GRANDMA'S EGG CUSTARD PIE
This is the 1999 American Pie Council's National Pie Championship's first place winner in the Custard Pie Category.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add few drops yellow food coloring.
- Line pie pan with pastry, and brush inside bottom and sides of shell with egg white to help prevent a soggy crust. Pour custard mixture into piecrust. Sprinkle with nutmeg.
- Bake for 30 to 35 minutes, or until a knife inserted near center comes out clean. Cool on rack.

Steps:
- Mix the first 6 ingredients together with a wire wisk until smooth.
- Place the pecans in the pie shell.
- Pour the custard mix over the nuts and bake at 375 for 30 minutes, or until filling puffs up and rises about the edges of the pie shell.
- Carefully remove the pie from the oven and let cool before slicing.

TRUE BLUE CUSTARD CRUNCH PIE
This is delicious warm and even better after refrigerating! The custard like filling and crunchy topping are so complimentary. It is not your ordinary blueberry pie and is so simple to prepare.

- Preheat oven to 400 degrees F (200 degrees C).
- Beat together sour cream, 3/4 cup sugar, egg, 2 tablespoons flour, vanilla extract and salt in a mixing bowl until smooth. Gently fold the blueberries into the sour cream mixture. Spoon the filling into the unbaked pie crust.
- Bake in the preheated oven for 25 minutes.
- While the filling is baking, prepare the streusel crunch topping: In a medium bowl combine 3 tablespoons flour and 2 tablespoons sugar. Cut the cold butter into the flour mixture until crumbly. Fold in the chopped pecans. After the filling has baked 25 minutes, sprinkle the streusel crunch topping over the top of the pie.
- Bake until the topping is golden brown, about 15 additional minutes.

MAMA'S LEMON CUSTARD DELIGHT
This amazing custard dessert is so rich and sweet, you can practically taste the love that's been handed down through the generations. A little sweeter than a pie filling and not as tart, it's perfect for a lemon lover. The vanilla wafer crust is a delicious base for the thick and creamy custard. A wonderful dessert to feed a crowd.

- CRUST: Finely crush 1/2 box of vanilla wafers. Then coarsely chop the remaining 1/2 of the box of vanilla wafers.
- In a small saucepan on low heat, melt 1/2 stick of pure butter.
- Using a mixing bowl, mix the crushed wafers and butter together. Then spread evenly over the bottom of a 13x9 glass pan. Place in refrigerator for 15-30 min. to allow the crust to set.
- FILLING: Open all 5 cans of the sweet condensed milk. Pour all the milk into a large mixing bowl.
- Add the vanilla flavoring. Gradually stir in the lemon juice until completely blended (you may not use all of it).
- Separate the egg yolks from the egg whites.
- Stir in the egg yolks. The mixture should be slightly stiffening up by now.
- Once the filling is complete, line the sides of the glass pan with whole vanilla wafers.
- Now pour in the lemon filling in the pan.
- Once the pan is full with the lemon filling, crush a few vanilla wafers on top of the lemon custard for decoration.
- Cover with Saran Wrap to prevent a film from developing while chilling in the fridge. Place the lemon custard dessert in the refrigerator for 4-6 hours or until set. Enjoy!
BLUE RIBBON MILE HIGH LEMON MERINGUE PIE
I am a "LMP" fiend. The secret to a spectacular never-fail LMP is using 6 eggs. Once I made this version by Harriett Westman from "Blue Ribbon Winners: America's Best State Fair Recipes", this became my signature dessert. I adjust my portion size to the number of WW points left for the day; I calculate 1/8 of a pie as 10 points. Please allow 4 hours for cooling before serving. With 6 egg yolks, this is indeed a rich Southern custard filling with lemon juice added. For a more pronounced lemon flavor, use juice from up to 5 medium-size lemons, and reduce the water correspondingly; I have only made the standard recipe, which our family likes a lot.

- BAKE 9-INCH FLUTED PIE SHELL:.
- Preheat oven to 400°F (205°C).
- Fit the crust into a pie plate and flute the edge.
- Prick the bottom and sides of the crust with a fork.
- Bake at 400°F (205°C) for 5 minutes.
- Allow to cool while preparing rest of recipe.
- PREPARE LEMON FILLING:.
- In a medium-size heavy saucepan, mix 1-1/2 cups sugar, cornstarch, flour and salt.
- Gradually add water, stirring until well blended.
- Bring mixture to a boil over medium heat, stirring constantly; cook 3 minutes.
- Remove hot mixture from heat.
- Slowly pour about half of mixture into slightly beaten egg yolks, stirring constantly.
- Slowly pour egg yolk mixture back into hot mixture, stirring constantly.
- Return saucepan to heat.
- Bring to a boil, stirring constantly, and cook 3 minutes more.
- Add lemon peel, lemon juice, and butter.
- Cook about 2 minutes more, stirring with a rubber spatula in a circular motion. DO NOT LET MIXTURE STICK TO BOTTOM OF PAN. Filling will be very thick and spatula will leave a track when drawn through filling.
- Cover saucepan and remove from heat; keep warm.
- PREPARE MERINGUE:.
- Preheat oven to 350°F (175°C).
- In a large bowl, beat egg whites and cream of tartar until foamy.
- Beat in 3/4 cup sugar, 1 tablespoon at a time.
- Beat in vanilla extract with the last tablespoon of sugar.
- Continue beating until egg whites hold a soft peak.
- Set aside.
- ASSEMBLE PIE:.
- If filling has cooled, reheat, stirring constantly, before spooning into baked pie shell.
- Starting around the edge of pie, spoon meringue over filling, making sure meringue touches fluting on pie shell.
- Bake in preheated 350°F (175°C) oven 15 minutes or until meringue is golden brown.
- COOL 4 HOURS BEFORE SERVING:.
- Cool about 4 hours at room temperature before cutting.
- Makes one 9-inch pie.

MOM'S BLUE RIBBON EGG CUSTARD PIE
Mom often made 3 or 4 different pies for holidays. Everyone had a different favorite and she wanted each of us to have our favorite that day. Custard was always one of the special ones. Its not too sweet and so creamy rich. This recipe won a Blue Ribbon at our St. Joseph County Fair back in the day. Mom used goose eggs which were more yellow in color and bigger than chicken eggs. It was her secret ingredient.
