Slow Cooker Barbecue Chicken Sliders - What could be better than the taste of succulent pulled chicken with caramelized onion and bacon, piled high on a warm bun?

Provided by Holly Nilsson

Categories     Appetizer     Main Course     Slow Cooker

Time 6h30m

Number Of Ingredients 7

4 chicken breasts (boneless and skinless)
18 ounces barbeque sauce
12 strips bacon
1 large onion (thinly sliced)
½ cup water
½ teaspoon salt
18 rolls ((such as Hawaiian Honey Wheat rolls))

Steps:

  • Cook bacon in a frying pan over medium-high heat until crispy and drain on paper towel.
  • Leave 2 tablespoons of bacon grease in the frying pan and add the sliced onions and salt. Cook onions until tender. Add to the bottom of a 6qt slow cooker.
  • When the frying pan has cooled a bit, carefully pour the water into the pan and gently scrape up the browned bits of bacon and onion from the bottom. Pour it into the crockpot.
  • Add chicken breasts and barbecue sauce. Stir and cook on low for 7-8 hours, or on high for 4-5 hours.
  • Shred chicken using 2 forks. Stir in half of the bacon.
  • Spoon mixture on slider buns, top with remaining bacon.

BBQ MEATBALL SLIDERS WITH BACON

BBQ Meatball Sliders with Bacon image

Bacon lovers unite! This recipe is a bacon lover's dream, with bacon 2 ways! Due to the BBQ sauce being sweet, I recommend using a spicy cheese (like habanero Jack).

Categories     Meat and Poultry Recipes     Pork

Time 40m

Yield 10

Number Of Ingredients 10

7 slices bacon
8 ounces 93% lean ground beef
½ cup panko bread crumbs
¾ cup barbeque sauce (such as Sweet Baby Ray's®), divided
1 tablespoon steak sauce
10 slices pepper Jack cheese
10 slider buns
10 slices cooked bacon
¼ cup slivered onion
¼ cup roasted red pepper, cut into strips

Steps:

  • Attach the meat grinder attachment to an electric stand mixer (such as KitchenAid®). Run enough bacon through the meat grinder to make 8 ounces ground bacon.
  • Combine ground bacon, beef, bread crumbs, 1/4 cup barbeque sauce, and steak sauce in a bowl. Mix until well combined and shape into 2-inch round balls. Set meatballs on a baking sheet.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake meatballs until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), about 25 minutes.
  • Place a slice of cheese on top each meatball. Toast slider buns if desired. Place a meatball between each slider bun. Top with cooked bacon slices, onion, remaining barbeque sauce, and roasted red bell peppers.

1/4 cup honey
1/4 cup Dijon mustard
Juice of 1 lemon
1/2 teaspoon paprika
1/4 teaspoon kosher salt
Pinch freshly ground black pepper
Pinch crushed red pepper flakes
4 chicken cutlets, each cut in three uniform pieces

1/4 cup (4 tablespoons) salted butter, melted
2 tablespoons everything bagel seasoning
6 slices bacon, cooked crisp and halved
6 slices sharp Cheddar, halved
3/4 cup ranch dressing
12 small Bibb lettuce leaves
12 thin slices Roma tomato
3/4 cup canned fried onions
1/2 cup jarred pickled jalapeños, drained

Steps:

  • For the marinade: Combine the honey, Dijon mustard, lemon juice, paprika, salt, pepper and crushed red pepper flakes in a large bowl.
  • Add the chicken cutlets and toss to coat. You can the cook the cutlets straight away or cover and marinate in the fridge for a couple of hours or overnight.

Add a slice of tomato, some fried onions and pickled jalapeños to each. Add the tops of the rolls and place a decorative toothpick through each slider. Serve.

  • Preheat a grill pan on the stove top over medium heat, or heat an outdoor grill to medium. In a large bowl combine ground beef, 2 tablespoons of the Kansas City BBQ Sauce, the salt, and pepper; mix well. Shape meat mixture into nine 3/4-inch thick patties (when shaping the patties keep the size of your buns in mind as well as the fact that the burgers will shrink quite a bit while cooking). Make a small indentation with your thumb in the middle of each burger to prevent them from "bunching up" in the middle like a meatball.
  • Grill burgers for 2 to 3 minutes and then flip. Brush the top side of each burger with some of the remaining Kansas City BBQ Sauce. Continue grilling for another 2 minutes and flip burgers again, brushing the other side with additional sauce. Continue to cook and baste 10 minutes more or until the internal temperature of the burgers reach 160°F to 165°F.
  • To assemble, lightly spread the bottom of each bun with Garlicky Blue Cheese Spread and top with a lettuce leaf. Break each bacon piece in half and place bacon halves on top of lettuce leaves. Place burger on top and drizzle with additional Kansas City BBQ Sauce if desired. Top with a small handful of Crispy Shoestring Onions. Spread remaining Garlicky Blue Cheese Spread on top halves of buns. Place bun tops atop sliders.
