- Pat the shrimp dry and season with kosher salt. Set aside for now.
- Heat the extra virgin olive oil over medium heat until shimmering but not smoking. Add the garlic and red pepper flakes. Cook over medium heat up to 60 seconds or until the garlic gains some color (be careful not to burn it).
- Add the shrimp and paprika. Cook briefly, tossing regularly, and watching that the flesh turns opaque with a pearly pink color (about 3 minutes or so; this will depend on the size of the shrimp). Remove the pan from the heat.
- Stir in sherry, lemon juice and parsley.
- Transfer the shrimp and sauce to a serving bowl. Serve with your favorite crusty bread.

- Gather the ingredients.
- In a large (12-inch) sauté pan or heavy frying pan, warm the olive oil over medium heat.
- Add the garlic and red pepper flakes, lower the heat, and sauté for about 1 minute or until the garlic just begins to brown. Be careful not to let it burn.
- Raise the heat to high and immediately add the shrimp and lemon juice, along with the brandy and paprika, if using. Stir well to coat the shrimp and sauté until the shrimp turn pink and start to curl, 3 to 5 minutes. Remove from the heat and season to taste with salt and freshly ground black pepper.
- Transfer the shrimp to a warm plate and pour over the sauce, or you can serve straight from the pan. Sprinkle with the chopped parsley and serve with slices of fresh bread. Enjoy.

ROASTED SHRIMP SALAD

- Preheat the oven to 400 degrees F.
- Peel and devein the shrimp. Place them on a sheet pan with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss together. Spread the shrimp on one layer and roast for 6 to 8 minutes, just until pink, firm and cooked through. Allow to cool for 3 minutes.
- Meanwhile, make the sauce. In a large bowl, whisk together the mayonnaise, orange zest, orange juice, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper. When the shrimp are cool, add them to the sauce and toss. Add the dill, capers, and red onion and toss well. The flavors will improve if you allow the salad to sit at room temperature for 30 minutes. Otherwise, chill and serve at room temperature.
SALT-COOKED SHRIMP (GAMBAS A LA SAL)
This ingenious shrimp-cooking method comes from a restaurant near Valencia in Spain. It involves cooking whole shrimp in their shells in a cast-iron skillet on a bed of salt, which heats the crustaceans gently and evenly, leaving them with plenty of flavor. Leaving the shells on preserves the flavor and juices. When the shrimp are of impeccable quality as they are on coastal Spain, no sauce is necessary. But if you like, make a simple vinaigrette with a third of a cup of fruity olive oil, juice of one lemon, two crushed garlic cloves, and a few tablespoons of minced parsley. - Spread the salt evenly on the bottom of a heavy 12-inch skillet, preferably cast iron. Heat the skillet over medium-high heat until the salt is very hot and almost beginning to smoke. SALT ROASTED SHRIMP

- Divide salt evenly among 2 (9 by 13-inch) metal pans divide salt evenly. Heat your oven to 400 degrees F and put the pans of salt into the oven to heat. When the oven reaches 400 degrees F, allow the salt to continue heating for another 15 minutes. After 15 minutes have passed, put the shrimp on top of the salt in 1 of the pans. Then cover with all of the salt in the second pan. The shrimp should be evenly and completely covered. Roast for 8 minutes. Remove from oven and check 1 shrimp for doneness. The shrimp should be opaque and white and pink in color. If not done, return to oven for 1 to 2 minutes. Serve immediately.

- Soak the shrimp in a large bowl of salty cold water for 20 minutes. Rinse thoroughly and pat the prawns dry with paper towels.
- Heat a generous quantity of vegetable oil in a deep-fryer to 350F then fry the shrimp for just 20 seconds, working in batches if necessary. Drain on paper towels.
- Lightly coat a wok with some oil and stir-fry the scallions, garlic and ginger.
