These moist cupcakes get their coconut flavor from coconut milk and chopped coconut. Just spoon the easy coconut glaze over the top.

10 tablespoons (5 ounces) unsalted butter, very soft
1 cup (7 ounces) granulated sugar
1/2 teaspoon salt
2 large eggs
2/3 cup plus 2 tablespoons coconut milk, divided
1 teaspoon vanilla extract (or 1/2 teaspoon coconut extract)
1 cup shredded, sweetened, coconut, divided
1 1/4 cups (5 ounces) cake flour
1 1/2 teaspoons baking powder
1 1/4 cups (5 ounces) confectioners' sugar

Steps:

  • Adjust oven rack to middle position and to 350°F. Line 12-cup muffin pan with cupcake liners. Whisk butter, sugar, and salt in large bowl until creamy and light. Whisk in eggs, one at time, until combined. Whisk in 2/3 cup coconut milk, vanilla, and 1/2 cup coconut.
  • Add flour and baking powder to the bowl and then whisk until just combined. Spoon batter into cups and bake until just set, 18 to 20 minutes. Let cool in pan 5 minutes, then transfer to wire rack to cool completely before icing.
  • Stir confectioners' sugar and remaining 2 tablespoons coconut milk in bowl until smooth (see note). Adjust with more sugar or milk to achieve a thick glaze consistency. Add a drop of vanilla or coconut flavoring if desired.

1½ sticks unsalted butter at room temperature
1 cup granulated sugar
3 extra large eggs at room temperature
1 tsp pure vanilla extract
1 tsp almond extract
1½ cups all purpose flour
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup buttermilk, shaken
3½ ounces half of a 7 ounce bag sweetened coconut
8 oz block of cream cheese at room temperature
1 stick unsalted butter at room temperature
1 tsp almond extract
¾ pound confectioner's sugar sifted
3½ ounces sweetened shredded coconut the other half of the 7 oz. bag

Steps:

  • Preheat the oven to 325 degrees.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar until light and fluffy, about 5 minutes. With the mixer running on low, add the eggs one at a time, scraping down the bowl after each addition. Add the vanilla and almond extracts and mix well.
  • In a separate bowl, sift together the flour, baking powder, baking soda, and salt. In three parts, alternately add the dry ingredients and the buttermilk to the batter, beginning and ending with the dry. Mix until just combined. Fold in 3½ oz. of coconut.
  • Line a muffin pan with paper liners. Fill each cup to the top with batter. Bake for 25 to 35 minutes, until the tops are brown and a toothpick comes out clean. Allow to cool in the pan for 15 minutes. Remove to a baking rack and cool completely. Frost with cream cheese frosting and sprinkle with the remaining coconut.
  • In the bowl of an electric mixer fitted with a paddle attachment, blend together the cream cheese, butter, and vanilla and almond extracts. Add the confectioners' sugar and mix until smooth.

If you want a more intense coconut flavor, add a teaspoon or two of coconut extract. Try putting your coconut in a food processor or blender if you prefer a smoother-textured cupcake. This is the first recipe I've come up with on my own, so any suggestions would be appreciated.

  • Beat egg whites in a glass or metal bowl until medium peaks form. Lift your beater or whisk straight up: the tip of the peak formed by the egg whites should curl over slightly.
  • Stir egg yolks and vanilla extract into applesauce mixture; fold in egg whites. Stir in flour, baking powder, and salt until just combined. Beat coconut milk into batter until smooth, about 1 minute. Beat in shredded coconut for about 30 seconds. Pour batter into the prepared muffin cups.

Steps:

  • Preheat the oven to 350 F.
  • In a large bowl, add all of the dry ingredients. Mix the sugar, flour, baking powder, baking soda, and salt until well combined and free of any large clumps.
  • Add in the eggs and mix one at a time.
  • Add in the oil, and then mix in ½ cup milk and 1 teaspoon coconut extract.
  • Once the batter forms, mix in 1 cup shredded coconut.
  • Prepare a cupcake pan with paper liners. Fill each cupcake well just under halfway full.

400g can full-fat coconut milk (must not contain stabilisers)
140g icing sugar
1 tsp vanilla bean paste
50g desiccated coconut
100g coconut oil
225g golden caster sugar
3 large eggs
200g gluten-free self-raising flour (the mix should include xanthan gum - I used Doves Farm)
100ml coconut milk
1 tsp vanilla extract

Steps:

  • Chill the can of coconut milk overnight. The next day, make the cakes. Heat oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with muffin cases. Put the coconut oil and sugar in a large bowl and use an electric whisk to beat together for about 5 mins until light and creamy. Add the eggs, one at a time, beating until fully combined before adding more. Working in three additions, add the flour, alternating with the coconut milk, then add the vanilla extract.
  • Scoop the batter into the prepared muffin tin using an ice cream scoop, then bake for 20-22 mins or until the cakes are golden and a skewer inserted into the middle comes out clean. Remove the cupcakes from the tin and cool on a wire rack.
  • The whipped cream is best made within a few hours of serving. Open the can of coconut milk upside down and pour off the thin liquid. Scoop the thick coconut milk into a large bowl, add the icing sugar and the vanilla, and whisk for 2-3 mins until soft and fluffy. Spread or scoop the whipped cream onto the cupcakes and sprinkle with the desiccated coconut. Best stored in the fridge and eaten within a couple of days.

Steps:

  • Preheat the oven to 200°C
  • Place cupcake cases in muffin tin or tray and set aside.
  • Add the flour, sugar and bicarbonate of soda into a mixing bowl and combine together.
  • In a seperate bowl add the egg, sunflower oil, coconut milk and the grated creamed coconut (if you are using) and whisk together.
  • Pour the coconut milk, egg and oil mixture into the bowl that contains the flour, sugar and bicarbonate of soda. Whisk together until pale and slightly runny. If your mixture appears a bit too thick, keep adding a little coconut milk until a slightly runnier consistency.
  • Fold in strawberries and almonds (or any other ingredient similar that you wish to add) into the cupcake mixture.
  • Using a metal spoon, pour 2 tbsp (or until a little bit over halfway full) into the cupcake case. Repeat until all cases are finished and put into the oven.
  • After 15 minutes of cooking, take out and sprinkle a pinch of sugar onto the top of cupcakes. If you are using creamed coconut, grate a small amount over the top aswell, and then place back into the oven for a further 5 minutes.

  • For reduced coconut milk:
  • Bring coconut milk to boil in large deep saucepan over medium-high heat (coconut milk will boil up high in pan). Reduce heat to mediumlow; boil until reduced to 1 1/2 cups, stirring occasionally, 25 to 30 minutes. Remove from heat; cool completely. Transfer to small bowl. Cover; chill (coconut milk will settle slightly as it cools). DO AHEAD: Can be made 2 days ahead. Keep chilled.
  • For cupcakes:
  • Position rack in center of oven; preheat to 350°F. Line eighteen 1/3-cup muffin cups with paper liners. Whisk flour, baking powder, and salt in medium bowl. 1 cup flaked coconut

  • Preheat oven to 350 and grease and flour 2 round cake pans or 1 - 9x13 rectangle.
  • In a bowl: combine cake mix, eggs, oil, water, & extract then beat for about 2 minutes and pour into pans. Bake for half an hour (until baked through).
  • In a clean bowl: mix coconut cream with condensed milk and stir until smooth. When the cake comes out, poke holes in it all over (with a fork or skewers) then pour the milk mixture over the whole cake. Leave to absorb overnight.
