½ cup flax seed
3 bananas, mashed
¼ cup vegetable oil
½ cup white sugar
2 eggs
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup flax seed
½ cup chopped pitted dates

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan. Use an electric coffee grinder or food processor to grind 1/2 cup flax seed; set aside.
  • In a large mixing bowl, beat together banana, oil, sugar and eggs. In a separate bowl, mix together flour, baking powder, baking soda, salt, ground flax seed and 1/4 cup whole flax seed. Gradually stir flour mixture into banana mixture. Fold in dates. Spoon batter into prepared loaf pan.
  • Bake in preheated oven for 55 to 60 minutes, or until a toothpick inserted into the loaf comes out clean.

1/8 tsp allspice
1/4 cup walnuts (roughly chopped)

Steps:

  • Preheat oven to 350F. Grease loaf pan with cooking spray or butter
  • Mash bananas in a large bowl. Add applesauce, sugar, canola oil, and eggs. Mix until thoroughly combined.
  • Combine flour, flax, salt, baking soda, cinnamon, and allspice in a medium bowl.
  • Add dry ingredients to wet ingredients and fold until just combined. Fold in chopped walnuts. Pour into loaf pan.
  • Bake for 55 minutes or until a toothpick inserted in center comes out clean.
  • Cool completely and serve!

2 tablespoons unsalted butter, melted, plus 1 teaspoon unsalted butter, softened, for pan
1/2 cup whole-wheat flour
3/4 cup all-purpose flour
1/4 cup ground golden flaxseed (from about 2 tablespoons whole)
3/4 teaspoon coarse salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 large egg, plus 1 large egg white
1/2 cup light-brown sugar
1 1/2 teaspoons pure vanilla extract
3/4 cup mashed very ripe bananas (about 2 medium bananas)
1/2 cup walnuts (about 1 3/4 ounces), toasted and coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan, and set aside. Whisk together the flours, flaxseed, salt, baking powder, and baking soda in a medium bowl, and set aside.
  • Put egg and egg white in the bowl of an electric mixer fitted with the paddle attachment, and mix on medium-low speed until well combined, about 2 minutes. Add melted butter, sugar, vanilla, and bananas, and mix until combined. Add the reserved flour mixture, and mix on low speed until well incorporated, about 10 seconds. Stir in walnuts.
  • Pour batter into buttered pan. Bake until golden brown and a cake tester inserted into the center comes out clean, about 35 minutes. Let cool slightly in pan on a wire rack. Invert bread to unmold; reinvert, and let cool completely on rack.

2-3 bananas, depending on size
2 large eggs
1 tbsp honey or pure maple syrup
¼ cup coconut oil or butter
1 tsp baking powder
1 tsp baking soda
2 tsp vanilla extract
½ cup almond meal
¼ cup coconut flour
¼ cup flaxseed
1 tsp cinnamon
½ cup chopped walnuts

Steps:

  • Preheat oven to 175℃ and line a loaf pan with baking paper.
  • Mix the dry ingredients together in a small bowl and set aside.
  • Chop the bananas into small chunks and place in a large bowl. Mash, or blend with a stick blender.
  • Add the eggs, melted coconut oil or butter, maple syrup & vanilla. Blend until well mixed. (I use a stick blender).
  • Add the dry ingredients into the wet ingredients, and mix through.
  • Fold the walnuts through the batter.
  • Pour the batter into the prepared loaf pan and bake in the oven for 40-45 minutes, or until golden on top and a skewer comes out clean.
  • remove from the oven and let the banana bread sit for 10 minutes in the pan, before turning out onto a wire rack to cool.
  • Enjoy warm from the oven on it's own or spread with butter.

Steps:

  • For the pancakes In a small bowl, add the nut milk and lemon juice. Set aside. It will curdle and become like buttermilk.
  • Grind the flaxseed (e.g., in an electric coffee grinder). In a separate bowl, mix together the whole wheat flour, flour, ground flaxseed, baking powder, baking soda, salt, and cinnamon.
  • Mash the ripe banana with a fork. Add the brown sugar, melted coconut oil, vanilla, and mashed banana to the buttermilk mixture. Stir to combine. Add the wet to dry and mix until well incorporated. Chop the walnuts and fold in to the mixture. Allow to rest 15 minutes before cooking.
  • Heat a nonstick or cast-iron skillet over medium heat. Using a 1⁄3-cup measure (3.25 ounces or 92 g), pour the batter onto the griddle and cook as you would any pancake, or until bubbles begin to pop and edges begin to lift, then flip. Repeat with the remaining batter.

Steps:

  • Preheat oven to 350ºF (177ºC). Grease the inside of a loaf pan or line it with parchment paper.
  • In a medium size bowl, mix together flax, baking powder, and salt. Use a whisk to stir until well combined.
  • In another bowl, beat eggs with a whisk for 30 to 60 seconds. Add water and coconut oil, mixing until combined.
  • Add wet ingredients to dry and stir until combined. Let the batter sit for 1 to 2 minutes to thicken slightly.

  • In a large bowl, sift together the baking soda and salt, and set aside. In a large measuring cup, whisk the eggs and vanilla and set aside. Butter a 9 by 5-inch loaf pan, and preheat the oven to 350º.
  • Cream the butter and sugar in a stand mixer fitted with the paddle attachment or a hand mixer, until it starts to become light and fluffy. Gradually pour the egg mixture into the butter, while mixing, until all of the ingredients are incorporated. Slowly add the bananas, while mixing on low, then remove the bowl from the mixer.
  • With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the flax meal, walnuts, and flax seeds, reserving a few of the nuts and seeds. Transfer the batter to the pan, and sprinkle the remaining walnuts and flax seeds on top of the batter. Bake until a toothpick inserted into the center of the bread comes out clean, about 40 to 55 minutes depending on your oven.
  • Cool the bread in the pan for 5 to 10 minutes. Turn the bread out of the pan to let it cool completely on a rack or towel, and store in an air-tight container or wrapped in plastic wrap.
