SWEET POTATO BAKE WITH CRACKLIN' OAT BRAN

Sweet Potato Bake With Cracklin' Oat Bran image

Ingredients

2 (24-ounce) cans sweet potatoes drained and mashed (about 3 1/3 cups)
5 tablespoons margarine divided
1/4 cup orange juice
1/2 teaspoon salt
3 tablespoons brown sugar divided
2 cups miniature marshmallows divided
1 cup Cracklin' Oat Bran® sweet, baked whole grain oat cereal
1/4 teaspoon cinnamon

Steps:

1. In large mixing bowl, combine sweet potatoes, 4 tablespoons of the margarine, orange juice, salt and 2 tablespoons of the brown sugar. Beat until smooth. Stir in 1 cup of the marshmallows. Spread in 10 x 6 x 2-inch (1 1/2-quart) glass baking dish coated with cooking spray. Top with remaining marshmallows.2. Melt remaining 1 tablespoon margarine. Combine with KELLOGG'S CRACKLIN' OAT BRAN cereal, remaining 1 tablespoon brown sugar and cinnamon. Sprinkle over marshmallows.3. Bake at 350°F about 30 minutes or until thoroughly heated.

4 large sweet potatoes
4 tablespoons unsalted butter
1 teaspoon coarse salt
1/4 teaspoon ground black pepper

Steps:

Preheat oven to 375 degrees with rack in center position.
Scrub and pat potatoes dry. Pierce potatoes all over with the tines of a fork and bake in oven, directly on rack, until soft and caramelizing, 1 1/2 hours.
Slash the tops of potatoes open with the tip of a sharp knife and push ends of each potato toward each other to open. Divide butter, salt, and pepper among potatoes and serve.
