2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/4 cups sugar
3/4 cup butter
1/2 cup eggnog
1 teaspoon vanilla
2 egg yolks
1 tablespoon nutmeg

Steps:

  • Preheat oven to 300F. In a medium bowl combine flour, baking powder, cinnamon and nutmeg. mix well with a wire whisk and set aside. In a large bowl, cream sugar and butter with an electric mixer to form a grainy paste. Add eggnog, vanilla and egg yolks and beat at medium speed until smooth. Add the dry ingredients and beat at low speed just until combined. Do not overmix. Drop by rounded teaspoons onto ungreased baking sheets, 1" apart. Sprinkle lightly with nutmeg. Bake for 23-25 minutes or until bottoms turn light brown. Transfer to cool, flat surface immediately with spatula.

1/2 cup eggnog
1 teaspoon vanilla extract
2 egg yolks
1 teaspoon ground nutmeg
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 300°F (150°C).
  • Combine flour, baking powder, cinnamon and nutmeg.
  • Cream sugar and butter until light.
  • Add eggnog, vanilla, and egg yolks; beat at medium speed with mixer until smooth.
  • Add flour mixture and beat at low speed until just combined.
  • Do not overmix.
  • Drop by teaspoonfuls onto ungreased cookie sheet 1 inch apart.
  • Sprinkle lightly with nutmeg.
  • Bake 20 to 23 minutes until bottoms turn light brown.

1 cup packed brown sugar
4 large egg yolks, room temperature
2 tablespoons eggnog
1/2 teaspoon rum extract
3 cups all-purpose flour
EGGNOG FROSTING:
4-1/2 cups confectioners' sugar
3/4 cup butter, softened
1-1/2 teaspoons rum extract
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 to 3 tablespoons eggnog
Additional ground nutmeg

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolks, eggnog and extract. Gradually beat in flour. Refrigerate, covered, for at least 2 hours., Shape into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake at 325° until bottoms are brown, 13-16 minutes. Remove to wire racks to cool completely., In a large bowl, beat the first five frosting ingredients until blended; beat in enough eggnog to reach desired consistency. Spread over cookies; sprinkle with additional nutmeg. Let stand until set. Store in airtight containers.

Given to me my a friend, who knows a friend, etc........way back in 1987. The grinding of the oatmeal is critical. Bake these cookies on the second level from the bottom of the oven.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 tablespoon vanilla extract
2 ½ cups rolled oats
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
12 ounces semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease cookie sheets or line with parchment paper.
  • Cream butter, sugars, eggs and vanilla until very smooth and fluffy.
  • In a separate bowl, mix together flour, salt, baking powder, and baking soda. In a food processor, blend oatmeal until fine. Add to flour mixture.
  • Stir butter mixture into flour/oatmeal mixture. Blend well.
  • Add chocolate chips and walnuts. Stir until blended. Roll into golf balls size and bake for 8-10 minutes. You do not want to over bake these.

2 cups all-purpose flour
¼ teaspoon salt
¾ cup white sugar
1 egg
1 teaspoon vanilla extract
¼ cup colored sugar for decoration
¾ cup butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl combine the flour and salt with a wire whisk. In a large mixing bowl cream the butter and sugar with an electric mixer on medium speed. Add the egg and vanilla, and beat until well blended. Scrape down sides of bowl, then add the flour mixture. Blend on low speed just until combined. Do not overmix.
  • Gather dough into a ball. Flatten the ball into a disk and wrap tightly in plastic wrap or a plastic bag. Refrigerate one hour until firm.
  • On a floured surface, roll out dough to a 1/4 inch thickness. With cookie cutters, cut dough into desired shapes and place on ungreased cookie sheets. Decorate with colored sugars or sprinkles. Bake for 13-15 minutes, being careful not to brown. Immediately transfer cookies with a spatula to a cool, flat surface.

Number Of Ingredients 13

2 cups butter
2 cups sugar
2 cups packed brown sugar
4 large eggs
2 tablespoons vanilla
4 cups flour
5 cups oatmeal (put in blender and make into flour)
1 teaspoon salt
4 teaspoons baking powder
4 teaspoons baking soda
2 (12 ounce) bags chocolate chips
8 ounces Hershey Bars, grated
3 cups nuts, any kind of nuts (optional)

Steps:

  • Cream together butter, sugar and brown sugar.
  • Add eggs and vanilla and mix well.
  • Mix together flour, oat flour, salt, baking powder and baking soda.
  • Stir in chocolate chips, grated Hershey bar and nuts (if using).
  • Drop by 1 1/2" balls onto ungreased cookie sheet.
  • Bake at 375° for 6-10 minutes.
  • NOTE: If you want your cookies to spread out a bit more, flatten them a bit before baking.
  • Cookies will be soft but will firm up a bit after cooling.
