- Mix beer, ketchup and brown sugar. Sprinkle pork chops with salt and pepper., In a large skillet, heat oil over medium heat; brown chops on both sides. Add beer mixture to pan; bring to a boil. Reduce heat; simmer, uncovered, until a thermometer inserted in pork reads 145°, 1-2 minutes. Remove chops from pan; keep warm., Return sauce to a boil; cook and stir until slightly thickened. Serve over pork.

- Sprinkle pork chops with pepper. In a large skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned. Remove and keep warm. , Add the water, vinegar, brown sugar, soy sauce and Worcestershire sauce to skillet; stir to loosen browned bits. Bring to a boil. Combine cornstarch and cold water until smooth; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. , Return chops to the pan. - Heat oil in a large skillet over medium-high heat. Season pork chops all over with salt and black pepper and add to hot pan. Cook chops 2 minutes per side, until golden brown. Add apricot preserves, soy sauce and ginger and bring to a simmer. Partially cover and simmer 5 minutes, until pork is cooked through. Remove from heat and stir in scallions.

Steps:
- First mix all the spices.
- Then put half of the spice mixture and the garlic cloves on the pork chops. Leave them for 1 hour.
- Brown the pork chops in a skillet with the oil and then put them in a casserole dish.Add the remaining spice mix.
- Put the butter in the skillet then the maple syrup and arrange the onion rings. Cook until tender.
- Place the onions on the pork chops.
- Add half of the coke in the skillet and then add the apple and cook until tender.
- Place the apples on the pork chops and add the remaining coke.
- Cover with foil and place in the oven for 40 minutes at 330°F.

SWEET RUSSIAN PORK CHOPS
My Mom used to make this when I was young. I thought it was fancy french cookin!! This is an easy make ahead recipe that people just love when comfort food is on the menu. You could substitute boneless breast of chicken that is less then 1 inch thick or even halibut!! I make this from start to finish in a large oven proof skillet but if you don't have one, you can transfer from a regular skillet to a baking dish to finish.

- Preheat oven to 350.
- Season pork chops with salt,pepper, paprika mixture on both sides.
- Heat skillet on a med flame with 1 tbsp oil and saute sliced onion rings till lightly carmelized
- Turn heat lower and add garlic and saute for another 2 mins taking care not to burn garlic.
- Remove onion/garlic from skillet and set aside.
- Return skillet to med-high flame and add 1 tbsp oil and brown pork chops on both sides, usually 3-4 mins per side.
- Turn heat to med and pour 1 cup Russian dressing over meat and add onions/garlic back to skillet and toss well to coat.
- ~~Also at this point you can put the pork chops etc away to freeze or refridgerate - to bake later.
- (At this time you could put scalloped potatoes in oven).
- or.
- Put skillet in preheated oven or transfer to oven proof dish (ensure you have sprayed it with non-stick spray.
- Cover and bake for 45 minutes.
- At this time you can remove cover and add another cup of dressing and bake for the last 15 minutes.
- Serve this dish with scalloped potatoes or buttered noodles or rice and a nice salad with a creamy type dressing to off set the sweetness of this dish.
- Oh and please enjoy.

EASY SWEET AND SOUR PORK CHOPS
Being a busy single mom, I look for recipes that are quick, simple and don't have 100 ingredients. This one fits the bill to a T. I've served it to my picky parents and sisters who loved it and my 6 year old always asks for seconds (and even thirds at times)! Original recpie called for equal parts of wet ingredients, but I found it too salty and reduce the soy sauce slightly.
