BEEF AND BISCUIT STEW



Beef and Biscuit Stew image

This easy-to-prepare dish is a meal in itself. That made it a real favorite of my mother's-she had to cook for nine children! Better yet, my brothers, sisters and I loved it.

Number Of Ingredients 19

2 pounds beef stew meat, cut into 1-inch cubes
All-purpose flour
2 tablespoons vegetable oil
2 beef bouillon cubes
2 cups boiling water
Salt and pepper to taste
6 to 8 small potatoes, peeled and quartered
3 small onions, quartered
4 carrots, sliced
1 package (9 ounces) frozen cut green beans, thawed
2 tablespoons cornstarch
1/4 cup water
BISCUIT DOUGH:
2 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons vegetable oil
3/4 to 1 cup milk
Melted butter

Steps:

  • Coat beef cubes with flour. Brown beef on all sides in oil in a large Dutch oven. Meanwhile, dissolve bouillon in boiling water; add to Dutch oven. Season with salt and pepper. Simmer, covered, for 1-1/2 hours to 2 hours or until the meat is tender. Add the potatoes, onions, carrots and beans; cook until vegetables are tender, about 30-45 minutes. Mix cornstarch and water; stir into stew and cook until thickened and bubbly. , For biscuits, combine flour, baking powder, salt, oil and milk in a large bowl. Stir to form a light, soft dough, adding more milk if necessary. Drop by tablespoonfuls on top of stew. Brush top of biscuits with melted butter. Bake, uncovered, at 350° for 20-30 minutes or until the biscuits are done.

My mom is a great cook and this is one comfort food that she always makes for me when I visit home. It is very hearty and filling. Serve with warm bread or rolls.

4 Tbsp all purpose flour
1 1/2 lb beef stew meat or cubed chuck roast
2 Tbsp vegetable oil
1 medium chopped onion
1 clove garlic, minced
1/2 tsp thyme, dried
2 can(s) 12 oz. cans v-8 juice
1 tsp beef base paste
3 dash(es) tobasco sauce
3 large potatoes, scrubbed and cut into chunks
1 1/2 c chopped celery
1 1/2 c peeled and sliced carrots
1/2 c frozen peas

Steps:

  • 1. Combine flour and salt in a plastic zip lock bag. Add meat to bag and shake to coat. Brown in skillet with vegetable oil.
  • 2. Add all other ingredients together in a large baking dish. Add meat when browned. Stir well, cover and bake at 325 degrees for 2-2 1/2 hours or until meat is tender and broth is thick.

3/4 cup Original Bisquick™ mix
2 tablespoons olive or vegetable oil
2 cans (14 oz each) vegetable broth
2 cups baby carrots
1 stalk celery, chopped (1/2 cup)
1 cup pearl onions or 1 medium onion, chopped (1/2 cup)
3 sprigs fresh thyme leaves or 1/2 teaspoon dried thyme
Salt and pepper to taste
1/2 cup frozen peas
1 cup Original Bisquick™ mix
1/2 cup grated Parmesan cheese
1/2 cup milk
1 egg

Steps:

  • Heat oven to 400°F. Mix beef and 1/4 cup of the Bisquick® mix until beef is coated. In 12-inch skillet, heat oil over medium heat. Cook beef in oil, stirring occasionally, until brown.
  • In 3-quart casserole, mix remaining 1/2 cup Bisquick® mix and the broth, using wire whisk. Add beef, carrots, celery, onions and thyme. Bake uncovered 1 hour; stir. Season with salt and pepper. Stir in peas.
  • In small bowl, stir Parmesan Biscuit Crust ingredients until blended. Pour over stew. Bake 25 to 30 minutes or until golden brown.

4 slices thick-cut bacon, chopped
1 pound chuck roast, cut into 1-inch pieces
3/4 cup medium-diced carrots
3/4 cup medium-diced celery
2 tablespoons all-purpose flour
Salt and pepper
1 cup red wine
4 cups beef stock
1 tablespoon chopped fresh thyme
2 garlic cloves, minced
1 cup pearl onions, peeled
1 cup diced button mushrooms
2 tablespoons chopped fresh parsley
2 cups self-rising flour, sifted, plus more for flouring work surface
1/4 cup cold coconut oil (refrigerate to solidify prior to measuring)
3/4 cup cold milk
Melted butter, for brushing

Steps:

  • Special equipment: four 10-ounce ramekins For the beef stew: In a heavy saucepan, fry the bacon until crisp. Remove the bacon and reserve. Brown the beef slowly on all sides in the bacon fat and remove. Add the carrots and celery and cook for about 5 minutes. Add the reserved bacon and beef back into the pan. Sprinkle with the flour and some salt and pepper and toss to coat evenly. Add the wine and let it reduce by half, 2 to 3 minutes. Add the beef stock, thyme and garlic. Cover and cook over low heat for 1 hour. Add the onions to the stew and cook for an additional 15 minutes. Add the mushrooms and parsley, season with more salt and pepper and cook an additional 15 minutes. Preheat the oven to 450 degrees F. For the biscuits: In a bowl and using your fingers, mix together the flour and coconut oil very well until the mixture feels crumbly. Add the milk and mix (but don't overmix). Knead the dough just a couple of times, then roll it out to a thickness of 1/2 inch on a floured surface. Cut into 3-inch rounds. Ladle the stew into four 10-ounce ramekins, filling them three-quarters full. Top each with a biscuit round and brush the biscuits with melted butter. Place the ramekins on a baking sheet and bake until the biscuits are golden brown, about 15 minutes.

1 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 garlic cloves, mashed
1 tablespoon olive oil
3 cups beef broth
2 teaspoons chopped fresh sage (or 1 t. dried)
3 carrots, cut into 1-inch chunks
2 cups potatoes, 1 inch cubes
1 cup corn kernel (fresh or frozen defrosted)
1 cup baby peas (fresh or frozen defrosted)
2 cups Bisquick
1/2 cup freshly grated parmesan cheese
2/3 cup milk
1 teaspoon dried sage

Steps:

  • Sprinkle the beef with the salt, pepper, and garlic.
  • In a 3-quart ovenproof casserole or Dutch oven, heat the oil.
  • Add the meat, browning it on all sides for 6-8 minutes.
  • When the meat is browned, add the broth, stirring to scrape up any bits that have stuck to the bottom of the pan.
  • Add the sage, carrots, and potato cubes, cover, and simmer for 35 minutes.
  • Add the corn and peas; continue to cook for another 10-15 minutes.
  • The sauce will appear thin, but it well thicken when the biscuits bake.
  • Make the biscuits-preheat the oven to 375°.
  • In a large mixing bowl, combine the Bisquick and Parmesan cheese.
  • Add the milk and sage, stirring with a fork to combine.
  • Turn the dough out onto a floured board and knead it 5 times.
  • Roll the dough out to 1/2 inch thick and cut out individual biscuits with a 2-inch cutter, or transfer the entire crust to the top of the stew, cutting it to fit.
  • Bake the stew for 17-20 minutes or until the biscuits are browned and the stew is bubbling.

5 pounds Angus beef chuck roast, cut into 1-inch cubes
2 cups spicy ketchup
2/3 cup bottled Caribbean green seasoning
1/2 cup garlic powder
1/2 cup onion powder
Kosher salt and freshly ground black pepper
1 cup canola oil
4 tablespoons sugar

Steps:

  • In a large bowl, combine the beef, ketchup, green seasoning, garlic powder, onion powder and some salt and pepper. Marinate for 30 minutes.
  • Heat a large pot over high heat. Add the oil and sugar, and cook until the sugar is caramelized. Add the seasoned beef and cook, stirring vigorously, until browned, about 5 minutes. Lower the heat to medium-high and cook undisturbed for another 5 minutes. Slowly add just enough water to cover the beef. Ground pork or ground lamb can be substituted for ground beef. It can also be cooked on the stovetop, which we do, or slow cooker. Eat as a stew or serve over rice, crushed chips or crackers, or cornbread.

2 onions, roughly chopped, divided

1 pinch ground thyme

Steps:

2 pounds meaty beef soup bones (beef shanks or short ribs)
6 cups water
5 medium potatoes, peeled and cubed
5 medium carrots, chopped
1 medium onion, chopped
1/2 cup medium pearl barley
1 can (28 ounces) plum tomatoes, undrained
1 to 1-1/2 teaspoons salt
1/2 teaspoon pepper
2 garlic cloves, minced, optional
1 bay leaf, optional
3 tablespoons cornstarch
1/2 cup cold water

Steps:

  • Place soup bones and water in a Dutch oven or soup kettle. Slowly bring to a boil. Reduce heat; cover and simmer for 2 hours. , Set beef bones aside until cool enough to handle.
