Mom's Tuna Casserole with potato chips is one of those classic dishes that was on every dinner table across the country back in the day, including ours.

10.5 oz. can Cream of Chicken soup
1/3 cup milk
2 5 oz. cans, chunk light tuna, drained and flaked
1 cup peas (frozen)
1/2 teaspoon salt
2 cups egg noodles (par-cooked and drained)
1 cup potato chips (crumbled)

Steps:

  • Bring a pot of water to boil, and cook egg noodles for about 6 minutes. Drain. These will finish cooking in the oven.
  • Spray a 1- 2 quart casserole dish or an 8x8 inch dish with cooking spray.
  • Mix together soup, milk, tuna, peas, salt, and drained noodles.
  • Pour into casserole dish and top with potato chips.
  • Cook in a 350 degree F oven for 30 minutes.

This is a classic recipe that is one of my most popular. Made with simple pantry ingredients and on the table in 45 minutes, Mom's Tuna Casserole is a staple for casserole lovers.

1 ¾ cups elbow macaroni (uncooked)
1 284 mL can condensed cream soup - mushroom (chicken, celery, broccoli)
1 170 g can flaked light tuna
½ cup milk
1/3 cup red onion (finely diced)
1 cup shredded old cheddar cheese (divided)
¼ tsp EACH salt and pepper

Steps:

  • Preheat oven to 400ºF.
  • Cook pasta according to package directions, just to al dente.
  • In a bowl mix cooked pasta, soup, tuna, milk, onion, ½ cup cheese and spices. Pour mixture into a greased 1.5 qt. casserole dish and sprinkle remaining ½ cup cheese on top.
  • Bake for 30 minutes until bubbling.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.

1 (9 ounce) can tuna, drained
2 -3 hard-boiled eggs, peeled and chopped
3 cups crumbled lays vinegar potato chips or 3 cups regular potato chips
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
5 1/2 ounces water

Steps:

  • Butter a 2-quart casserole dish.
  • In sauce pan, bring water and soup to a boil, stirring occasionally.
  • Remove from heat.

¼ cup butter, or more to taste
1 small onion, diced
2 slices bacon, diced
2 (5 ounce) cans tuna, drained and flaked
¼ cup all-purpose flour
1 ½ cups chicken stock
½ cup milk
½ cup mayonnaise
2 tablespoons soy sauce
1 cup shredded Cheddar cheese
1 cup frozen corn
½ cup chopped celery
½ cup chopped cashews

1 teaspoon ground black pepper
1 sleeve buttery round crackers (such as Ritz®), crushed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch casserole dish.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
  • At the same time, melt 1/4 cup butter in a skillet over medium heat. Add onion and bacon and cook until onion is tender and bacon is crisp, 8 to 10 minutes. Add flour; cook and stir for 2 minutes. Whisk in chicken stock, milk, mayonnaise, and soy sauce until combined. Remove from the heat and transfer sauce mixture to a large bowl.

You can tell that can sized have gotten smaller over the yeas.....I had to adjust the tuna can size and the soup size both by an ounce to reflect today's packaging!

8 ounces farfalle (bow-tie) pasta
1/2 cup crushed baked potato chips (about 1 ounce)

Steps:

  • Preheat oven to 400°F. Spray 8 x 8 x 2-inch glass baking dish with vegetable oil spray. Whisk wine and cornstarch in small bowl to blend. Whisk flour in heavy medium saucepan to remove any lumps. Gradually add milk to flour, whisking until smooth. Add broth and thyme and whisk over medium heat until liquid thickens and boils, about 4 minutes. Add cornstarch mixture and whisk until liquid boils and is smooth, about 1 minute. Remove from heat. Add Neufch‰tel cheese and whisk until melted. If you're looking for a different-than-the-potato-chip-covered tuna casserole, look no further than the one I grew up with. It's almost like a strata or custard - give it a try! I've never had a better tuna casserole! It tastes even better the second day and freezes well when cut and wrapped in individual pieces. I recommend American cheese over Velveeta - tried it once and it just wasn't the same. You can use a larger can of tuna if you like.

1 pinch dried oregano, or more to taste
salt and ground black pepper to taste

3 tablespoons butter
3 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
