EASY COCONUT CUPCAKES RECIPE
Steps:
- Adjust oven rack to middle position and to 350°F. Line 12-cup muffin pan with cupcake liners. Whisk butter, sugar, and salt in large bowl until creamy and light. Whisk in eggs, one at time, until combined. Whisk in 2/3 cup coconut milk, vanilla, and 1/2 cup coconut.
- Add flour and baking powder to the bowl and then whisk until just combined. Spoon batter into cups and bake until just set, 18 to 20 minutes. Let cool in pan 5 minutes, then transfer to wire rack to cool completely before icing.
- Stir confectioners' sugar and remaining 2 tablespoons coconut milk in bowl until smooth (see note). Adjust with more sugar or milk to achieve a thick glaze consistency. Add a drop of vanilla or coconut flavoring if desired.

- Preheat the oven to 325 degrees.
- In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar until light and fluffy, about 5 minutes. With the mixer running on low, add the eggs one at a time, scraping down the bowl after each addition. Add the vanilla and almond extracts and mix well.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt. In three parts, alternately add the dry ingredients and the buttermilk to the batter, beginning and ending with the dry. Mix until just combined. Fold in 3½ oz. of coconut.
- Line a muffin pan with paper liners. Fill each cup to the top with batter. Bake for 25 to 35 minutes, until the tops are brown and a toothpick comes out clean. Allow to cool in the pan for 15 minutes. Remove to a baking rack and cool completely. Frost with cream cheese frosting and sprinkle with the remaining coconut.

- Mix sugar, applesauce, and butter together in a bowl.

- Preheat the oven to 350 F.
- In a large bowl, add all of the dry ingredients. Mix the sugar, flour, baking powder, baking soda, and salt until well combined and free of any large clumps.
- Add in the eggs and mix one at a time.
- Add in the oil, and then mix in ½ cup milk and 1 teaspoon coconut extract.
- Once the batter forms, mix in 1 cup shredded coconut.
- Prepare a cupcake pan with paper liners. Fill each cupcake well just under halfway full.
- Bake for 20 minutes until lightly golden. Remove from the oven and set aside to cool.
- While the cupcakes are cooling, make the coconut frosting. In a mixing bowl, add the butter and cream until broken up. Add in 2 cups powdered sugar, 2 tablespoons milk, and 2 teaspoons coconut extract and mix. Gradually add the remaining powdered sugar, mixing until a frosting forms. Turn the speed up on your mixer to whip the frosting until fluffy.
- Once the cupcakes have cooled, top with coconut frosting, sprinkle with additional shredded coconut. Garnish with a mint leaf or flower, if desired.

- Chill the can of coconut milk overnight. The next day, make the cakes. Heat oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with muffin cases. Put the coconut oil and sugar in a large bowl and use an electric whisk to beat together for about 5 mins until light and creamy. Add the eggs, one at a time, beating until fully combined before adding more. Working in three additions, add the flour, alternating with the coconut milk, then add the vanilla extract.
- Scoop the batter into the prepared muffin tin using an ice cream scoop, then bake for 20-22 mins or until the cakes are golden and a skewer inserted into the middle comes out clean. Remove the cupcakes from the tin and cool on a wire rack.
- The whipped cream is best made within a few hours of serving. Open the can of coconut milk upside down and pour off the thin liquid. Scoop the thick coconut milk into a large bowl, add the icing sugar and the vanilla, and whisk for 2-3 mins until soft and fluffy. Spread or scoop the whipped cream onto the cupcakes and sprinkle with the desiccated coconut. Best stored in the fridge and eaten within a couple of days.

- Preheat the oven to 200°C
- Place cupcake cases in muffin tin or tray and set aside.
- Add the flour, sugar and bicarbonate of soda into a mixing bowl and combine together.
- In a seperate bowl add the egg, sunflower oil, coconut milk and the grated creamed coconut (if you are using) and whisk together.
- Pour the coconut milk, egg and oil mixture into the bowl that contains the flour, sugar and bicarbonate of soda. Whisk together until pale and slightly runny. If your mixture appears a bit too thick, keep adding a little coconut milk until a slightly runnier consistency.
- Fold in strawberries and almonds (or any other ingredient similar that you wish to add) into the cupcake mixture.
- Using a metal spoon, pour 2 tbsp (or until a little bit over halfway full) into the cupcake case. Repeat until all cases are finished and put into the oven.
- After 15 minutes of cooking, take out and sprinkle a pinch of sugar onto the top of cupcakes. If you are using creamed coconut, grate a small amount over the top aswell, and then place back into the oven for a further 5 minutes.

MOIST COCONUT CAKE
This is a rich, moist coconut cake. I frost it with whipped white chocolate ganache. Sometimes I sprinkle it with toasted shredded coconut. It can also be made as cupcakes. Don't be put off by the prep time, as it includes cooling time for the cake and chilling for the ganache.

- Preheat the oven to 350 degrees F (175 degrees C). Butter and flour a 9-inch round cake pan.
- Cream sugar and butter together in a large mixing bowl until light and fluffy; scrape down the sides of the bowl. - Bring coconut milk to boil in large deep saucepan over medium-high heat (coconut milk will boil up high in pan). - Preheat oven to 350 and grease and flour 2 round cake pans or 1 - 9x13 rectangle.
- In a bowl: combine cake mix, eggs, oil, water, & extract then beat for about 2 minutes and pour into pans. Bake for half an hour (until baked through).
- In a clean bowl: mix coconut cream with condensed milk and stir until smooth. When the cake comes out, poke holes in it all over (with a fork or skewers) then pour the milk mixture over the whole cake. Leave to absorb overnight.
- Beat cream until soft peaks form. Add sugar and continue whipping until stiff. Either make it into a layered cake or just ice the top of a 9x13. Sprinkle top with flaked coconut (you can toast it if you want).
