From Faye Hintz of Springfield, Missouri comes a new kind of fruit salad. "The thought of something chilled was so appealing to me one hot day," relates Faye. "I combined frozen and fresh ingredients. It's a treat we eat often now."

6 large firm bananas, sliced
1/4 cup lemon juice
4 cans (8 ounces each) crushed pineapple, undrained
1 package (20 ounces) frozen unsweetened strawberries, thawed
2-1/2 cups water
1 can (12 ounces) frozen orange juice concentrate, thawed
1 cup sugar

Steps:

  • In a medium bowl, toss bananas with lemon juice; set aside. In a large bowl, combine remaining ingredients; mix well. Add bananas., Pour into an ungreased 14-cup star-shaped or other mold or plastic freezer containers. Freeze for several hours or overnight. Unmold 20 minutes before serving.

1-1/2 cups boiling water
1 package (10 ounces) frozen sweetened sliced strawberries, thawed
1 can (8 ounces) unsweetened crushed pineapple
1 cup sour cream
Optional: Leaf lettuce and fresh strawberries

Steps:

  • In a large bowl, dissolve gelatin in water. Add strawberries and pineapple. Strain, reserving liquid and fruit. Set aside 1 cup of the liquid at room temperature. , Pour fruit and remaining liquid into a 5-cup ring mold or 9-in. square pan that has been coated with cooking spray. Cover and refrigerate until set, about 1 hour. , Whisk sour cream and reserved liquid; pour over top of gelatin. Cover and refrigerate until set. , Slice and place on individual plates, or unmold onto a serving platter. Garnish with lettuce and strawberries if desired.

  • In a large bowl, dissolve gelatin in boiling water; chill until syrupy. In a small bowl, combine cream cheese and pineapple; stir into cooled gelatin. , Fold in whipped cream, pecans and cherries. Pour into a 4-cup mold coated with cooking spray. Refrigerate for 3 hours or overnight.

I hate the term 'molded salad' - it sounds like something green & fuzzy. This is my mother's Jello salad recipe. Most people I know will turn up their nose when I say Jello salad but there are never leftovers. Hmmmm...... I'm not positive on the exact ounces - small boxs of jello, big can of cranberry & small can of pineapple. This multiplies easily & can be made several days ahead & kept refrigerated.

2 cups boiling water
1 (15 ounce) can whole berry cranberry sauce
1 (8 ounce) can crushed pineapple
1 cup cold water
1/2 cup mayonnaise
1/2 cup sour cream

Steps:

  • Dissolve Jello in boiling water. Add cranberry & mix well.
  • Refrigerate until almost solidly jelled. Add undrained pineapple & 1 cup cold water. Pour into a large pan or mold & refrigerate until set.
  • Serve with dressing.

1/2 lb seedless grapes, halved
4 ounces maraschino cherries, halved
1 (8 ounce) can pineapple tidbits, well drained
1 can mandarin orange, well drained (may use fresh oranges)
2 golden delicious apples, cut in chunks
2 cups mini marshmallows
1 pint fresh whipping cream
almond extract

Steps:

  • Prepare fruits and put all together in a large bowl.
  • Mix whipping cream with 6 tsp of sugar and 1/4 tsp almond extract.
  • Add a couple of tablespoons of cherry juice to make it a pretty pink and give it extra flavor.
  • Add marshmallows and whipped cream to fruit and chill until ready to serve.

1 (8 ounce) can mandarin oranges, drained
1 (8 ounce) can pineapple chunks, drained
1 cup mini marshmallows
1/2 cup chopped nuts (I use pecans)
1/2 pint whipping cream, whipped
1/2 cup sugar
1 (3 ounce) package cream cheese, softened
1/2 cup mayonnaise
1 (1 ounce) package gelatin
2 tablespoons fresh lemon juice

Steps:

  • Drain fruit, mix together and set aside.
  • Whip 1/2 pint cream, add 1/2 cup sugar and set aside.

1 (20 ounce) can crushed pineapple, drained (reserve juice)
1 (3 ounce) package Jello gelatin, any flavor
1/8 teaspoon salt
6 ounces cream cheese, softened and whipped until light
1 cup heavy cream, whipped until stiff (whipping cream)
3/4 cup walnuts, chopped
1 cup seedless grapes
3/4 cup marshmallows, diced
1/2 cup celery, diced
2 pimientos, diced

Steps:

  • Bring pineapple juice to the boiling point; add to gelatin and salt.
  • Stir until dissolved.
  • Cool; when it begins to congeal, fold in cheese and whipped cream.
  • Pour into a mold or into individual molds and chill until firm.

This is an adaptation of several slightly different recipes, but slightly different from the rest. My family LOVES it--and so does everyone else who's tasted it! This is also wonderful as a topping for belgian waffles.

2 tablespoons flour
1/2 cup sugar
2 eggs
1 (20 ounce) can pineapple tidbits, juice of
1 lemon, juice of
1 orange, juice of
vinegar (approx. 1 T)
1 grated lemon, rind of
1/2 grated orange, rind of
1/2 pint whipping cream, whipped
2 -3 apples
2 oranges
3 -4 bananas
1 (20 ounce) can pineapple tidbits (you used the juice in the dressing!)
1 cup grapes
1 cup cherries (fresh, frozen, or canned)
fruit (in season, canned, or frozen)
miniature marshmallow (to taste(I use 1/2 bag)

Steps:

  • Whisk the flour & sugar together. Beat eggs until light, and whisk in flour & sugar.
  • Drain a can of pineapple tidbits into a 2-cup measure, add the lemon and orange juices, and pour in enough vinegar to make 1-1/4 cups total liquid.
  • Add to the egg mixture. Cook in double boiler, stirring constantly, until thickened.
  • Chill thorougly, then fold in whipped cream.
  • Fold into your mixed fruit--you really can use whatever fruit you have on hand. I've added mango, pears, starfruit, kiwi, and I can't remember what all!
  • Chill and enjoy!

Steps:

  • In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Stir in sugar, orange juice and lemon juice; cook and stir 6-8 minutes or until sugar is dissolved., Transfer to a bowl; refrigerate, covered, until slightly thickened, about 1-1/2 hours. Fold in fruit. Pour into a 6-cup ring mold coated with cooking spray or a 2-qt. serving bowl. Refrigerate until firm. If using a ring mold, unmold onto a serving plate.

1 (8 ounce) package cream cheese, softened
1 cup sour cream
¼ cup white sugar
¼ teaspoon salt
1 (8.5 ounce) can crushed pineapple
1 banana, diced
1 (16.5 ounce) can pitted dark sweet cherries, drained
1 (15 ounce) can mandarin oranges, drained
1 cup miniature marshmallows
cooking spray

Steps:

  • Beat cream cheese in a large mixing bowl using an electric mixer until fluffy. Add sour cream, sugar, and salt; mix well.
  • Drain pineapple, reserving the juice. Dip banana pieces into the pineapple juice and place in a bowl. Add cherries, oranges, and the pineapple.
