JOOLS' GORGEOUS GRANOLA
This is a great recipe to make in a big batch. We don't really eat bowlfuls of it, but instead use it to sprinkle on top of yoghurt or porridge to give it a bit of sweetness and crunch, so it's always handy to have some in an airtight container, ready and waiting

Steps:
- Preheat the oven to 160ºC/325ºF/gas 3.
- Roughly chop the nuts and apricots, then place into a large bowl. Add the remaining dry ingredients and mix together.
- Drizzle over the maple syrup and finely grate over the orange zest, then stir well to coat everything.
- Spread out over a large baking tray in an even layer - split it between two, if it's easier.
- Pop into the hot oven for 20 to 25 minutes, or until turning golden, stirring every 10 minutes or so to stop it from catching. Bear in mind that the granola will harden up and go crunchy as it cools, so don't be tempted to cook it for too long.
- Leave to cool completely, then tip into airtight storage jars and use as and when you need it - it will keep quite happily for up to 4 weeks.

MOM'S SIMPLE GRANOLA
My Mom literally makes this granola every other day. It barely makes it off the cookie sheet before it is gone. Great as a cereal with milk, as a snack, as a topping to yogurt, OR dare I say, a topping to create fruit crisp. I like to make mine with milk chocolate chips or dried cranberries, but you can add any extras you like!

HOW TO BE A "CRUNCHY" MOM IN 12 EASY STEPS
From scarymommy.com
- ORGANIC. You must use this in every sentence when you are discussing food. All Natural – that don’t cut it. Must be organic. From farm to table.
- Cloth diapers are your only option. You cannot use disposable diapers; they contain chemicals that will, for a fact, make your child’s butt fall off.
- Vaccinations. HELL NO! You scream this. Your child is no lab rat. Plus, they eat only organic foods … so they will never be ill.
- Snacks. Since no one has invented an organic Oreo yet, your child must eat things like black bean tortilla chips, veggie straws that taste like packing foam, and dried kale chips for his snack at school.
- Family Bed. You only thought sleeping was something you did alone or only with your husband. No no. In a granola household, you share your “family bed,” because even though you stay home full time with your children (another granola must), you feel the need to see them when you sleep too.
- Plastic. You hate plastic. You do not store food in plastic, only glass containers. Your kids can only play with wooden toys. No plastic.
- Home school. This is strongly encouraged because statistics show that if your children attend public schools, they will become pregnant, hooked on drugs or die of an incurable disease.
- Spanking. You shouldn’t. Reading your children poetry about kindness and people’s inner souls should be the only form of punishment in your home. Some moms, depending on their level of crunchiness, accept the method of “time-out.”

- Heat oven to 300°F, with 2 racks. In a very large bowl, stir together oats, flakes, salt, and nutmeg. (Split into two bowls if needed.)
- In a medium saucepan, combine oil, honey, molasses, and water. Warm over heat medium heat, until hot. (Heating the liquid mixture makes it much easier to stir thoroughly into the dry mixture.)
- Pour warm liquids over dry mixture. Stir well to fully incorporate and moisten. Divide evenly between 2 large, rimmed baking sheets. Bake 15 minutes. Use a pancake spatula to move and turn the granola on both pans, taking care to move the granola closest to the edges of the pans where it bakes more quickly. Spread out evenly again. Continue to bake, and turn every 15 minutes, until the granola is dry and crisp, 45 to 55 minutes total. Granola will continue to crisp as it cools to room temperature on the pans. Cool completely. Stir coconut and apricots into granola.
