You can use this recipe for beef stock also, just use beef meat and bones where it calls for moose meat and bones.

Number Of Ingredients 12

2 lbs moose (meat and bones)
10 cups water
1 onion, diced
2 garlic cloves, minced
1 tablespoon parsley, dried
2 bay leaves
1/4 teaspoon marjoram
1/2 teaspoon thyme
1/2 tablespoon salt (might need more, to taste)
1/2 teaspoon pepper (might need more, to taste)
1/2 cup carrot, chopped roughly
2 stalks celery, including leaves

Steps:

  • Cover meat and bones with water in large pot.
  • Add remaining ingredients.
  • Slowly bring to a boil, and then let it simmer for 2 to 3 hours.
  • Strain and cool in refrigerator until fat solidifies.
  • Remove fat.
  • Pour in airtight containers, store in refrigerator for up to 3 days.
  • Can be frozen.

  • Pat moose chunks dry with a paper towel (this will make for better searing). Season with 1/2 teaspoon each of salt and black pepper.
  • Turn Instant Pot to 'Sauté.'Note: Settings may vary on your Instant Pot, depending on the model. Please refer to the manufacturer's guide on how to use your Instant Pot.
  • Adjust the [+] or [-] button to set the timer to 25 minutes (adjust if you need less or more time to sear). Add 1 tablespoon of olive oil to Instant Pot.
  • Once oil is hot, add moose chunks and brown in batches (don't overcrowd the pot). Brown about 5 to 6 minutes per batch, adding 1 tablespoon of olive oil (roughly) per batch (I had 3 batches, transferring the seared chunks to a plate while continuing batches). Note: Moose is not cooked at this point, we're just adding a little colour.
