Monster Cookie Bars are naturally gluten-free and loaded with oats, peanut butter, chocolate & PB chips, and M&Ms. They require just ONE BOWL for a BIG BATCH, making this the perfect easy recipe when you need a bunch of sweet treats for a party or celebration!

4 eggs
1 1/2 cups sugar
1 cup brown sugar
3/4 teaspoon salt
1 tablespoon pure vanilla extract
2 cups (16-ounce jar) peanut butter (creamy or crunchy)
5 tablespoons butter (at room temperature)
2 1/2 teaspoons baking soda
18 ounces (1 small tub) old-fashioned rolled oats
1 cup M&Ms
1/2 cup semisweet chocolate chips
1/2 cup peanut butter chips

Steps:

  • Position rack in center of oven and preheat to 350°F. Generously butter a 18x13x1-inch rimmed half sheet pan. Set aside.
  • In a very large bowl (using a spoon or an electric mixer), mix together the eggs and sugars until well-combined. Beat in the salt, vanilla, peanut butter, and butter until smooth. Stir in the baking soda (make sure there aren't any lumps) and the oats, then add the M&Ms, chocolate chips, and peanut butter chips and mix until just combined.
  • Spread the batter into the prepared baking pan, smoothing the top into an even layer and pressing down firmly. Bake for 16 to 22 minutes or until edges are very light golden brown and center is set. Allow to cool in the baking pan before slicing and serving.

6 eggs
2 ⅓ cups packed brown sugar
2 cups white sugar
½ tablespoon vanilla extract
4 teaspoons baking soda
1 cup butter
2 ⅔ cups peanut butter
9 cups rolled oats
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • Cream butter and peanut butter together. Add the sugars and stir until well mixed.
  • Add eggs one at a time, then add vanilla.
  • Mix oatmeal and baking soda separately, then stir into batter.
  • Add chocolate chips last.
  • Drop by heaping teaspoons onto cookie sheets. Bake for 12-15 minutes.

2 cups creamy peanut butter
2/3 cup butter, softened
1-1/3 cups sugar
1-1/3 cups packed brown sugar
4 large eggs, room temperature
2-1/2 teaspoons baking soda
1 teaspoon vanilla extract
1 teaspoon light corn syrup
6 cups old-fashioned oats
1 cup semisweet chocolate chips
1 cup milk chocolate M&M's

Steps:

  • In a large bowl, cream peanut butter, butter, sugar and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs, baking soda, vanilla and corn syrup. Add oats and mix well. Stir in chocolate chips and M&M's. Cover and refrigerate 1 hour., Preheat oven to 350°. Drop by 1/4 cupfuls 3 in. apart onto ungreased baking sheets. Bake 14-18 minutes or until edges are lightly browned. Cool 5 minutes before removing from pans to wire racks to cool completely. Store in an airtight container.

1 cup margarine, softened
2 cups white sugar
2 cups packed brown sugar
3 cups peanut butter
6 eggs
1 ½ teaspoons corn syrup
1 ½ teaspoons vanilla extract
4 teaspoons baking soda
9 cups rolled oats
½ pound candy-coated milk chocolate pieces
½ pound semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the margarine, white sugar, brown sugar, and peanut butter until smooth. Beat in the eggs, two at a time, then stir in the corn syrup and vanilla. Mix in baking soda and oats until well blended. Stir in the chocolate candies and chocolate chips. Roll dough into 2 inch balls, and place 3 inches apart on an ungreased cookie sheet. Flatten slightly with a fork.
  • Bake for 12 to 15 minutes in the preheated oven. Cool on cookie sheets for a few minutes, before transferring to wire racks to cool completely.

6 large eggs
2 1/4 cups brown sugar
2 cups white sugar
1 1/2 teaspoons vanilla
4 teaspoons baking soda
1 cup butter, softened
3 cups crunchy peanut butter
9 cups oatmeal
1 1/2 cups plain M&M's
1 1/2 cups chocolate chips

Steps:

  • In very large bowl, use mixer to combine first seven ingredients--eggs through peanut butter.
  • Add oatmeal, candy, and chocolate chips and mix thoroughly by hand.
  • If dough is too sticky, either refrigerate or add another 1/2 to 1 cup oatmeal.
  • Scoop ice cream size balls of dough onto cookie sheets, with plenty of space in between.
  • Bake at 350° for 13-15 minutes. If using two racks, switch top to bottom and bottom to top about halfway through.
