2 slices bread (sourdough is recommended)
3 tbsp butter softened, divided
1 cup shredded cheddar cheese

Steps:

  • Spread 1 tbsp of butter on one side of each slice of bread.
  • With butter side down, add cheese and then fold the sandwich closed, leaving the cheese on the inside and butter on the outside.
  • In a skillet over medium heat, melt ½ tbsp of butter. Reduce heat to medium-low and add the sandwich. Cook for about 2 minutes, however the key is to attend to the sandwich closely to achieve perfection.
  • Flip the sandwich to toast the reverse side once the cheese begins to melt and the down facing side begins to brown.

1 tablespoon fat, such as mayonnaise, butter or olive, chili or coconut oil

Steps:

  • Oven method (great for a crowd of six or fewer): Put a rimmed baking sheet on the middle rack of the oven and preheat to 450 degrees F. Make one sandwich per person: Sandwich 2 slices of cheese between 2 slices of bread. Spread or brush the outside of the sandwich with 1 tablespoon of fat. Place on the preheated baking sheet and cook until the cheese starts to melt, about 5 minutes. Flip the sandwich and bake until golden brown, an additional 5 minutes.
  • Panini press method (for crispy crunchy sandwich that needs minimal attention): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a panini press to medium heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and place in the press. Close the top and cook until lightly browned and the cheese is melted, 5 to 6 minutes.
  • Skillet method (fool-proof and low-tech): Sandwich 2 slices of cheese between 2 slices of bread. Preheat a skillet over medium-low heat. Spread or brush the outside of the sandwich with 1 tablespoon of fat and cook until lightly browned, 3 to 4 minutes. Flip the sandwich, and continue cooking until browned and the cheese is melted, 3 to 4 minutes more.

My hack of baking them on a sheet pan in the oven means the sandwiches will be ready at the same time, and I can enjoy hanging out with my friends and family while the oven does all the work.

12 slices assorted bread, such as Texas Toast, pumpernickel, and sourdough
1 stick (8 tablespoons) salted butter, at room temperature
12 slices assorted cheese, such as American cheese, Cheddar and Muenster cheese
1 cup Kardea's Pimento Cheese, recipe follows
Toppings, such as sliced roasted red peppers, pickles, sliced ham, sliced turkey, sliced tomatoes, fresh basil, sliced red onion and/or pulled pork
8 ounces extra-sharp yellow Cheddar, shredded (about 2 cups)
8 ounces cream cheese, at room temperature
4 ounces white Cheddar, shredded, preferably Vermont Cheddar (about 1 cup)
4 ounces diced pimentos, drained and juice reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Arrange a rack in the bottom of the oven, place a large rimmed baking sheet on the rack and preheat to 450 degrees F.
  • Spread one side of 6 slices of bread with 4 tablespoons of the butter and place, buttered sides down, on a second large rimmed baking sheet.
  • Top each buttered bread slice with 1 slice of cheese or some of Kardea's Pimento Cheese and your desired toppings. Top with another slice of cheese and the remaining 6 bread slices. Spread the tops of the bread slices with the remaining 4 tablespoons of the butter.
  • Carefully remove the hot baking sheet from the oven, and place it on top of the uncooked sandwiches, rimmed edges up. Press down on the sandwiches.
  • Place the stacked baking sheets in the oven on the bottom rack. Bake until the cheese is melted and the bread is golden brown and crispy, 10 to 12 minutes. Serve immediately.
  • Add the yellow Cheddar, cream cheese, white Cheddar, pimentos and mayonnaise to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika, salt and pepper and mix until thoroughly combined.

Steps:

  • Butter one side of each of the bread slices. Place 4 slices of bread, buttered side down, on your work surface. Distribute the cheese over the bread slices. Place remaining bread, buttered side up, on top of the cheese.
  • Heat a large nonstick pan over a medium-high heat for 2 minutes. Put the sandwiches into the pan, cover, and cook for 2 minutes.
