Super Decadent Mac and Cheese image

Provided by Kardea Brown

Categories     main-dish

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 12

1/4 cup unsalted butter, plus more for greasing the dish
Kosher salt and freshly ground black pepper
1 pound elbow macaroni
1/4 cup all-purpose flour
2 cups whole milk
1/2 cup heavy cream, plus more if needed
4 ounces cream cheese
One 16-ounce block sharp Cheddar, shredded
1 1/2 cups extra-sharp Cheddar, cut into 1/2-inch cubes
1 teaspoon granulated garlic
2 large eggs
1/2 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking dish with butter.
  • Bring a large pot of salted water to a boil, add the macaroni and cook, stirring occasionally, until al dente, about 7 minutes. Strain in a colander, run cold water over the pasta and set aside.
  • Using the same pot the macaroni was cooked in, melt the 1/4 cup butter over medium heat, add the flour and whisk until smooth. While whisking constantly, slowly add the milk and then the cream. Bring to a simmer, add the cream cheese and the shredded Cheddar except for 1/2 cup and stir until melted. Stir in the granulated garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Remove the cheese sauce from the heat and stir in the macaroni. Season with salt and pepper.
  • Whisk together the eggs and sour cream in a small bowl and then fold into the macaroni and cheese. Spread the mixture into the prepared baking dish, fold in the cubed Cheddar and top with the reserved 1/2 cup shredded Cheddar. Bake until the top just begins to brown, about 20 minutes. Loosely cover with foil and bake 10 to 15 minutes more.

NEW ORLEANS BAKED MAC 'N' CHEESE RECIPE BY TASTY

New Orleans Baked Mac 'N' Cheese Recipe by Tasty image

This mac 'n' cheese recipe may be a little different from what you are used to eating. In New Orleans, we make our mac 'n' cheese with spaghetti. Yes, you read that right. We also call it baked spaghetti. Regardless of what you call it, this is a great comforting dish.

Provided by Matt Ciampa

Categories     Sides

Time 45m

Yield 8 servings

Number Of Ingredients 12

2 teaspoons kosher salt, plus more for boiling
1 lb dried spathetti
4 tablespoons unsalted butter
4 tablespoons unbleached all-purpose flour
2 teaspoons black pepper
1 teaspoon garlic powder
½ teaspoon cayenne
1 qt half & half
½ cup heavy cream
4 cups shredded sharp cheddar cheese, divided
2 cups shredded pepper jack cheese, divided
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat the oven to 400°F (200°C).
  • Bring a large pot of generously salted water to a boil. Cook the spaghetti according to the package instructions until al dente, about 6 minutes. Drain the spaghetti and set aside.
  • Melt the butter in a medium saucepan over medium heat. Add the flour and whisk until incorporated and smooth. Cook until golden brown, about 30 seconds. Add the salt, black pepper, garlic powder, and cayenne and whisk to combine.
  • Gradually add the half-and-half, whisking for 30-60 seconds between each addition until starting to thicken before adding more. Whisk in the heavy cream until the sauce is smooth and no lumps remain. Bring to a simmer, stirring constantly to prevent scorching on the bottom of the pot.
  • Reduce the heat to medium and whisk in 2 cups (200 g) cheddar, 1 cup (100 g) pepper Jack, and 1 cup (100 g) mozzarella until the cheese is melted. Remove the pot from the heat.
  • Add the spaghetti to a 9 x 13-inch (13 x 22 cm) baking dish and pour the cheese sauce on top. Stir well to coat the noodles with the sauce.
  • In a medium bowl, toss together the remaining 2 cups (200 g) cheddar, 1 cup (100 g) pepper Jack, and 1 cup (100 g) mozzarella cheese, then sprinkle evenly over the top of the spaghetti.
  • Bake for 30 minutes, or until the cheese is golden brown. Let cool slightly before serving.
  • Enjoy!

NOT YOUR MAMA'S MAC-N-CHEESE

Not Your Mama's Mac-N-Cheese image

No, it's not my mama's but my sisters! This is a unique recipe that requires no roux so the sauce is creamy not grainy as some can be. I make "Grown Up Mac-n-Cheese by replacing some of the cheese with gorgonzola (4oz to be exact) and giving it a crumb topping instead. This is easy enough for you to do as you like. I do recommend using several different types of cheese for complexity.

Provided by MacChef

Categories     Penne

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 8

1 (16 ounce) box penne rigate or 1 (16 ounce) box elbow macaroni
4 cups milk
4 (16 ounce) bags of preshredded cheese, we use 2 sharp cheddar, one italian blend and colby jack (reserve 1 cup for the top of casserole)
3 tablespoons cornstarch
1 teaspoon ground mustard
1/8 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper (optional)
salt and pepper

Steps:

  • In a large pot bring water to boil and salt to boil. Add pasta and cook for half the time recommended on the box. Usually 5-6 minutes.
  • Meanwhile, pour your milk into a large microwave safe bowl and heat until milk is hot, about 3-4 minutes.
  • While the milk is heating, dump all of your cheese into a large bowl, removing one cup or so for the top, and add your cornstarch. Mix until all of the cheese is lightly coated in the starch. Add remaining ingredients and mix well.
  • When milk is hot, start adding your cheese a handful at a time until each addition is melted. The milk will likely have to go back into the microwave to heat back up as the cheese will cool it down.
  • When pasta is ready, drain and put into a 13x9 inch casserole dish sprayed with non stick spray. Pour sauce over the top and push around so that the sauce begins to move inside the pasta tubes.
  • Sprinkle with remaining cheese and bake at 350 for about 30 minutes.

NANNY'S SIMPLE MACARONI AND CHEESE

Nanny's Simple Macaroni and Cheese image

Gosh, there are so many Mac and Cheese recipes! I looked at many before deciding to post my favorite recipe from childhood. My grandmother makes this all of the time. My girls and I love it but the Hubby doesn't like it much. "Too bland" he says. Great comfort food!

Provided by MSZANZ

Categories     One Dish Meal

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 4

1 lb elbow macaroni
2 lbs of longhorn colby cheese, sliced to about 1/8 inch slices (I have also used Colby Jack)
milk
salt and pepper

Steps:

  • Boil pasta according to package in salted water.
  • For firmer pasta reduce boiling time by a few minutes.
  • Drain.
  • Grease a deep casserole dish (I use a spray).
  • Place a layer of macaroni, enough to cover the bottom, in the casserole dish.
  • Add a layer of cheese slices covering the macaroni.
  • Very lightly season with salt and pepper (I actually skip this and we add salt and pepper to taste on our individual servings).
  • Repeat these layers until you are out of pasta.
  • Pour milk over the casserole until the milk almost reaches the top of the casserole dish (It doesn't take much because the dish is already full of pasta and cheese).
  • Bake covered for about 45 minutes to an hour in a 350 degree oven.
  • You'll know it is finished cooking when the milk is no longer liquid.
  • Sometimes I add leftover ham chunks to the layers.
  • Cook time and servings are approximate!

  • In a large pot, boil water and prepare pasta as package instructs for al dente. Once pasta is al dente remove the pot off the heated burner. Pour pasta into strainer to remove water then add it back to the warm pot. Let the heat of the pot steam out any excess water off the noodles. Heat should be turned off.
  • Add in butter to the pot and stir, the the residual heat melt the butter until it is completely dissolved and has coated all the pasta.
  • In a separate bowl add together sour cream, cottage cheese, 1 cup of sharp cheddar, ½ cup gouda, and ½ cup of mozzarella, cheese soup, evaporated milk and all of your seasonings and whisk well. Add the mixture to your pot of al dente noodles and make sure they are fully coated. This is the perfect time to taste the pasta mixture to ensure it is seasoned well. Feel free to add more salt and pepper if needed.
