3/4 cup water (70° to 80°)
2 tablespoons olive oil
1 teaspoon salt
2 cups bread flour
1 tablespoon sugar
1-1/2 teaspoons active dry yeast
2 medium onions, quartered and sliced
1/4 cup butter
3 garlic cloves, minced
2 teaspoons Italian seasoning
1 cup shredded cheddar cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Place the first six ingredients in a bread machine pan in the order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1-2 tablespoons of water or flour if needed). , When the cycle is completed, turn dough onto a lightly greased 12-in. pizza pan; pat into a 10-in. circle. Cover and let rise in a warm place until doubled, about 30 minutes. , Meanwhile, saute onions in butter in a large skillet until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until deep golden brown. Add garlic and Italian seasoning; cook 1 minute longer., Make deep indentations 1 in. apart in dough, using the end of a wooden spoon handle. Top with onions and cheeses. Bake at 400° for 15-18 minutes or until golden brown. Serve warm.

3/4 cup warm water (105 to 115 degrees F)
1 package active dry yeast
1/2 teaspoon superfine or regular granulated sugar
2 tablespoons butter, melted in microwave for 1 minute
1 3/4 cups all-purpose flour
1/2 teaspoon fine salt
1/3 cup extra-virgin olive oil
3 large red onions, peeled and sliced about 1/2-inch thick
Kosher salt
1 tablespoon sherry vinegar
1 tablespoon honey
Cornmeal, for dusting baking sheets
1/4 cup extra-virgin olive oil, for brushing
About 20 sprigs fresh thyme, leaves picked
4 ounces firm plain goat cheese, roughly crumbled, refrigerated until ready to use

Steps:

  • For dough:
  • Whisk together the warm water, yeast, sugar, and melted butter in a small bowl; let stand until yeast is dissolved, about 10 minutes.
  • Whisk 1 1/4 cups flour and salt together in a medium bowl. Add yeast mixture to flour mixture and stir with a wooden spoon until mixture clumps together. Mix until incorporated. Add more flour, a little at a time, if dough is too wet.
  • Turn dough out onto a lightly floured work surface and knead until smooth and elastic, about 3 minutes. Divide dough into 12 equal pieces; roll each into a ball. Place on a flour-dusted baking sheet; cover with plastic wrap. Let rise in a warm place until doubled in size, about 45 to 60 minutes. (Dough can be made up to this point 1 day ahead. Keep covered and refrigerate.)
  • For caramelized onions:
  • Heat oil in a large nonstick skillet over medium-high heat. Add onion slices to skillet and season with 1/2 teaspoon kosher salt. Cook onions without turning until they are softened and beginning to brown, about 5 to 7 minutes. Add sherry vinegar and honey and stir well to incorporate; reduce heat to medium and continue to cook until onions are tender and brown, occasionally stirring gently, about 10 minutes. Season, to taste, with salt.
  • Remove skillet from heat and cool. (Onions can be prepared up to 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 450 degrees F.
  • Sprinkle 2 baking sheets lightly with cornmeal. Roll out each dough ball to 3 to 4-inch rounds. Transfer 6 rounds to each prepared baking sheet. Pierce dough all over with fork. Brush generously with extra-virgin olive oil. Arrange onions evenly atop each round, leaving 1/4-inch plain border. Top with thyme leaves. Bake flatbreads until crusts are puffed and golden, about 12 to 15 minutes. Sprinkle crumbled goat cheese on top of each mini focaccia. Transfer to serving platter and serve immediately.

1 tablespoon dry yeast
4 1/4 cups (about) unbleached all purpose flour
1/4 cup olive oil
2 1/2 teaspoons salt
6 ounces soft fresh goat cheese (such as Montrachet)
1/4 cup minced green onions
1 teaspoon minced garlic
1/8 teaspoon dried crushed red pepper
8 tablespoons extra-virgin olive oil
Coarse salt

Steps:

  • Place 1 cup warm water in bowl of heavy-duty mixer. Sprinkle yeast over. Stir to dissolve yeast. Let stand 10 minutes. Mix in 1 cup flour. Cover bowl with plastic wrap. Let sponge stand in warm draft-free area until foamy and doubled in volume, about 1 hour.
  • Add 1/4 cup olive oil, 2 1/2 teaspoons salt and remaining 3/4 cup water to sponge. Using paddle attachment, beat on lowest speed until blended. Gradually add 3 1/4 cups flour, beating until dough comes together, about 5 minutes (dough will be moist and sticky). Cover bowl with plastic wrap and towel. let dough rise in warm draft-free area until doubled in volume, about 1 hour.
  • Brush 2 heavy large baking sheets with oil. Transfer dough to lightly floured surface. Sprinkle with just enough flour to keep dough from sticking. Divide dough into 8 equal pieces. Shape each piece into ball; flatten each ball into disk. Transfer disks to prepared baking sheets. Let rise 30 minutes.
  • Preheat oven to 425°F. With lightly floured fingers, press dough disks all over, dimpling surface. Sprinkle disks with goat cheese, green onions, garlic and crushed red pepper, dividing equally. Drizzle each disk with 1 teaspoon extra-virgin olive oil, then sprinkle with coarse salt. Let rise 15 minutes.
  • Bake breads until golden, about 30 minutes. Transfer breads to racks. Brush each bread with 2 teaspoons olive oil. Serve focaccia warm.

We call this "pizza focaccia" in our house, as it does resemble a thick-crusted pizza. Make it when you crave a tomato focaccia and fresh tomatoes aren't in season. I like to use fire-roasted canned tomatoes for this, as they develop such a deep, double-roasted flavor when the sauce bakes on top of the bread.

1 recipe Whole-Wheat Focaccia
1 tablespoon extra virgin olive oil
1 bulb green garlic, papery outer layers removed, thinly sliced, or 2 garlic cloves, minced
1 14-ounce can diced tomatoes, preferably fire-roasted, with juice
Salt to taste
2 teaspoons fresh thyme leaves
Freshly ground pepper
2 ounces fresh mozzarella (optional)

Steps:

  • Mix up the focaccia dough as directed and set in a warm spot to rise.
  • Meanwhile, make the tomato-garlic topping. Heat the olive oil over medium heat in a medium saucepan or skillet and add the garlic. Cook, stirring, until it begins to smell fragrant, 30 seconds to a minute, and add the tomatoes and salt to taste. Cook, stirring often, for about 10 minutes, until the tomatoes have cooked down slightly to a fragrant sauce. Stir in the thyme. Taste and adjust salt, and add pepper. Remove from the heat. For a smooth sauce, blend with an immersion blender or pulse in a food processor.
  • When the focaccia dough has risen, shape as directed into 1 large focaccia or 2 smaller focacce. Cover with a damp cloth and let rise in a warm spot for 30 minutes while you preheat the oven to 425 degrees, preferably with a baking stone in it.
  • Dimple the dough with your fingertips and spread the tomato sauce over the top in an even layer. Drizzle with olive oil. Bake, setting the pan on top of the baking stone (if using), for 25 minutes, until the bread is deep golden brown. If using the mozzarella, tear it into small shreds. Bake the focaccia for 15 minutes, pull it from the oven and quickly scatter the mozzarella over the focaccia, then return to the oven for 10 minutes. Let rest for at least 10 minutes before serving, or allow to cool completely.

3 1/4 cups flour
2 1/2 teaspoons gluten flour
1 1/3 teaspoons salt

2 tablespoons melted butter
2 medium onions (cut into rings)
3/4 cup cubed ham
2 cups grated cheese
1 teaspoon italian seasoning

Steps:

  • Place the ingredients into your ABM in the order specified for your machine. Set it on the dough cycle.
  • When the dough cycle has beeped, LEAVE the dough in the machine for another 30 minutes. It will continue to rise again.
  • Preheat your oven to 190°C Grease a 9 1/2 x 13 1/2 x 1/2 inch pan with some cooking spray or a little olive oil.
  • Tip out your dough onto a lightly floured work area and roll into a rectangle to fit baking pan. You will hear all the air bubbles popping as you roll.
  • Once the air bubbles are gone, place in pan, patting it into the corners.
  • Leave to rise for 15-20 minutes. While dough is rising prepare topping.
  • Melt butter in a large skillet and sauté the onion rings on medium heat until golden and caramelized, about 6-8 minutes. Set aside to cool slightly. Have your ham cubed and cheese grated and set aside. Now back to the dough.
  • Make indentations with forefinger approximately 1 inch apart all over dough.
  • Place caramelized onions evenly over dough. Scatter the ham over, and then sprinkle the cheese on top. Sprinkle with Italian seasoning and coarsely ground black pepper.
  • Bake at 190 degrees C for 15-18 minutes.
