SLOW-COOKER SPICY CHICKEN CURRY



Slow-Cooker Spicy Chicken Curry image

A simple made-from-scratch curry, slow cooked to intensify the heat and flavour.

Number Of Ingredients 21

1 tbsp vegetable oil
1 large onion (peeled and chopped)
3 chicken breasts (boneless and skinless diced (approx 500g/17.5 oz) )
3 cloves garlic (peeled and minced)
1 large piece of ginger (about the size of your thumb, peeled and finely chopped)
1 tsp salt
½ tsp ground black pepper
3 tsp hot chilli powder (use less or mild chilli if you don't like your curry too hot)
1 tbsp ground coriander
½ tbsp cumin
1 tbsp curry powder
1 tsp paprika
1 tsp cinnamon
240 ml (1 cup) chicken stock ( (water plus a stock cube - or bouillon for gluten free - is fine))
400 g (14 oz) tinned chopped tomatoes
2 tbsp tomato puree/paste
2 tsp sugar (this is to counteract the acidity in the tomatoes)
400 ml (14oz) can full-fat coconut milk
2 tbsp cornflour (cornstarch) (mixed with 5 tbsp cold water to make a slurry - *optional*)
Boiled rice
Chopped coriander (cilantro) and finely chopped chillies

Steps:

  • Preheat your slow cooker (crockpot) to high. Heat the oil in a large pan (or the Crock Pot if it has a sear function), add in the onion and cook on a medium heat for 5-6 minutes until softened.
  • Add the chicken and cook for 3-4 minutes until just sealed.
  • Add in the garlic, ginger, salt, pepper, chilli powder, ground coriander, cumin, curry powder, paprika and cinnamon.
  • Stir to coat the chicken and cook for 1-2 minutes.
  • Add in the stock, tinned tomatoes, tomato puree, sugar and coconut milk.
  • Stir, bring to a gently bubble then pour into your slow cooker and cook for 3-4 hours on high or 5-6 hours on low.
  • Take the lid off and give everything a stir (the oils will have risen to the top, so you can spoon most of it out, or just stir it back in).
  • If you would like to thicken the curry, stir in the cornflour slurry. This is optional, you can leave it out if the curry thickness is to your liking.
  • Sprinkle with coriander (cilantro) and serve with rice.

I developed this while trying to create a crockpot friendly Chicken dish made with ingredients similar to those in some Moroccan and Syrian recipes I've seen... I needed something I could prepare in bulk for a holiday party. I only used 1 onion and diced it to make it more kid-friendly. I'm happy with the results and the feedback from the group was VERY positive. Hope you enjoy it!

4 tablespoons olive oil, divided
5 1/2-6 lbs boneless skinless chicken breasts, visible fat removed, cut into bite sized pieces & or
boneless skinless chicken thighs
1 -2 large sweet onion, sliced (or diced)
6 -8 large garlic cloves, minced
2 cups pitted prunes, quartered
1/3-2/3 cup apricot preserves (more for sweeter entree)
1/4 cup honey
1 tablespoon ground ginger
1/2 teaspoon ground turmeric
1 teaspoon ground cinnamon
4 teaspoons ground cumin
4 teaspoons ground coriander
1 teaspoon white pepper
1/2 teaspoon ground black pepper
1 teaspoon salt
5 teaspoons chicken bouillon
2 -3 cups water
1/2 cup lemon juice
3 cinnamon sticks, 3 inch pieces

Steps:

  • Cut chicken into bite-sized pieces, removing all visible fat.
  • Heat 3 TB olive oil to med-high in large skillet to cook chicken pieces. When cooked through (~10 minutes); transfer to crockpot (set at High to cook in 3-4 hours or Low to cook 8+ hours).
  • While chicken cooks, slice/dice onion.
  • Heat remaining 1 TB olive oil to med-high in same skillet and saute onion until translucent (~5 minutes); transfer to crockpot, mixing in well.
  • In 1 quart mixing bowl combine: Minced garlic, prunes, apricot preserves, honey, ginger, turmeric, ground cinnamon, cumin, coriander, white and black pepper, salt, chicken bullion. Add 2 cups water and mix thoroughly; pour over chicken-onion mix in crockpot and stir to combine. Can add additional cup of water, if more soup-y consistency is desired.
  • Stir in lemon juice and cinnamon sticks, cover and let cook desired time (3-4 hours at High, 8+ hours at Low). Can be served soup-y over rice or couscous, left cooking longer to thicken sauce OR --.
  • OPTIONAL QUICK THICKENING: after cooking time, turn crockpot to low; drain liquid to large-ish sauce pan (leave a bit in crockpot to keep chicken/etc. from sticking). Bring to boil and cook 'till reduced to gravy like consistency. Place chicken on platter and serve with rice or couscous and sauce on the side.

Someone brought me this after I had baby #3 and I loved it and had to have the recipe. It was not only simple but the kids all love it. You can substitute Low Sodium and or low fat ingredients for the soup and Cream Cheese if needed. We like to serve it over rice with a side salad. I doubted the gal when she told me to just throw in the frozen chicken with the dry seasoning on top but it cooks perfect every time.

4 frozen boneless skinless chicken breasts
1 (1 ounce) packet Good Seasonings Italian salad dressing mix
1 (10 1/2 ounce) can cream of mushroom soup
1 (8 ounce) package cream cheese
1/4 cup milk (or more as needed)

Steps:

  • Place frozen chicken in the crockpot and sprinkle with packet of dry Italian Dressing mix. Cover and set on low if you need to for 6 hrs, but if you want it done faster, 4 hours.
  • After cook time, open lid and shred chicken using two forks.
  • Add Cream of mushroom soup and cream cheese and mix adding milk as needed to get the right texture.
  • Cover and let sit for another 20-30 min or until warm. Serve over Rice or noodles.

1/2 cup oil (of your choice)
1 1/2 tablespoons lemon juice
1 large garlic clove (minced)

Steps:

  • Place chicken in shallow baking dish.

4 -6 boneless skinless chicken breasts
1 (24 ounce) jar spaghetti sauce, any flavor (I love marinara or plain old traditional!)
1 1/2 cups shredded mozzarella cheese (or use fresh if you prefer)
1 teaspoon garlic powder
1 teaspoon italian seasoning
1 teaspoon onion powder
2 tablespoons olive oil, . (or whatever you have on hand(canola always works well)

Steps:

  • Brush thawed chicken breasts with olive oil. *Note: use tenderloins or half the chicken breast if they are too large.
  • Combine all seasonings, and sprinkle chicken breasts on both sides.
  • Brown chicken breasts over the stove, turning once. Cook approximately 10 minutes on med-hi heat on each side. For thinner breasts, reduce time by 5 minutes.
  • Add spaghetti sauce to the pan, covering the chicken.
  • Let sauce simmer on med-low heat for 15-20 minutes or until chicken is thoroughly cooked, if not already.
  • Top chicken pieces with mozzarella cheese and cover. Cook for 5-8 minutes more until cheese is melted.
  • Serve with pasta or caesar salad!
