MOM'S CLASSIC MEATLOAF

Meatloaf is a classic recipe that everyone should know how to make! Mom makes it best and this is just that....THE BEST! Good comfort food at its finest!

1 1/2 lbs ground beef
3/4 cup quick oats
3/4 cup milk
1 egg
1/2 cup onion, diced
1 1/4 tsp salt
1/4 tsp black pepper
2/3 cup ketchup
4 tbsp brown sugar
1 tbsp mustard

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine the beef, oats, milk, egg, onion, salt, and pepper. Use your hands to incorporate everything.
  • Transfer meat mixture into a loaf pan and press down evenly.
  • In a small bowl, combine the ketchup, brown sugar, and mustard.
  • Pour mixture evenly on top of meatloaf.
  • Place pan into preheated oven and cook for 1 hour and 15 minutes (keep an eye on it as oven temps vary).
  • Remove from oven and let stand for about 5 minutes before serving! Enjoy!

1 1/2 lbs lean ground beef
1 cup crushed cracker (Ritz)
1 small onion, chopped
1 egg
1/2 cup milk
1/2 cup catsup, divided
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large bowl, combine beef, cracker crumbs, onion, egg, milk, 1/4 cup catsup, Worcestershire sauce, salt and pepper; mix thoroughly.
  • In a shallow baking pan, shape into loaf.
  • Spread remaining catsup over top.
  • Cover and bake at 350º for 30 minutes.
  • Drain off fat and continue baking, uncovered, 30 minutes longer.

1 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound ground beef, moistened
1/2 onion, finely chopped
1 egg
2 teaspoons Worcestershire sauce
1 cup bread crumbs
1 cup ketchup

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.
  • In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.
  • Place mixture into a 1-pound loaf pan. Pour ketchup over top and place in oven.
  • Bake uncovered for 45 to 60 minutes.

2 teaspoons butter
3/4 pound ground beef
1/4 pound ground pork
1 cup minced onions
1/2 cup minced green peppers
1 tablespoon chopped garlic
2 eggs
1/2 cup heavy cream
3/4 to 1 cup bread crumbs
Salt and fresh ground black pepper
2 cups veal stock
2 tablespoons flour
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Grease a roasting pan with the butter. In a mixing bowl, add beef, pork, onions, peppers, garlic, eggs, cream, and bread crumbs. Blend thoroughly. Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.

2 lb ground beef
1 small onion chopped
1 small green bell pepper diced
1 medium tomato diced
1 large egg
2 Tbsp garlic
1 c bread crumbs, seasoned
5 slice muenster cheese
1/4 c cheddar cheese, shredded
1 pkg idahoan mashed potatos

Steps:

  • 1. Meat Mixture: Blend and mix onion,bell pepper,tomato,egg,garlic and seasoned bread crumbs. Divide meat in 4 portions.
  • 2. Need 2 loaf pans. One portion of meat mixture in each pan. 1 1/2 slice muenster cheese on top. Put remainder of meat portion on top of slice cheese. Cook for 30 @ 350.
  • 3. About the last 10 minutes make mashed potatoes. I like the garlic butter flavor mashed potatoes. Take loaves out, put mashed on top of ONE loaf & sprinkle with sharp cheddar and also on top of plain meat loaf. bake till cheese melts. Removed Potato loaf first then put second loaf (the plain one)on top of potato loaf. Put last 2 slices of muenster cheese, pop in oven till cheese melts.

1/2 lb lean ground beef
1/2 cup milk
1 (1 ounce) package onion soup mix
3/4 cup breadcrumbs
1 egg
1/4 teaspoon pepper
1/2 cup ketchup
1/2 cup maple syrup

Steps:

  • Heat oven to 350°F.
  • Combine meatloaf ingredients in a bowl. Mix well.
  • Spray a 8 x 12-inch baking dish with cooking spray.
  • Form a 9 x 4-inch loaf in sprayed baking dish.
  • Bake at 350 degrees F. for 30 minute
  • Meanwhile combine glaze ingredients.
  • Reserve 1/2 cup of glaze for serving.
  • Drizzle 1/3 of remaining glaze over meatloaf.
  • Bake an additional 15 minutes.
  • Drizzle half of remaining glaze over meatloaf.
  • Bake an 15 minutes.
  • Drizzle remaining glaze over meatloaf and bake and bake an additional 5-10 minutes.
  • Let stand 5 minutes before slicing.
  • Drizzle remaining glaze over slices when serving.

1/2 cup skim milk
1 medium onion, peeled
2 lbs ground turkey breast
1/2 cup red bell pepper, chopped
1 cup egg substitute
2 teaspoons Worcestershire sauce
1 1/4 cups ketchup, divided
1/2 teaspoon salt
pepper
1 (8 ounce) can tomato sauce
vegetable oil cooking spray

Steps:

  • Preheat oven to 350°F.
  • Spray a 9x13-inch baking dish with cooking spray.
  • In a small bowl, stir together the oats and milk.
  • Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion.
  • In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, egg substitute, Worcestershire sauce, 1/4 cup of the ketchup, salt, and pepper to taste. Mix just until well combined.
  • Transfer the mixture to a 9x13-inch pan and shape into a loaf abut 5 inches wide and 2 1/2 inches high. Sprinkle with sliced onions.
  • Bake for about 50 minutes. Top with remaining ketchup and bake for 10 minutes longer or until instant read thermometer registers 160°F.

This REALLY is my Mom's meatloaf recipe!!! I remember helping make this as a child, and hearing Mom say, "keep squeezing"!! When it was "squeezed" enough, we plopped it into an old glass casserole dish, and put it in the oven. This recipe is good for folks who can't have, or don't like, the chunks of peppers and onions that you find in most meatloaf. We even served it, listed on the menu as "Mom's Meatloaf", at my brother's restaurant. Our customers loved it! Simple AND tasty!

Number Of Ingredients 4

3 lbs hamburger
3 -4 eggs, depending on size
2 packets lipton onion soup mix
3 cups oatmeal, not instant

Steps:

  • Empty soup mix packets into a small bowl and add 1/2 to 3/4 cup WARM water, stir with fork until well dissolved.
  • Set aside.
  • Place hamburger in large bowl.
  • Add eggs.
  • Work eggs into hamburger with your hands, squeezing handsful until eggs are well mixed with the hamburger.
  • The more you work the mixture, the better the meatloaf texture.
  • Add oatmeal and continue working the mixture until the oatmeal is mixed evenly throughout.
  • Pour the set aside soup mix over hamburger mixture, and again, work through with your hands.
  • Place mixture in baking dish of your choice, and form into a loaf.
  • Cover with lid or foil.
  • Bake at 350*, BASTING OFTEN, until done.
  • Bake covered for at least 1 hour.
  • Check if done by slicing down the middle, if there is no pink meat, it's done.
  • Note: If baking in a metal pan or roaster, grease the pan-- or the bottom of the meatloaf will, as Mom says,"get like shoe leather"!

  • Preheat the oven to 375°. In a medium skillet, heat the olive oil. Add the onion and garlic and cook over moderate heat until softened, about 8 minutes. Let stand until cooled to room temperature, about 15 minutes.
  • In a large bowl, mix the bread crumbs with the milk until evenly moistened. Add the 2 teaspoons of ketchup and the onion mixture, egg, Worcestershire sauce, thyme, salt, black pepper and mustard and mix until blended.
  • In a food processor, pulse the bacon until finely chopped; add it to the bread crumb mixture. Add the ground beef, veal and pork and mix gently with your hands until evenly combined.
  • In a medium roasting pan, form the meat into a 9-by-5-inch loaf. In a small bowl, mix the remaining 1/4 cup of ketchup with the brown sugar and cayenne. Spread the ketchup over the top of the meat loaf. Bake for about 1 hour and 10 minutes, until the glaze is browned and an instant read thermometer inserted in the center of the meat loaf registers 160°. Let the meatloaf rest for 10 minutes. Cut into slices and serve.
