EASY BROCCOLI CHEESE SOUP



Easy Broccoli Cheese Soup image

Recipe video above. This Broccoli Soup is a cream of broccoli soup that's thick and creamy, with a great hit of cheese! It's creamy whether you make it with or without cream, though the cream does add an extra edge of luxury. Don't forget the hot crusty bread for dunking!

1 tbsp (15g) butter ((or olive oil))
2 garlic cloves (, minced)
1 onion (, diced (brown, white yellow))
4 cups (1 litre) chicken broth / stock (, low sodium (or veg stock))
1.5 cups (325ml) water
700g / 1.4lb) broccoli florets ((2 large broccoli + diced peeled stem, Note 1))
2 potatoes (, peeled and diced into 1.5cm / 2/3" cubes)
3/4 tsp salt
1/4 tsp black pepper
1.5 cups (150g) cheddar cheese (, shredded (or other cheese of choice))
3/4 cup (165ml) cream or milk
Cream, for drizzling
Extra grated cheese

Steps:

  • Melt butter in a large pot over medium high heat. Add onion and garlic, saute for 2 minutes until onion is softened.
  • Add broth/ water, broccoli, potato, salt and pepper. Bring to simmer, then place the lid on, turn the heat down to medium high and cook for 20 minutes or until the broccoli is soft.
  • Turn stove off (but leave on stove). Puree using a stick blender until smooth (Note 2).
  • Stir in cream, then add cheese a handful at a time, stirring in between to melt.
  • Taste and add more salt if desired.
  • Ladle into bowls. Drizzle with cream and top with extra grated cheese, if desired.

9 cups fresh broccoli florets
4 cups chicken broth
1 medium onion, chopped
8 tablespoons butter, divided
1 bay leaf
3/4 teaspoon salt
3/4 teaspoon white pepper
1/4 teaspoon onion salt
1/4 teaspoon garlic salt
Pinch each dried basil, thyme and rubbed sage
Dash hot pepper sauce
7 tablespoons all-purpose flour
2 cups milk
1 cup buttermilk
1/2 cup heavy whipping cream

Steps:

  • In a large saucepan, bring broccoli and broth to a boil. Reduce heat; simmer for 5 minutes. In a small skillet, saute onion in 2 tablespoons of butter until tender; add to broccoli mixture. Stir in the bay leaf and remaining seasonings. simmer, uncovered, for 5 minutes., In a small saucepan, melt the remaining butter. Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir into broccoli mixture; add buttermilk and cream. Heat through (do not boil). Discard bay leaf.

3/4 cup cubed peeled potatoes
1 medium carrot, sliced
2 cups frozen chopped broccoli
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups 2% milk, divided
1/4 to 1/2 teaspoon salt
1/4 teaspoon dried thyme
Dash ground nutmeg
Dash pepper

Steps:

  • Place potatoes and carrot in a small saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Meanwhile, cook broccoli according to package directions; drain and set aside., In a saucepan, melt butter. Stir in flour until smooth; gradually add 1/2 cup milk. Bring to a boil; cook and stir for 1 minute or until thickened. Add the salt, thyme, nutmeg and pepper., Drain potato mixture; cool slightly. In a blender, combine the potato mixture, broccoli and remaining milk; cover and process until smooth. Add to the thickened milk mixture. Return to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until heated through, stirring occasionally.

2 tablespoons butter
1 onion, chopped
1 garlic clove, chopped
1 stalk celery, chopped
2 (14 1/2 ounce) cans chicken broth
4 cups broccoli
3 tablespoons butter
3 tablespoons flour
2 cups milk (or 1 1/2 cups milk and 1/2 cup evaporated milk)
pepper
1/2 cup Velveeta cheese (or more)

Steps:

  • Melt 2 tablespoons butter in medium sized stock pot, and sauté onion, garlic and celery until tender.
  • Add broccoli and broth; cover and simmer for 10 minutes.
  • Purée soup (I use a hand blender) or mash with potato masher.
  • Return to heat.

2 tablespoons olive oil
1 cup sliced leeks, white and light green only
1 cup chopped peeled potato
3 to 4 sprigs fresh thyme
1 bay leaf
1 medium clove garlic, minced
Kosher salt and freshly ground black pepper
3 1/2 cups low-sodium chicken broth
3 cups broccoli florets
1/4 to 1/2 cup heavy cream

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the leeks and cook, stirring, until soft, 3 to 5 minutes. Add the potato, thyme, bay leaf, garlic, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes. Pour in the broth and bring to a simmer.
  • Add all but 2 to 3 of the broccoli florets, bring back to a simmer and cook until the broccoli is tender, about 20 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat, and let cool at least 5 minutes. Remove and discard the thyme and carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill blender more than halfway full).
  • Meanwhile, cut the reserved broccoli florets in half, lengthwise. Put in a small microwave-safe bowl, toss with a splash of water and a pinch of salt, cover and cook until bright green and crisp-tender, 2 to 3 minutes. Set aside.
  • Add the cream and reheat the soup if necessary. Adjust the consistency and seasoning with water, salt and pepper.
  • Serve hot and garnish each soup with a broccoli half.

1/2 small onion, minced
6 tablespoons flour
3 chicken bouillon cubes
1/2 teaspoon seasoning salt (I use Lawry's)
1/4 teaspoon pepper
4 1/2 cups milk
1 (14 ounce) package frozen broccoli florets

Steps:

  • Melt butter in a medium saucepan and lightly sauté onion.
  • Add flour, bouillon cubes and seasonings, stirring until smooth.
  • Remove from heat.
  • Gradually whisk in milk.
  • Bring to a boil over medium heat.
  • Boil and stir 1 minute.
  • Meanwhile, cook broccoli according to package directions.
  • Add broccoli and simmer an additional 10 minutes.
  • At this point, you could put in a crock set on low until ready to serve.
  • NOTE: When I make this in the crock pot, I triple the cream soup base and add 2 packages of the broccoli florets.

1 head broccoli, chopped
1 head broccoli, finely chopped
½ cup shredded carrots
6 tablespoons salted butter, cubed
1 medium onion, thinly sliced
6 tablespoons all-purpose flour, or as needed
2 cups milk
½ (8 ounce) package processed cheese food (such as Velveeta®), cubed

Steps:

  • Bring chicken broth to a simmer in a large pot. Add both heads of broccoli and carrots to the simmering stock; simmer for 5 minutes.
  • Meanwhile, melt butter in a large skillet over medium heat. Add onion and saute until softened, about 5 minutes. Stir in flour, 1 tablespoon at a time. Cook and stir until a golden roux forms, about 2 minutes. Slowly add milk, 1/2 cup at a time, stirring continuously. Bring to a boil and cook until a thickened gravy forms, about 2 minutes.
