bake for 15-20 minutes longer, until cooked through.
- 5. Remove from pan onto clean towel and cover while cooling.

BREAKFAST KOLACHES
This is a recipe that my family has created for a portable breakfast. It uses a bread machine for the dough preparation. The filling can be with a variety of things. We like the sausage, cheese, and hash browns for a breakfast meal. I prepare the recipe by filling the kolaches the night before, and keeping them in the refrigerator overnight. In the morning, I set out the kolaches to warm to room temperature while the oven is preheating, and then cook them for a quick, hot breakfast.

- In the order suggested by the manufacturer, place milk, egg, egg yolk, bread flour, salt, butter, sugar and bread machine yeast in bread machine. Select Dough cycle, and press Start.
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
- On a lightly floured surface, punch down dough, and divide into 36 pieces. Roll pieces into balls. Arrange balls in a single layer on the prepared baking sheet, about 2 inches apart. Allow balls to rise 15 to 20 minutes.
- Flatten balls, and make a depression in the center of each. Fill each with 1 piece of sausage, about 1 tablespoon hash browns, and 1 quarter slice of cheese.
- Bake 15 to 18 minutes in the preheated oven, or until lightly browned.
