CHEESY SEAFOOD ENCHILADAS

- Preheat oven to 350°. In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until crisp-tender, 3-4 minutes. Add shrimp and snapper; cook until shrimp turn pink, 5-7 minutes. Remove from pan., In the same pan, cook and stir salsa, cream cheese, chiles and salt over medium heat just until cream cheese is melted. Stir in 1 cup shredded cheese; remove from heat., Spread 1 cup cheese sauce into a greased 13x9-in. baking dish. Gently stir remaining cheese sauce into shrimp mixture. Place 1/3 cup shrimp mixture off center on each tortilla. Roll up and place in prepared dish, seam side down. Sprinkle with remaining cheese., Cover and bake until heated through and cheese is melted, 20-25 minutes. Sprinkle with cilantro before serving.

Steps:
- Preheat oven to 350 degrees. Melt butter in deep skillet on medium heat.
- Add onion, crab meat, shrimp, salt, pepper and saute until onions are clear.
- Add cilantro, sour cream and 1 cup cheese.
- Blend and reduce heat to low.
- Add few shakes of hot sauce and blend.
- Separate crab mix evenly into 4-6 servings in pan.
- Place one section of filling down middle of burrito, then wrap and fold.
- Add to the dish fold side down and repeat.
- Pour enchilada sauce over center of wraps and top with cheese.
- Bake 25-30 min.
- Serve with sour cream & green onions for garnish

Picked this recipe up from a co-worker many years ago. She brought it to one of the office carry-ins & it was a big hit. Everyone asked for the recipe! My family loved it just as much & I'm often asked to prepare them to bring to family gatherings. Easy & delicious. Don't let the cream of mushroom soup put anyone off. Unless you know its there, you won't know its there. :)

- brown ground beef & drain excess fat.
- mix taco seasoning into meat according to package directions.
- in a separate pan, combine & warm soup, sour cream, & rotels.
- Stir 2/3 of soup mixture into meat (consistency should be creamy without being runny).
- fill tortilla's with beef mixture & roll enchilada style (both ends closed).
- pour remaining soup mixture over enchiladas.

- Mix together the first 5 ingredients.
- Slice muffins in half horizontal.
- Spread each muffin half with the cheeze/crab mixture.
- Place under broiler and brown (WATCH CAREFULLY SO IT DOESN'T BURN).
- Cut each muffin half into quarters when cool enough to handle.
- (I keep a bag of these in the freezer for when unexpected guests show up. Just broil as instructed above, place on a cookie sheet to freeze, then transfer to freezer bags. When guests arrive, place in microwave to heat up and then serve).

Steps:
- Bring beef stock to a boil.
- Add rice, cover and lower heat, cook for 20 minutes.
- Heat olive oil over medium heat.
- Add onions to oil and cook until translucent.
- Add ground beef to the onions and break it up using a spatula or wooden spoon, stir occasionally until browned.
- Drain off excess fat.
- Add water and taco seasoning.
- When rice is finished stir and add to meat.
- Heat a grill pan over medium high heat.
- Microwave tortillas in on a plate covered with a damp paper towel on high for 30 seconds.
- Place a mound of the meat and rice mixture in the center of the tortilla.
- Cover with a layer of shredded cheese.
- Add a spoonful of sour cream on top of the cheese.
- Fold the tortilla into a burrito.
- Place the burrito on the heated grill pan and cover with a bacon press or other heavy object, let cook for a couple of minutes, just long enough to get grill marks.
- Turn the burrito over and place the bacon press on top and cook for another 2 - 3 minutes.
- Serve (my son likes a spoonful of sour cream on the side as well).
