1 cup shortening
2 cups sugar
4 large eggs, room temperature
2 teaspoons lemon extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
GLAZE:
1-1/2 cups confectioners' sugar
1 tablespoon grated orange zest
5 tablespoons orange juice
1 tablespoon grated lemon zest
5 tablespoons lemon juice
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., Cream shortening and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Beat in extract. In another bowl, whisk together flour, baking powder, salt and baking soda; add to creamed mixture alternately with buttermilk, beating after each addition., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. , Poke holes in warm cake using a fork or wooden skewer. Mix glaze ingredients; spoon slowly over cake. Cool 15 minutes before removing from pan to a wire rack; cool completely.,

This came in a pamplet in the free Hallmark Magazine. You can use this basic recipe for a layer cake with icing, cupcakes or a sheet cake with icing or a glaze. I wanted to keep so am posting here. Prep time is a guess as I have not personally made this cake yet. Makes two 8-inch round or square layers, or two dozen cupcakes, or one 9 x 13 x 2 inch cake or 10 muffin-size cupcakes

3/4 cup unsalted butter, softened
1 1/2 cups sugar
3 large eggs, at room temperature
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup buttermilk, at room temperature
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 350 with rack in the middle of the oven. Butter cake pans and line the bottoms with wax paper or parchment paper cut to fit. Butter the paper. If making cupcakes, use paper liners or butter the cupcake pan.
  • Beat the butter and sugar at medium speed with electric mixer until light and fluffy in a large mixing bowl. Beat in eggs one at a time. Scrape bowl and beaters to incorporate.
  • Sift the flour with the baking powder and baking soda. Add one quarter of the dry mixture to the butter-egg mixture and then add the vanilla and a third of the buttermilk. Repeat beginning and ending with the flour mixture and scraping well after each addition.
  • Pour the batter into the prepared pans and spread to the edges with a spatula. Bake 25 to 30 minutes or until a toothpick inserted into center comes out clean.
  • Cool in pans of a rack for 5 minutes. Turn pans onto the rack, remove parchment paper or was paper and cool completely before frosting.

4 ounce package sweet German cooking chocolate, broken into 4 pieces
2 1/3 cups sifted cake flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup unsalted butter, softened
1 cup buttermilk
1 teaspoon vanilla
2 large eggs
1 cup evaporated milk
1 cup sugar
3 large egg yolks, lightly beaten
1/2 cup unsalted butter
1 teaspoon vanilla
1 1/3 cups coconut flakes
1 cup pecan piece

Steps:

  • Butter three 8 inch cake pans thoroughly and line the base of each with baking parchment. Rub a little more butter onto the paper. Preheat the oven to 350 degrees.
  • In a double boiler, melt the chocolate over simmering water, stirring occasionally, and set aside to cool. Sift the flour together with the sugar, baking soda, baking powder, and salt. In the bowl of an electric mixer or with a handheld mixer, beat the butter until it is fluffy. Add the flour mixture, 3/4 cup of the buttermilk, and the vanilla and beat in thoroughly, mixing for about 2 minutes with the electric mixer. Add the melted chocolate, eggs, and the remaining 1/4 cup of the buttermilk and beat for 1 minute longer. Pour an equal amount of the cake batter into each prepared pan and bake on the center rack of the oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Cool the cakes in their pans for 15 minutes, then turn out onto a cake rack and finish cooling. With a soft pastry brush, brush any loose crumbs from the side edges of the cake layers.
  • To make the marmalade, combine the milk, sugar, egg yolks, and butter in a medium saucepan. Over medium heat cook the mixture, stirring constantly, until it thickens, about 10 minutes. Do not let the mixture come to a boil. Remove from the heat and add the coconut and pecans. Stir together well, then let cool almost to room temperature, beating occasionally so that it does not form a crust.
  • To assemble the cake, place the first layer of cake on a serving dish. Spread a layer of the marmalade on the top of the cake only, about 1/2 inch thick. Place the second layer of the cake on top of the first and spread the top of it with some of the marmalade. Finally, place the third cake layer on the top and spread a nice, thick, and slightly rounded layer of the marmalade on top of that. Cut into wedges for serving.

2 cups sugar

2 5/8 cups flour

1 cup buttermilk
2 1/2 cups powdered sugar
5 tablespoons orange juice
5 tablespoons lemon juice
1/2 teaspoon salt

Steps:

  • Preheat oven to 325 degrees. Grease and flour a large tube pan (doesn't have to be the type with removable bottom).
  • Cream together shortening and sugar, beat in eggs and lemon extract.
  • Sift together flour, 1/2 tsp salt, baking soda, and baking powder; beat into creamed mixture.
  • Stir in buttermilk.
  • Bake at 325 degrees for 60 minutes.
  • While cake is cooking, mix together glaze ingredients.
  • After 60 minutes cooking time, remove cake from oven. Immediately pour glaze over top of cake and return to oven for 3 minutes.
  • Cool for 8 minutes, then remove from pan by inverting onto a platter.
  • Fully cool before slicing. Best prepared several hours ahead (or even a day ahead), then served at room temperature.

  • Preheat oven to 375°. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. This recipe was given to me by my great-aunt Julee over 40 years ago and I have had to convert it from SE Oklahoma Mountain area altitude to our altitude. We live in NM between 5000 feet and 7000 feet and I bake this 3-layer cake often for my family. If making a sheet cake, I use an 11 x 15 pan for this recipe.

2 ¾ cups cake flour (such as Pillsbury® Softasilk®)
1 cup unsweetened cocoa powder
1 ½ teaspoons baking soda
½ teaspoon salt
1 ¾ cups white sugar
1 cup butter, softened to room temperature
2 teaspoons vanilla extract
1 teaspoon almond extract
2 ¼ cups buttermilk, divided
2 eggs
1 ¼ cups butter, softened to room temperature
2 teaspoons vanilla extract

6 tablespoons milk, or more as needed
2 (16 ounce) packages confectioners' sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Coat three 9-inch round cake pans generously with cooking spray.
  • Mix cake flour, cocoa powder, baking soda, and salt together in a large bowl.
  • Beat white sugar, 1 cup butter, 2 teaspoons vanilla extract, and 1 teaspoon almond extract together in a large bowl with an electric mixer on medium speed until light and fluffy. Pour in half of the buttermilk and mix well. Beat in eggs one at a time.

Increase speed to high and beat, adding more milk, 1 tablespoon at a time, until frosting is fluffy and spreadable.
  • Spread frosting between cake layers and smooth over top and sides of cake.
