Steps:
- Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
- Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
- Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
- Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

INDIAN PORK CHOPS AND RICE
I absolutely loved these as a kid, and I still do today. Boneless porkchops work best for this recipe. I use a short grain stickie rice so it stays moist. EDITED May 30, 2007 to correct amount of salt!

Steps:
- Grease 10 x 13 dish and preheat oven to 350 degrees.
- Note - If using regular table salt, reduce amount by at least half.
- In a large skillet, sprinkle pork chops with spices, brown in oil and drain. Set aside.
- Mix rice and mushroom soup.
- Slice onions into 1/4" to 1/2" thick slices and slice tomatoes into 1/2" thick slices.
- Put pork chops into baking dish and spread onion slices out on top. Sprinkle a pinch of kosher salt over the onions.
- Place the tomato slices over the onions and sprinkle a pinch of kosher salt on them as well.
- Spread the rice mixture over the tomatoes. I drop by large spoonfuls and just sort of press into place so the tomatoes are not rearranged.
- Bake, uncovered. For 3/4" thick pork chops, bake for 3/4 of an hour. For 1" thick pork chops, bake for 1 hour.
- Serve with a spatula leaving the onions, tomatoes and rice in place on top of the pork chops.

Steps:
- Pat pork chops dry with a paper towel. Season liberally with salt and pepper on all sides.
- Heat butter and oil in a large skillet over medium heat. Brown pork chops on both sides (about 2-3 minutes per side). Remove pork chops from the skillet; drain fat off the pan, but leave browned bits in the bottom (you don't need to wipe it clean).
- Add water, celery, onion soup mix, and garlic powder; stir to combine, scraping up the browned bits from the bottom of the pan to add flavor to the sauce. Return pork chops to the skillet; cover, and cook over low heat for about 15-20 minutes (or until the pork chops reach an internal temperature of 145 degrees F). Remove chops from the skillet and set aside on a plate.
- In a separate bowl, toss mushrooms with flour.
- Add mushrooms and flour, parsley, and milk to the skillet. Whisk and cook over low heat, just until sauce thickens (about 2 minutes). Return pork chops to the skillet and heat just until warmed through. Spoon sauce over chops and serve with cooked rice. Garnish with fresh parsley, if desired.

MOM'S INDIAN PORK CHOPS & RICE
I don't even like pork chops and I LOVE these! This is Mom's recipe, the only way I'll eat pork chops. Mom used bone-in pork chops, but it's easier to serve if you use boneless. See my sister puppitypup's variation, Recipe #182540.

Steps:
- Preheat oven to 350 degrees. Grease 9" X 9" casserole pan. Start rice cooking.
- Rub pork chops with dry mustard and cloves, brown on both sides in skillet with 1 tsp olive oil. Arrange pork chops in pan. Place one onion slice and then one tomato slice on top of each pork chop.
- Drain mushrooms (retain liquid), set mushrooms aside. Mix soup, mushroom liquid and water. Add to rice and mix well. Cover entire dish with rice mixture, being careful not to dislodge the onions and tomatoes from the chops, and filling in between chops so that there are no gaps. Spoon sliced mushrooms over top of rice mixture.
- Bake, covered, at 350 degrees for 55-65 minutes.
- Serve with a spatula to preserve your nice chop/tomato/onion stack.

- Place pork, sliced onions, garlic, ginger, ground turmeric, ground coriander, garam masala, red chili powder and coconut slices (if using) in a pressure cooker. Toss to coat pork in the ground spices. Season with salt. Cover the pressure cooker, and cook for about 5-6 whistles.
- Alternatively, you can cook pork over the stove top. Place all the ingredients in a large pan. Pour in 1 1/2 cups water. Cook over medium-high heat for about one hour or until pork is tender and cooked through.
- To make the tempered spices, heat oil in a large frying pan over medium-high heat. Stir fry bay leaves, cinnamon stick and fennel seeds.

MOM'S TENDER AND JUICY PORK CHOPS
Brining the pork chops really makes a difference in this recipe. Once fried, they're tender and flavorful with a thin layer of crust. After they're fried, the pork chops simmer in a simple gravy filled with fresh onions and garlic. This is an easy to throw together dinner that requires very little work and is big in flavor. The...

Steps:
- 1. Place all brine ingredients in a plastic bowl that has a tight-fitting lid. Stir. Add pork chops. Cover and keep in the fridge for at least 4 hours. (I know this is an extra step but it really makes the pork chops super tender.)
- 2. Remove pork chops from brine and pat dry with a paper towel.
- 3. Dip pork chops in egg wash.
- 4. Then Italian bread crumbs to coat.
- 5. Heat oil in a large skillet. Just enough to coat the bottom. Fry pork chops in the skillet for approximately 3 minutes per side. They should be a nice golden brown.
- 6. Then set them aside.
- 7. Remove oil from skillet leaving approximately one tablespoon. Add the onions to the skillet and saute on medium heat until translucent - about 5 minutes. Add the minced garlic and cook for one more minute - stirring.
- 8. Add the chicken broth and white wine.
- 9. Add seasonings to the skillet. Simmer over low heat for about 5 minutes.
- 10. Put the pork chops back into the skillet with the chicken broth mixture. I place them around the sides of the skillet overlapping slightly to form a circle.
- 11. Cover and cook over low heat for approximately 20 minutes. Serve over rice or noodles.

- If using electric skillet, preheat to 350 degrees. Otherwise preheat oven to 350 degrees and grease a baking dish large enough to hold all your pork chops.
- If rice has been in fridge, heat in microwave until warm. Combine rice with soup and water, set aside.
- Slice onions into 1/4" thick slices and tomatoes into 1/2" thick slices. Rub seasoning into pork chops. (I use the lesser amount of cloves. Salt and pepper as you normally would in a recipe using condensed soup.)
- Drizzle about 1 tablespoon of oil into skillet and sear chops on both sides. If using an electric skillet, reduce temp to the lowest setting. Otherwise, place pork chops in baking dish.
